Chocolate of the Day

Goodnow Farms Chocolate
Limited Release Nantucket Fog 65% Cacao (Colombia) Dark Milk Chocolate bar
Good ++
Weight: .97 oz. (27.5 g.) / 1.94 oz. (55 g.) in total bar
Calories: 155 calories in 1/2 bar
Cost: $24.00 for 1 bar
Purchased from: The Chocolate Dispensary, online order

Welcome to Day #9 of Chocolate & Tea Theme Week, and Day #1 of Chocolate & Colombia Theme Week.

Today's Limited Release Nantucket Fog 65% Cacao (Colombia) Dark Milk Chocolate bar was from Goodnow Farms Chocolate (Sudbury, MA).

Aroma notes included: chocolate (cocoa, marshmallow, vanilla) and faint, sweet milky tea.

Texture: relatively smooth texture with a faint tea astringency.

Flavor notes included: smooth, dark milk chocolate; vanilla marshmallow; and sweet tea latte with a faint bergamot flavoring that finally emerged and lingered a bit at the end of the finish.

I appreciated the short list of quality and organic ingredients. And I liked that the makers used both single origin cacao and single origin cocoa butter in this sweet confection of a bar.

Maker's Tasting Notes: "...creamy vanilla and chocolatey notes from our Boyaca (Colombia) beans weave together with milky black tea and floral bergamot citrus. Rich, balanced and slightly sweet..."

Ingredients: Single Origin Cacao Beans, Organic Cane Sugar, Single Origin Cocoa Butter, Organic Whole Milk Powder, Organic Earl Grey Tea (Organic Black Tea, Bergamot Oil), Vanilla Bean

Fu Wan Chocolate - 62% Peach Red Oolong Tea (bar) - Apr. 30, 2026

Chocolate of the Day

Fun Wan Chocolate
62% Peach Red Oolong Tea (bar)
Good ++
Weight: 1.23 oz. (35 g.) in total bar
Calories: 203 calories in 1 bar
Cost: $17.99 for 1 bar
Purchased from: Oceana Market, Pacifica, CA

Welcome to Day #8 of Chocolate & Tea Theme Week.

Today's 62% Peach Red Oolong Tea (bar) was from Fu Wan Chocolate (Ping-Tung County, Taiwan).

Aroma and Flavor notes for this tea chocolate included: fruit (sweet peach); gentle chocolate; subtle floral, oolong tea; and barely detectable warm spice.

Texture: very smooth dark chocolate with soft, candied peach pieces, and a barely detectable tea astringency in the finish.

I appreciated the relatively short list of quality ingredients and the subtle qualities of this bar. The sweet, honeyed peach bits had the most distinct flavor. The chocolate and tea flavors were quieter. I'd advise eating this chocolate slowly you can enjoy all three flavors.

Ingredients: Sugar, Cocoa Mass, Cacao Butter, Dried Peach (Taiwan Honey Peach, Sugar, Citric Acid), Red Oolong Tea Powder.

Allergen-related information: "This product is manufactured in a facility that also processes mango, egg, tree nuts, soy, milk, and milk products. Not recommended for individuals with allergies to these ingredients."

Good ++
Weight: 1.23 oz. (35 g.) in total bar
Calories: 203 calories in 1 bar
Cost:  $17.99 for 1 bar
Purchased from: Oceana Market, Pacifica, CA   `

Welcome to Day #7 of Chocolate & Tea Theme Week.

Today's 62% Yuzu Oolong Chocolate (bar) was from Fu Wan Chocolate (Ping-Tung County, Taiwan).

Aroma and Flavor notes for this tea chocolate included: gentle dark chocolate; tiny clumps of sweetened dried citrus fruit (very slightly peppery, yuzu*, sweet citrus peel); and faint floral oolong tea.

Texture: very smooth dark chocolate with chewy candied yuzu pieces, and a barely detectable tea astringency in the finish.

I enjoyed the dried, sweet and flavorful citrus/yuzu* bits. And I appreciated the relatively short list of quality ingredients. The candied tart-sweet citrus was stronger than the more subtle chocolate and tea flavors--likely OK as many people prefer subtle chocolate flavors. And this bar was balanced enough (if you eat it slowly) that one could enjoy all three flavors.

Ingredients: Sugar, Cocoa Mass, Cacao Butter, Diced Pomelo* (pomelo peel, sugar, starch syrup, brandy, alcohol flavoring) Oolong Tea Powder

Allergen-related information: "This product is manufactured in a facility that also processes mango, egg, tree nuts, soy, milk, and milk products. Not recommended for individuals with allergies to these ingredients."

*Note: Yuzu is different than pomelo. Both are citrus fruits. But, there is some linguistic overlap in terms of these fruit names. Apparently the yuzu and yuja citrus fruits (in Japan and Korea, respectively) has migrated to mean pomelo in modern China.

Cost:  $17.99 for 1 bar
Purchased from: Oceana Market, Pacifica, CA   `

Welcome to Day #6 of Chocolate & Tea Theme Week.

Today's Lychee Tie Guan Yin Tea Chocolate 62% (bar) was from Fu Wan Chocolate (Ping-Tung County, Taiwan).

Aroma and Flavor notes for this fruit-forward chocolate included: gentle chocolate, sweetened dried fruit (authentic lychee) and faint oolong tea.

Texture: very smooth dark chocolate with chewy lychee pieces, and a barely detectable tea astringency in the finish.

I enjoyed the dried, sweet and flavorful lychee fruits. And I appreciated the relatively short list of quality ingredients. I would have loved to have tasted a bit more of the chocolate and tea flavors, but I think most people will prefer the blend of sweet, fruity and more subtle/balanced chocolate flavors in this bar.

Ingredients: Sugar, Cocoa Mass, Cacao Butter, Dried Lychee, Tieguanyin Tea Powder

Allergen-related information: "This product is manufactured in a facility that also processes mango, egg, tree nuts, soy, milk, and milk products. Not recommended for individuals with allergies to these ingredients."

Eight Treasures - Osmanthus Chocolate 72% Dark Chocolate (bar) - Apr. 25, 2026

Chocolate of the Day

Eight Treasures
Osmanthus Chocolate 72% Dark Chocolate (bar)
Good + - Good ++
Weight: 2 oz. (56 g.) in total bar
Calories: calories in 1/2 bar
Cost: $15.99 for 1 bar
Purchased from: Oceana Market, Pacifica, CA

Welcome to Day #17 of Chocolate & Flowers Theme Week, and Day #3 of Chocolate & Tea Theme Week.

Today's Osmanthus Chocolate 72% Dark Chocolate (bar) was manufactured and distributed by Eight Treasures, LLC (San Francisco, CA).

This chocolate contained osmanthus flowers; oolong tea grown and ground in Taiwan; and "toasted quinoa for added crunch."

Aroma and flavor notes included: sweet and smooth dark chocolate, sweet tea cookie/candy and faint fruit-floral.

Texture: smooth chocolate, with a slight crunchiness (quinoa).

I've long been a fan of osmanthus and oolong tea. There is a hedge of osmanthus flowers in my neighborhood with a beautiful apricot scent--especially appreciated in late summer and early fall (when most blooms are gone). So I was very happy to find this osmanthus and tea chocolate--relatively nearby where I live in the San Francisco Bay Area.

I appreciated the sweet floral tea concept, and the crunchy quinoa bits worked well. The gentler, ground oolong tea and the osmanthus flavors lingered in the finish and became clearer after the smooth dark chocolate flavors subsided.

I appreciated the maker's choices of a single origin (Carenero Superior Venezuela) cacao and organic ingredients.

Makers Tasting Notes: Peachy Apricot Flowers

Ingredients: Single-origin Carenero Superior cacao from Venezuela, coconut sugar*, oolong tea*, quinoa*, osmanthus* (* Organic)

Allergen-related information: None listed.

Ara Chocolat - Almonds & Roses 70% El Salvador (bar) - Apr. 24, 2026

Chocolate of the Day

Ara Chocolat
Almonds & Roses 70% El Salvador (bar)
Good ++
Weight: 1.06 oz. (30 g.) / 2.12 oz. (60 g.) in total bar
Calories: 174 calories in 1/2 bar
Cost: $24.00 for 1 bar
Purchased from: The Chocolate Dispensary, online order

Welcome to Day #16 of Chocolate & Flowers Theme Week, and Day #2 of Chocolate & Tea Theme Week.

Today's Almonds & Roses 70% El Salvador (bar) was from Ara Chocolat (Paris, France).

Aroma and flavor notes for this attractive, single origin bar included: relatively bold but balanced dark chocolate (very faint roasted, earth); and redolent rose.

Texture: smooth dark chocolate, gently textured rose petals, and softly crunchy almond bits

I was very happy to taste the rose flower notes in this bar. They often get lost, especially when infused into a bolder dark chocolate or a chocolate with a lot of sugar and cocoa butter. The rose was authentic, very slightly astringent (and reminiscent of heritage rose gardens filled with scents). And that rose, happily, lingered into the finish.

I enjoyed this with a floral (saffron) tea.

Ingredients: "cocoa nibs, sugar, almonds, cocoa butter, roses"

Allergen-related information: Contains Almonds. "May contain traces of nuts."

Cost: $60.00 for a larger order (set) of 4 bars + 8 tea coins (may no longer be available)
Purchased from: Kessho, online order

Welcome to Day #7 of Chocolate & Tea Week.*

Today's two bars were paired with tea from West China Tea Company (Austin, TX).

The sweetness of today's Black Sesame White Chocolate from Kessho Chocolate was complemented very nicely by an inky dark brown (black) p'uer tea--in the form of an individually-wrapped tea "coin" (that was part of a larger gift set of 4 different Kessho chocolate bars + 4 different West China Tea coins/teas. This set was distributed by Kessho, LLC (Austin, TX).

This collaboration was joined by a Dark & Salty 81% Cacao bar from TCHO (Berkeley, CA).

Kessho - Black Sesame White Chocolate (bar) + tea

The black sesame seeds (sourced from India) were ground together with cocoa butter and salt.

Aroma and flavor notes included: black sesame seeds in a creamy base with faint, buttery umami and salt.

Texture: buttery, and relatively smooth.

The suggested pairing with Black Rain Shu P'ureh tea was great. The rich, inky brown tea was excellent, and surprisingly versatile. It provided rich satisfying flavor; and its slightly tannic, balanced bitterness complemented both the sweet white chocolate sesame seed bar and the TCHO Dark & Salty bar.

Maker's Tasting Notes: "Black Sesame, nuts, cream and sea salt"

Ingredients: "Cocoa butter, sugar, whole milk powder, skim milk powder, black sesame seed, salt"

Allergen-related information: "Contains milk and sesame seeds...Made in a facility that processes tree nuts, wheat and eggs"

TCHO - Dark & Salty 81% (bar)

Aroma and flavor notes included: dark, fudge-y chocolate with a very light dose of vanilla and sea salt.

Texture: very smooth; dense and hearty flavor and texture.

I enjoyed this hearty, chocolate-y, dark chocolate with balanced, extra dark flavors. It was an 81% cacao bar that had the rich smoothness of a 72% cacao bar.

Ingredients: Cacao Beans**, Cane Sugar*, Cocoa Butter**, Pink Himalayan Salt, Vanilla Beans* (* Organic; ** Fair Trade Certified)

Allergen-related information: "May contain tree nuts."

Fossa Chocolate - Mu Zha Tie Guan Yin Tea 62% dark (bar) - Sept. 20, 2025

Mu Zha Tie Guan Yin Tea 62% dark (bar)
Good +++
Weight: .88 oz. (25 g.) / 1.76 oz. (50 g.) in total bar
Calories: 138.5 calories in 1/2 bar
Cost: $13.99 for 1 bar
Purchased from: Caputo's, online order

Welcome to Day #6 of Chocolate and Tea Theme Week.

Today's Mu Zha Tie Guan Yin Tea 62% dark (bar) was from Fossa Chocolate Pte Ltd. (Singapore).

The cacao used to craft this Tea Chocolate collaboration bar was from Costa Esmeraldas (Emerald Coast), a family-owned cacao farm (estate) in northern, coastal Ecuador. The tea was from Pekoe & Imp (Singapore). (Note: I enjoyed a previous version of this bar made with Piura, Peru cacao in Dec. 2024.)

Oolong teas are meticulously processed and they fall between green and black teas. (All these teas are from the same Camellia sinensis plant species, but they're processed differently). Oolong teas are more oxidized than green teas but not fully oxidized like black teas. They have a clean, floral flavor--especially Ti Guan Yin oolong teas from southern China.

Aroma notes for this chocolate included: chocolate, faint toffee/gentle molasses, and clean (clean mineral), crisp (clear, almost sweet green) and floral oolong tea.

Texture: smooth and creamy with faint (tea, persimmon-like) astringency

Flavor notes included: smooth, friendly fudge-y, nuanced dark chocolate with subtle toffee/caramel; very diffuse fruit; faint floral and nut; and high-quality, floral oolong tea that lingered into a long and satisfying finish.

I loved this chocolate and tea blend -- so full of layered, balanced, gently complexity. Skillfully captured and nurtured single origin flavors that spanned two continents. The best of both worlds in one bar--enjoyed very much today, on a third continent.

Maker's Tasting Notes: "Aroma of sweet toasty caramel and floral notes with a warming finish."

Ingredients: "Cacao, cane sugar, cacao butter, tea leaves"

Allergen-related information: "Produced in a facility that processes nuts & dairy"

Fu-Wan Chocolate - Taiwan Red Oolong Tea 62% dark (bar) - Sept. 19, 2025

Chocolate of the Day

Fu-Wan Chocolate
Taiwan Red Oolong Tea 62% dark (bar)

Weight: .62 oz. (17.5 g.) / 1.236 oz. (35 g.) in total bar
Calories: 104 calories in 1/2 bar (207.9 cals. for 1 whole bar)
Cost: $18.99 for 1 bar
Purchased from: Caputo's, online order

Welcome to Day #5 of Chocolate and Tea Theme Week.

Today's Taiwan Red Oolong Tea 62% dark (bar) was from Fu-Wan Chocolate (Ping-Tung County, Taiwan).

Red tea is generally a black tea known for its "juicy, fruity and honey notes," whereas red oolong tea offers a blend of these sweet and fruity notes + classical oolong tea flavors...Exactly what I tasted in today's Taiwan Red Oolong Tea chocolate.

Aroma and flavor notes for this tree-to-bar chocolate included: dark chocolate with brown sugar toffee, fruit (candied pineapple, date, persimmon), diffuse warm spices (cinnamon, ginger); and oolong tea (with slightly floral, clean mineral notes).

Texture: smooth and creamy with a slight (fruit, tea) astringency (slightly granular dryness).

I enjoyed the unexpectedly flavorful fruit, floral and toffee notes. All these aromas and flavors were coaxed from just four ingredients.

Maker's Tasting Notes: Rose, Cardamom, Pistachio, Toffee

Ingredients: Ping Tung Cacao Liquor, Sugar, Cacao Butter, Taiwan Red Oolong Tea Powder

Allergen-related information: "May contain traces of nuts and milk."

The Organic House - Chai Latte 55% Cacao Belize Maya Mountain (bar) - Sept. 18, 2025

The Organic House
Chai Latte - Mylk chocolate infused with chai tea 55% Cacao (Belize) (bar)
Good ++
Calories: 142 calories in 1/2 bar
Cost: $9.00 for 1 bar
Purchased from: The Organic House, online order

Welcome to Day #4 of Chocolate & Tea Week. This is the third tea-themed chocolate week this year, and I'm finding a lot of blends and pairings I like in 2025.

Today's Chai Latte - Mylk chocolate infused with chai tea 55% Cacao Belize - Maya Mountain (bar) was from The Organic House (Burlington, ON, Canada).

The cacao used to make this chocolate was from Maya Mountain (I'm assuming this means Maya Mountain Cacao*), in southern Belize.

Aroma and flavor notes for this bar included: chocolate, brown/less refined sugar, and an aromatic blend of warm, chai spices (cinnamon, ginger, cloves, very faint anise, other). The single origin cacao added very faint, diffuse and smooth fruit and authentic cacao complexity.

Texture: uniformly smooth and relatively creamy throughout. (The tea and spice bits were fully incorporated; no detectable particle grit--made this chocolate more latte-like.)

Every chai tea tastes a little different depending on the tea and spice blend(s). Here the rooibos tea added a very light herbal tea flavor. And the warm spices tasted authentic, albeit a bit more like pumpkin spice than chai spice. (The cardamom and pepper were further down on the ingredient list.)

This was a rich and sweet, friendly and authentic bar that will please those who enjoy a warm, flavorful spiced chocolate with less caffeine. The use of coconut flower nectar made the sweetness richer and less buzzy than more refined white cane sugar.

Maker's Tasting Notes: "Buttery notes of chocolate, chai tea, honey, raisins, and pineapple."

Ingredients: Organic coconut flower nectar, Organic cacao beans, Organic cacao butter, Organic cashews, Organic* rooibos chai tea (rooibos leaves*, cinnamon bark*, ginger root*, star anise fruit*, cloves*, cardamom seeds*, black pepper*, natural flavor*).

Allergen-related information: Contains Cashews. May contain: Almonds, Hazelnuts, Oats, Pistachios."

*Maya Mountain Cacao is a facility that works with many local farmers in the lush forests of the Toledo district of southern Belize (not far from Punta Gorda). Their centralized post-harvest cacao fermenting and processing operation sells to many small-batch, specialty/craft chocolate makers.

Taza - 70% Dark Chocolate Lemon Cookie Crunch (bar) - Sept. 17, 2025

Chocolate of the Day

Taza Chocolate
70% Dark Chocolate Lemon Cookie Crunch (bar)
Good + - Good ++
Weight: 1.25 oz. (35 g.) / 2.5 oz. (70 g.) in total bar
Calories: 190 calories in 1/2 bar
Cost: $5.99 for 1 bar
Purchased from: Taza, online order

Welcome to Day #3 of Chocolate and Tea Theme Week.

Today's 70% Dark Chocolate Lemon Cookie Crunch (bar) was made from bean-to-bar by Taza Chocolate (Somerville, MA).

Taza founders have been making stone ground ("perfectly unrefined") chocolate bars, discs and confections since 2005--and were early adopters of organic cacao and direct trade efforts/practices.

There was no tea in this bar, but this lemon cookie 70% chocolate paired well with a creamy matcha tea latte and with an aromatic black tea with citrus notes.

Aroma notes included: lemon, lemon cookie, dark chocolate and vanilla.

Texture: smooth dark chocolate and crunchy (lemon cookie bits)

Flavor notes included: sweet lemony flavor and lemon cookies that lightened up the earthy dark chocolate.

The bright, light floral qualities of the creamy smoothness of the matcha green tea latte (pairing item) complemented the sweet lemon cookie and helped reduce the spikier/bolder earth notes in the 70% dark chocolate. (The cacao used to make this chocolate was from The Dominican Republic.) A high-quality black tea with a squeeze of lemon also worked nicely.

Always a pleasure to explore different chocolate + tea pairings and to try to get everything to harmonize. I was hoping to try a pairing without adding dairy, but the matcha latte (with milk) seemed to be the best pairing match.

I appreciated the use of organic, fair trade and less processed ingredients.

Ingredients: Cacao Beans*, Cane Sugar*, Lemon Cookies* (Gluten Free Whole Oat Flour*, Cane Sugar*, High Oleic Safflower Oil*, Pear Juice from Concentrate*, Tapioca Starch*, Lemon Juice from Concentrate*, Lemon Extract*, Salt, Pure Vanilla Extract*, Cream of Tartar, Baking Soda (Sodium Bicarbonate), Sunflower Lecithin*, Xanthan Gum, Rosemary Extract*), Cocoa Butter*, Lemon Flavor Oil* (Sunflower Oil* and Natural Flavors), Sunflower Lecithin*. (* Organic)

Allergen-related information: May Contain Traces of Tree Nuts and Sesame Seeds.

Kessho - Boba Tea 44% Cacao Ecuador (bar) - Sept. 16, 2025

Chocolate of the Day

Kessho Craft Chocolate
Boba Tea Milk Chocolate 44% Cacao Cayapas Rivers Ecuador (bar)
Good ++ - Good +++
Weight: 2.1 oz. (60 g.) in total bar
Calories: 369 calories in 1 bar
Cost: $12.00 for 1 bar
Purchased from: The Chocolate Dispensary, online order

Welcome to Day #2 of Chocolate & Tea Week.*

Today's Boba Tea Milk Chocolate 44% Cacao Cayapas Rivers Ecuador (bar) was made and distributed by Kessho, LLC (Austin, TX).

The Nacional variety cacao used to make this chocolate was from northern Ecuador. The Cayapas (River) runs from the Andes mountains to the Pacific Ocean. (Of the 100s of rivers and streams that begin in the Andes, some flow to the Pacific Ocean, and others run eastward toward the Amazon River system.) This vast water network sustains large forest ecosystems--as well as farmers growing cacao--in South America.

Aroma and flavor notes included: pleasing, aromatic high-end tea and Boba/Thai iced tea with fleeting clean mineral/tea, almost floral, brown sugar, smooth and tasty milk chocolate, cream and sugar. The tea kept re-surfacing above cloud-like layers of sweet creamy milk chocolate and lingered into a long finish.

Texture: ridiculously creamy and smooth with a rich creamy melt. (Cocoa butter is the first ingredient listed.)

I really enjoyed the short list of high-quality ingredients, the aromatic and tasty (Fujian Province, China) tea blend and the fact that this tea was able to shine through the smooth milk chocolate. This was a lovely, creamy, single origin cacao rendition of boba tea. (Also somewhat addicting.)

Maker's Tasting Notes: Ecuador Cacao Flavor Profile: "Floral, woody aroma"...Overall bar: "Boba, caramel and chocolate fudge"

Ingredients: "Cocoa butter, brown sugar, whole cacao beans, whole milk powder, skim milk powder, black tea powder, sugar, dark brown sugar"

Allergen-related information: "Contains milk...Made in a facility that processes tree nuts, wheat, sesame and eggs"

Maeve Chocolate - Pumpkin Spiece Chai Milk Chocolate Truffle Bar - Sept. 15, 2025

Pumpkin Spice Chai Milk Chocolate Truffle Bar
Good ++
Weight: 2.5 oz. (70 g.) in total bar
Calories: 380 calories in 1 bar
Cost: $6.49 for 1 bar
Purchased from: Farm Fresh to You, online order

Welcome to Day #1 of Chocolate and Tea Theme Week.

Today's Maeve Chocolate Pumpkin Spice Chai Milk Chocolate Truffle Bar was produced by Seattle Chocolate Co. (Seattle, WA).*

Aroma and flavor notes for this sweet confection of a bar included: very sweet milk chocolate infused with authentic-tasting pumpkin spices (cinnamon, clove, nutmeg, allspice) and vanilla. (The black tea was very subtle.)

Texture: soft, seductively thick and creamy (truffle-like) texture. (This bar will not break with a snap. It had a very creamy milk chocolate fudge texture that I could slice with a butter knife.)

I think most milk chocolates are too sweet. (I do prefer dark chocolates.) But then, as if to show the addictive power of sugar, I find myself devouring a whole milk chocolate bar (especially the ones with salt and/or ones with chai/pumpkin spices and aromatic tea blends). Reminder to self: don't eat bars like this if you're hungry.

I appreciated the use of real spices and black tea in this truffle bar, additives and emulsifiers were kept to a minimum (soy lecithin), and that this bar was gluten-free.

Ingredients: milk chocolate (cane sugar, whole milk powder, cocoa butter*, cocoa mass*, organic soy lecithin, natural vanilla), coconut oil, sea salt, cinnamon, cloves, ginger, cardamom, nutmeg, organic black tea, allspice.

Allergen-related information: Contains Milk and Soy. This product is manufactured in a plant that processes milk, soy, peanuts, tree nuts, egg, and wheat products.

Welcome to Day #17 of Chocolate, Tea, Herbs and Spices Theme Week, and Day #3 of Chocolate and the Philippines Theme Week.

Today's 57% Earl Grey Tea, Philippines (bar) was created by Kasama Chocolate (Vancouver, BC, Canada). The company offers a variety of bars made using cacao from the Philippines*-- and you'll see at least four of these bars featured this week.

Aroma and flavor notes include fragrant bergamot (floral, citrus); dark milk chocolate (cocoa, ganache); and smooth, satisfying and sweet tea latte.

Texture: smooth, with a very slight (authentic) black tea astringency in the finish. Extra points for providing a full Earl Grey tea experience.

I really enjoyed "sipping" (savoring small bites of) this tea-inspired chocolate. This bar would be a great gift for (or to share with) chocolate and Earl Grey tea fans.

Ingredients: Cacao Beans, "Unrefined Cane Sugar*, Cacao Butter*, Whole Milk Powder, Earl Grey Tea" (* = organic)

Allergen-related information: Contains Milk. "Made in a facility that contains nuts."

Cost: $15.00 for 1 bar
Purchased from: Bar & Cocoa, online order

Welcome to Day #16 of Chocolate, Tea, Herbs & Spices Theme Week; and Day #2 of Chocolate and the Philippines Theme Week.

Today's 53% Dark Milk Chrysanthemum Tea Chocolate (bar) was from Fossa Chocolate Pte Ltd (Singapore). They used cacao from the Philippines to make this chocolate.

Aroma notes included: dark milk chocolate; very faint floral tea notes.

Texture: very smooth, buttery texture with a soft caramel-like melt. (The chrysanthemum buds were fully incorporated into the chocolate.)

I loved the creamy texture, and I was happy to find that despite relatively high levels of sugar I could still taste and enjoy the relatively delicate, sweet floral notes of the chrysanthemum (light, clean, honey-ed, almost chamomile-like floral -- no detectable earthy notes with these flower buds).

I would love to taste this chocolate with a little less sugar (maybe a 60% cacao version?) to taste more of the lovely chrysanthemum tea and the cacao.*

Thank you to the makers for the short list of high-quality ingredients and the gentle, balanced complexity in this bar.

Maker's description: "Chrysanthemum is a symbol of longevity and rejuvenation. Brewed as a tea, it is believed to have cooling and cleansing properties...Prized chrysanthemum buds from Zhejiang, China, are blended with with fruity cacao from Rehoboth Estate (Philippines) in a 53% dark milk chocolate, bringing forth an elegant floral aroma and notes of honey with a sweet lingering finish..."

Ingredients: "Cacao, cane sugar, cacao butter, milk powder, chrysanthemum flower buds"

Allergen-related information: Contains Milk. "Produced in a facility that processes nuts & dairy."

*General comment: Smooth, sweet chocolates may appeal to more buyers; and the price of cacao has gone way up in recent years; so dark chocolates are more expensive to make. I can appreciate the challenges some makers have in trying to satisfy a variety of customer tastes (especially dark and ultra-dark chocolate lovers) at a reasonable price point, and to be profitable.

Welcome to Day #15 of Chocolate, Tea, Herbs & Spices Theme Week; and Day #1 of Chocolate and the Philippines Theme Week.

Today's 53% Dark Milk Ginseng Chrysanthemum (Tea) (bar) was from Fossa Chocolate Pte Ltd (Singapore). They used cacao from the Philippines to make this chocolate.

Aroma notes included: dark milk chocolate; faint tea; clean, slightly floral, faint, fleeting olive (oil) (there was no olive oil); and mild root/herb (ginseng).

Texture: very smooth, buttery texture. The chrysanthemum and ginseng flavor elements were fully incorporated into the chocolate, leaving no botanical "grit."

I loved the fine creamy texture and the fact that the ginseng and chrysanthemum flavors seemed to be very harmonious together.

However, I was even happier to find that despite relatively high levels of milk and sugar I could still taste and enjoy the tea-like chrysanthemum (light, clean, honey-ed, almost chamomile-like floral) and ginseng (pleasant root, herb) notes.

It reminded me of a very special sweet and floral milk tea -- that I've never had before, but now I want to find or make.

Thank you to the makers for the short list of high-quality ingredients and the gentle, balanced complexity in this bar.

Maker's description: "Ginseng chrysanthemum tea has long been used in Traditional Chinese Medicine as an immunity booster and a natural remedy to treat fatigue...Blending American ginseng and chrysanthemum buds with fruity cacao from Philippines' Rehoboth Estate makes for a powerful yet comforting aroma..."

Welcome to Day #13 of Chocolate, Tea, Herb and Spice Week--featuring a range of bars, truffles, and hot chocolates infused with herbs and/or spices and/or teas.

Today's five truffles were made and distributed by Intrigue Chocolate Co. (Seattle, WA). These individually-wrapped truffles were part of a 13-piece truffle assortment box.

Pairing these truffles with a few (non-competing) side dishes and some teas, resulted in an instant, well-crafted cacao feast.

Honey & Sea Salt Truffle aroma and flavor notes included: rich, creamy fudge brownie, honey, very faint honey cookie, and sea salt. Sounds simple, but the flavors were perfectly balanced in this truffle. Another favorite.

Pomegranate & Bay Leaf Truffle notes included: rich chocolate with flavorful red fruit and sophisticated herb (bay leaf). Well-executed, and wonderfully balanced. The result was something akin to a classy, vertical, floral arrangement with subdued, elegant reds and greens. (Ode to a truffle?)

Fresh Mint Truffle notes included: fresh and authentic mint infused into rich, creamy chocolate. But the mint wasn't the strong, overpowering, sweet peppermint found in most mint-flavored chocolates. Instead, the maker chose to use a mint closer to spearmint (and perhaps a touch of another mint). A very nicely balanced chocolate with pleasing, subtly complex mint flavor.

Coffee Truffle notes included: beautiful coffee, cream latte, and coffee cheesecake/cream cheese (there was no cream cheese). I really enjoyed that I could taste the nuanced flavors in the coffee, which was wonderful.

Balsamic & Fig Truffle notes included: rich fruit (dried fig), red wine (there was no wine) and chocolate notes. The Balsamic added some flavor depth and a sweet, rich, slightly tangy taste.

I enjoyed the buttery smooth truffle texture, the authentic and balanced flavors, and the choice of herbs and spices in the assortment box (of 13 truffles).

Ingredients: Chocolate (cocoa mass, sugar, cocoa butter, vanilla, soy lecithin), Cream (milk), flavors (as described in the truffle name).

  • Anise Seed Truffle - Good ++

Welcome to Day #11 of Chocolate, Tea, Herbs and Spices Theme Week(s).

Today's Gingerbread 60% Cacao (bar) made and distributed by Intrigue Chocolate Co. (Seattle, WA) was part of the company's bean-to-bar Origins line. The bar was made using cacao beans from Ghana (Asante Akim region). Community: Three Mountains, Kome blend; Type: "Criollo, Forastero, Trinitario, and more pending identification." Crop Year: 2023.

Aroma notes for this bar included: authentic gingerbread and gingerbread spices, and dark chocolate.

I appreciated the short list of quality ingredients in this well-balanced, judicious and warm seasonal bar. I often find 60% cacao chocolates a little too sweet; but this was not the case today. I could taste both the rich dark chocolate and the spices: the ginger, cinnamon, cloves and a bit of black pepper in this blend.

(Disclosure I love ginger molasses cookies and gingerbread; and as an adult I also love gingerbread teas and lattes with similar spices.)

I enjoyed today's Gingerbread bar with two different Intrigue truffles from an assortment box of 13 different, and individually-wrapped, flavors.

Intrigue's Brandy and Cherry Truffle was a classic. Rich, creamy, dusted in cocoa powder. Very Good.

A warm cup of Tazo Ginger Jasmine tea + Intrigue's Anise Seed Truffle (also authentic and tasty), provided the "tea" and "herb" components of this week's theme (Chocolate Tea, Herbs and Spices Week).

Maker's Tasting Notes for Gingerbread bar: "...smells like home and grandma's baking."

Ingredients: Roasted cacao nibs, raw cane sugar, cocoa butter, ginger, cassia cinnamon, cloves, nutmeg, allspice, black pepper, sea salt."

Allergy-related information: "No actual bread was harmed in the making of this treat..." (minimizes gluten worries).

Welcome to Day #10 of Chocolate, Tea, Herbs and Spices Theme Week.

Today's Spicy Orange Chocolate Bar was from ChocolateSpiel (Seattle, WA).

Aroma notes included: chocolate; citrus (orange) and spices.

Overlapping splashes of colored cocoa butter "paints" gave this bar an attractive/festive appearance.

This chocolate had a smooth, relatively creamy texture.

Flavor notes included: chocolate (smooth, dark ganache), citrus (orange) and a bit of spicy heat.

The orange flavor with the dark chocolate and spices was a successful blend. I enjoyed this bar with a cup of tea.

Maker's tasting notes: "72% bean to bar chocolate made with Colombian cocoa beans. This bar has a classic cayenne pepper spiciness to it and fruity orange flavor."

ChocolateSpiel - Earl Grey (bar) - Dec. 30, 2024

Chocolate of the Day

ChocolateSpiel
Earl Grey (bar)
Good ++
Weight: 1 oz. (27 g.) in 1 bar
Calories: 155 calories (estimate) in 1 bar
Cost: $8.00 for 1 bar
Purchased from: Etsy.com, ChocolateSpiel, online order

Welcome to Day #5 of Chocolate, Tea, Herbs and Spices Theme Week.

Today's Earl Grey (bar) was from ChocolateSpiel (Seattle, WA).

Aroma notes included: chocolate; very faint pepper and spice; and barely detectable sweet orange.

Multi-colored, overlapping splashes of colored cocoa butter "paint" gave this bar an attractive/festive appearance.

Texture: smooth, relatively creamy with occasional bites of whole almonds. The almonds added textural interest.

Flavor notes included: chocolate (smooth, dark ganache), subtle bergamot (the flavoring in Earl Grey tea), and lightly salted almond.

The skin-free (possibly marcona) almonds on the back also added some flavor depth. It reminded me of tea cookies/snacks -- small butter cookies with large Marcona almonds in the centers that you might enjoy with tea. And the judicious touch of salt balanced out the sweetness.

I liked the sweet and salty plus floral/bergamot tea notes; they all harmonized well together; and I really enjoyed the lingering earl grey flavor into the finish.

Ingredients: Cocoa, almonds, sugar, cocoa butter, earl grey from Key to Teas, salt, colored cocoa butter (Yellow 3).

Allergen-related information: "May contain traces of peanut, gluten, tree nuts."
