Welcome to Day #9 of Chocolate and Almond Theme Week.

Today's Deep Dark Toasted Almonds were part of a six-flavor assortment* of "Goat Poop" chocolate covered confections--from Beekman 1802 (Sharon Springs, NY). These chocolates were housed in a sunny yellow, cylindrical tin decorated with images of the dark and milk chocolate coated rounds/ovals within.

Aroma notes included: subtle chocolate, faint caramel, and very faint nut.

Each Toasted Almond piece had a generous coating of Belgian chocolate that surrounded a crunchy whole toasted almond. Flavor notes included sweet dark chocolate; faint caramel, butterscotch and malt; and authentic almond (nut). Some of the more subtle (caramel/butterscotch-like) notes may have come from other flavors in the tin.

Ingredients: Chocolate (Sugar, Cocoa Butter, Belgium Unsweetened Chocolate, Whole Milk Powder, Skim Milk Powder, Butteroil, Soy Lecithin, Vanilla Extract), Dry Roasted Almonds.

Today's Chocolate Almond Collagen Protein Bar was manufactured for Fuel4Ever (San Jose, CA).

This dark chocolate-hued protein bar was dense, chewy, and chocolate-y, and flecked with small almond bits. 

Flavor notes included: sweetened cocoa; mild, diffuse and very faint fruit (date)); and subtle, mellow, nut (almond) butter (number one ingredient).

I liked that this Chocolate Almond bar contained 14 grams of protein*--great for someone wanting/needing to boost their protein intake. (Most protein bars contain closer to 9-12 gram of protein.)

The sweetness level was relatively high; although the bar contained only 5 Net Carbs. It was sweetened with Allulose**. I would've preferred a bar with 1/3 of this level of sweetness (and less allulose; but I prefer less sugar(s) in chocolate and dessert items, so others may feel differently.

Welcome to Day #6 of Chocolate and Almonds Theme Week. 

Today's LOVO Almond Milk Chocolate (bar) was manufactured in Switzerland for Radically Good Food Co. (Toronto, ON, Canada).

Very faint aroma notes for this 100% plant-based bar included: sweet dark chocolate, malt and nuts. 

Texture: thick, creamy melt (soft, almost sticky caramel); and creamy, uniform texture.

Flavor notes included: very sweet, creamy, somewhat diluted chocolate (hot cocoa with an alternative milk, very faint almond milk); and very faint (barely detectable) warm spice (gingerbread) in the long, sweet finish. At the very end, I tasted a very tiny, fleeting hint of almond (milk); but otherwise it was difficult to detect any almond or nut-milk flavor.

This was a smooth, creamy, dairy-free (plant-based) chocolate confection made with just five ingredients. It was a bit too sweet for me (sugar was the number one ingredient); but this bar will appeal to those with a sweet tooth, and milk chocolate fans who wish to avoid dairy (milk, cream).

Today's Dark Chocolate Almond Butter Cups offering was distributed and sold by Trader Joe's (Monrovia, CA).* 

Aroma notes for these dark chocolate filled cups included: dark chocolate with very faint lemon-green (oxalis, wood sorrel); mellow nut butter (almond); and very faint nut cookie.

Flavor notes included: relatively flavorful, balanced, and sweet dark chocolate (chocolate-y, dark ganache/tort); and subtle, natural almond butter filling. The two layered flavors complemented each other. The roasted almonds and milk helped mellow the chocolate and balance the sweetness.; and the vanilla flavor added a bit of sweet baked cookie warmth.

Today's Dark Chocolate Bar with Almonds 73% Cacao was distributed and sold by Trader Joe's (Monrovia, CA).

Aroma notes for this bar included: dark chocolate; earth (light peat); faint fruit (citrus); and very faint nut (almond). 

Flavor notes for this creamy and crunchy bar included: bold, dark chocolate (chocolate-y, ultra-dark brownie, ganache); subtle earth; and chunks of almond. The almonds helped mellow the acidity and bitterness and made it taste less sweet (which I liked).

The organic, bold 73% dark chocolate tasted more like an ultra-dark (75%-80%+ cacao) chocolate. I enjoyed this aspect; and I'm guessing other dark fans will too. If your preference is for a milder chocolate, maybe not so much.

Today's Almond Butter & Black Lava Salt 80% Cacao (bar) was from Stone Grindz (Scottsdale, AZ). This small-batch chocolate maker offers a variety of single origin bars and chocolates with flavor inclusions.

The makers at Stone Grindz have been consistently churning out great small batch, bean-to-bar chocolates (bars and confections), including single origin bars and bars with flavor inclusions. The cacao used to make this bar was from northern Madagascar.

Aroma notes included: dark chocolate, almond butter and very faint fruit (berry, very faint date).

This almond butter bar had a very appealing creamy, almost buttery, melt and texture.

Flavor notes included: dark chocolate fully blended/integrated with nut (almond) butter; the salt was very subtle. The end result was an enjoyable, mellow, creamy and subtly nutty chocolate that seemed rich and well-behaved for an 80% cacao dark chocolate; i.e. it was low in acidic and/or bitter notes.

The barely detectable, diffuse fruit (berry) notes from the Madagascar cacao also complemented the roasted almonds (butter) nicely.

"Maker's tasting notes and description: "Notes of silky almond butter, sea salt"..."An 80% dark chocolate ground with freshly roasted almonds (and) black lava salt. This bar is so silky and smooth you would never know it's an 80% dark!"

Welcome to Day #8 of Chocolate and Salt Week, and Day #2 of Chocolate and Almond Week. 

Today's KiZE Chocolate Sea Salt (bar) was from KiZE Concepts (Oklahoma City, OK).

Aroma notes included: faint chocolate (dark chocolate cookie), faint peanut butter oat cereal/cookie, and very faint peanut butter and honey sandwich.

Texture: I found this bar in the refrigerated section, and wondered if it would have a "hard" chew as a result. Answer: Nope. It had just the right amount of soft, cohesive chew. It wasn't too dry (no protein powder grit), and it wasn't crumbly. Chocolate chips added spikes of dark chocolate flavor and texture.

The flavors (chocolate, peanut butter, honey, subtle date) were pleasing, and landed this bar a spot in the Goldilocks zone. Not too much or too little of anything. It was just right. I enjoyed this bar with a handful of whole, California almonds. The perfect healthy snack duo.

I liked several things about this bar. It was: 1.) a gluten free bar with 7 grams of plant protein with great texture (not dry/gritty or too moist); 2.) well balanced: not too sweet, not too salty--and a well executed blend of chocolate, peanut butter and honey flavors; 3.) chocolate chips added extra pops of dark chocolate texture and dark chocolate flavor; and 4.) made with a relatively short list of quality ingredients.

Today's "Breaks" Salted Almond Bark, made with 43% Cacao Oat Milk Chocolate and Coconut Sugar, was manufactured by Scharffen Berger* Chocolate Maker (Ashland, OR). This was one of 4 flavors in the company's Breaks oat milk chocolate product family.* 

Aroma and flavor notes included: dark chocolate, coconut/brown sugar, and very faint (barely detectable) sweet oatmeal with nuts (almonds). 

The generous field of tiny, crunchy bits of almond harmonized well with the 43% cacao dark oat milk chocolate in these bark pieces. The choice of coconut sugar (and very faint vanilla) added some pleasant warmth and flavor depth (memories of sprinkling brown sugar on hot oatmeal). The salt was subtle, and helped balance the sweetness.

Today's Copper Kettle Co. Dark Chocolate Truffles with Sea Salt were manufactured by CandyCo (Lindon, UT).

Aroma notes for these individually-wrapped chocolates included: subtle dark chocolate and very faint (barely detectable) tart sweet green (wood sorrel, oxalis); and almost undetectable, very diffuse fruit (dried fruit and very faint coconut.

A smooth dark chocolate coating surrounded an even smoother, dark chocolate ganache ("melt-away centers").

Flavor notes included: satisfying chocolate-y, smooth (tasting and textured) dark chocolate with small upticks of sea salt and very faint warm, dark chocolate fudge with vanilla.

What I enjoyed: this dark chocolate confection 1.) wasn't too sweet; 2.) had a smooth, textural dark chocolate gradient (from outer shell to generous center); and 3.) had a relatively short list of ingredients.*

Aroma notes included: sweet milk chocolate and subtle, diffuse tropical fruit(s).

Texture: chewy dried mango and crunchy bits of plantain chips in a creamy smooth milk chocolate base.

Flavor notes included: creamy, sweet milk chocolate and hints of dried tropical fruit (dried mango) and plantain chips. Subtle sea salt helped balance the sugar content of the 47% milk chocolate.

Edamame Sea Salt (bar)

Aroma: sweet milk chocolate with very faint, diffuse, aromatic and almost perfumed (tropical) fruit. 

Texture: a blend of creamy milk chocolate and toasted edamame with a soft crunch.

Flavor notes included: sweet, creamy milk chocolate and salted, toasted edamame (young, more tender soybeans). The salt in the edamame provided a welcome counterbalance to the sugar/sweetness of the chocolate for me.

Today's 70% Dark Chocolate with Cacao Nibs and Alaska Pure Sea Salt (bar) was from Farmhouse Chocolates (Bristol, VT).

Aroma notes for this bar included: smooth, flavorful dark chocolate with very faint (barely detectable) balanced earth (peat, cacao nibs ); floral (incense); and diffuse red fruit (berry, red apple).

This bar broke with a satisfying (well-tempered) snap, and had a blended texture: smooth dark chocolate + soft crunchy (nibs).

Flavor notes included: true chocolate (cacao nibs, smooth dark chocolate), and light sparkles of sea salt.

What I liked: 1.) the sweetness level, i.e. it was not too sweet; 2.) quality (house-roasted) cacao nibs; 3.) balanced chocolate complexity with a dose of tiny, squareish, flake-patterned (Alaska) sea salt crystals.

Aroma and flavor notes included: bold, smooth fudge-y dark chocolate with diffuse red fruit (berry); balanced, (barely detectable) earth; and accented with sassy sparkles of sea salt.

Texture: bar broke with a hard snap, and had a creamy melt and texture 

What I liked about this bar: 1.) smooth yet flavorful dark chocolate with subtle complexity; and 2.) an attractive, complementary balance of dark chocolate and salt. (I like savory chocolate flavors.)

Today's Ritter Sport Caramello Salato (Salted Caramel) (bar) was from Alfred Ritter GmbH & Co. KG (Waldenbuch, Germany). 

Aroma notes included: salt caramel, milk chocolate, and faint sweet caramel toffee.

Texture: smooth, creamy milk chocolate studded with crunchy caramel (toffee) bits.

Flavor notes included: rich, milky chocolate, with microbursts of salted caramel/sweet toffee.

After the first bite (square), I wanted a squeak more salt, to help balance the sweetness (sugar is the number one ingredient). But subsequent squares turned up a bit more salt; and then the whole bar lit up in the sweet-salt addictive, "Goldilocks" zone. Beware, if you were only planning on having just a few bites.

Happy Valentines Day and welcome to Day #1 of Chocolate and Salt Theme Week. 

Today's two chocolate bars sampled together were the perfect blend for hearts and chocolate day -- a yin and yang blend of dark chocolate and red fruit + white chocolate yellow citrus and sea salt sunshine. 

Maya Chocolates - Raspberry 65% Dark (bar)

Aroma notes included: citrus (sweet, tart lime), red raspberry and dark chocolate.

Texture: smooth dark chocolate and bits of berry pulp and crunchy raspberry seeds.

Flavor notes included: chocolate-y (rich fudge brownie) and authentic red raspberry.

Ingredients: "Unsweetened Chocolate, Cane Sugar, Cocoa Butter, Soy Lecithin, Freeze Dried Raspberries"

Allergen-related information: "May contain traces of milk (and) other tree nuts."

Castronovo - White Chocolate Lemon, Lemon Salt (bar) 

Aroma notes included: authentic, refreshing whole lemon (rind and fruit) and sweetness.

Smooth, creamy white chocolate (with fully incorporated/infused lemon and just the right touch of lemon sea salt) made for a very well-balanced, flavorful and enjoyable white chocolate. 

Castronovo chocolate maker, Denise Castronovo, cited memories of "Nanny's lemon meringue pie", light lemon desserts and Italian cookies (with lemon zest and icing) as her inspirations for this lovely bar.

Note: While I don't "count" white chocolate as a daily chocolate, I do feature ones I really like (that aren't too sweet), paired with a dark or milk chocolate on the same day.

Welcome to Day #15 of Chocolate and Peru Theme Week.

Today's dark chocolate covered Sacha Inchi Bark was from Castronovo Chocolate (Stuart, FL). 

Thank you to chocolate maker Denise Castronovo, who is currently offering bars and confections made with cacaos from at least three different growing locations in Peru. She has also been developing chocolate offerings with today's indigenous Amazonian flavor inclusion--sacha inchi--to help introduce these tasty South American seeds to U.S. consumers.

Aroma notes included: roasted nuts/seeds (similar to roasted pumpkin seeds + roasted peanuts); faint dark chocolate.

These thick mini slabs of flavorful dark chocolate bark were chock full of whole, roasted sacha inchi* seeds. The seeds contributed a "roasty", nutty flavor and texture that complemented the dark chocolate nicely.

Flavor notes included: rich dark chocolate with faint tropical fruit (citrus, cacao fruit, berry) notes, and roasted sacha inchi seeds (similar to a blend of roasted large squash/pumpkin seeds + peanuts). 

Note: this bark may no longer be available; but chocolate-covered sacha inchi were on the website. I look forward to trying other sacha inchi and chocolate blends from Castronovo in the future.

*Sachi Inchi (Plukenetia volubilis) seeds come from six-pointed star-shaped seed pods (that look a bit like tiny green pumpkins--hanging off vines) in the Amazon rainforests of Peru and Northern Brazil. (Sacha Inchi are also found in Colombia, Venezuela, Bolivia and Ecuador.) These seeds are also known as Inca peanuts, Peruvian peanuts, jungle peanuts and mountain peanuts.

Today's Signature Collection, Valle de Los Rios, Peru Dark Milk 60% Cacao (Batch #1211) (bar) was from Castronovo Chocolate (Stuart, FL). 

Happily this week, I've been able to sample chocolates made with cacaos from a variety of Peruvian regions. Thank you to Chocolate maker Denise Castronovo, who is currently offering bars and confections (see Sacha Inchi bark in tomorrow's post) made with cacaos from at least three different growing locations.

Aroma notes included: chocolate with soft floral, fruit and caramel.

This 60% bar broke with a well-tempered hard snap, and had a uniform, smooth, relatively creamy texture.

Flavor notes included: sweet, smooth dark milk chocolate with very faint floral, fruit and caramel and almost undetectable sweet cereal milk. Light, sweet finish.

Maker's tasting notes: "...my most feminine and delicate flavor profile milk chocolate....(with a) soft floral character, delicate fruit of melon, and (a) hint of clove spice."

Welcome to Day #13 of Chocolate and Peru Theme Week.

Today's Signature Collection, Salitral, Peru 70% Desert Criollo Cacao (Batch #1349) (bar) was from Castronovo Chocolate (Stuart, FL). 

Chocolate maker Denise Castronovo used "...a mix of native criollo cacao from the northern coastal desert region of Piura--where the Amazon meets the desert coast..." to make this bar. She was intrigued to read the words "desert" and "native criollo cacao" together. (Me too!) I've always imagined the more "delicate" native criollo cacaos growing under the shade of taller trees in temperate rainforests.* 

Aroma notes included: dark chocolate (drinking chocolate, cocoa); very faint soft, sweet green botanical (light floral and spice); and faint, diffuse fruit (green fig, berry) and nut (almond).

This 70% bar broke with a well-tempered hard snap, and had a uniform, smooth, almost creamy, pleasing texture.

Flavor notes included: smooth dark chocolate with a very pleasing flush of bright, complex fruit (citrus, cacao fruit, berry) and very faint nut notes. It also had a pleasant finish.

Maker's tasting notes: "This chocolate boasts bright citrus and tropical fruit flavors up front that transition into delicate nutty and spice flavors at its finish..."

*Deserts are associated with a limited tree (canopy) cover. However, like grapes, coffee or other fruit crops from the Equatorial belt, certain varieties of cacao trees/fruit are better-suited for areas with direct sun (vs. growing under a canopy) than others. Coastal desert areas also provide more humidity (e.g. coastal fog) than inland deserts. (I have seen, e.g. introduced cacao trees growing in Hawaii with no tree cover, but they're also growing very close to the Pacific ocean, and at a higher (cooler) latitude.)

Aroma notes included: dark chocolate (warm cocoa, drinking chocolate)

This 70% bar broke with a well-tempered snap, and had a uniform, smooth, almost creamy, pleasing texture.

Flavor notes included: smooth dark chocolate, with very faint floral/perfume/cardboard and barely detectable fruit (dried fruit (very subtle date), caramelized fruit) and nut (almond) notes. Pleasant, sweet finish with very light caramel.

Maker's tasting notes: "...laced with natural sweet flavors of almond, vanilla and caramel."

Welcome to Day #11 of Chocolate and Peru Theme Week.

Today's "Wild Experience" 85% Organic, Premium Tree-to-Bar, Dark Chocolate (bar) from U. Chocolate Corp. (Orlando, FL) was made in Peru. It was one of five different bars (all featured this week) in a larger chocolate variety pack.

The company crafted these attractively packaged bars at their "...organic farm in the Amazonia with a selection of our fine aroma cocoa varieties..." The chocolate was "Grown, Harvested and Crafted with 100% plant-based ingredients by El Mejor Cacao del Mundo S.A.C. in our all-in-one facilities at Hacienda Umbelina, in the Peruvian Amazonia.")

Aroma notes included: dark chocolate (bold, bittersweet ultra-dark chocolate torte topped with a wafer cookie) with very faint green botanical (almost green fig or green banana, but not quite); and well-managed, very diffuse fruit (red berry, nectarine). 

Texture: well-tempered (broke with a snap) with a thick, creamy smooth texture.

Flavor notes included: well-managed ultra-dark chocolate with very faint botanical, faint diffuse fruit (nectarine, cacao fruit pulp), faint ultra-dark cookie; almost undetectable spice (ginger); faint, fleeting earth (loam) and yogurt. And, at the very end of the finish there was a tiny blip of muted fruit (strawberry-mango). 

This was an enjoyable and thoughtfully managed ride. For some, any 85% dark craft chocolate may be wildly adventurous. For dark chocolate lovers, I found this well-managed Peruvian cacao bar more complex and interesting than many 85% dark bars.

What I liked about this "Wild Experience" dark chocolate: 1.) well-balanced, ultra-dark (85%) cacao complexity, from start to finish; 2.) part of a variety pack with unique (and rare) Peruvian single region cacao flavors--five bars, that could be tasted and compared side by side); and 3.) organic, gluten-free, single origin chocolate made with just two, high-quality ingredients.

Today's "Intense Experience" 78% Organic, Premium Tree-to-Bar, Dark Chocolate (bar) was made in Peru and distributed by U. Chocolate Corp. (Orlando, FL). It was part of a larger chocolate variety pack--one of five Peruvian (Amazonia) cacao U. Chocolate bars featured this week.

The bars were made that the company's "...organic farm in the Amazonia with a selection of our fine aroma cocoa varieties..." ("Grown, Harvested and Crafted with 100% plant-based ingredients by El Mejor Cacao del Mundo S.A.C. in our all-in-one facilities at Hacienda Umbelina, in the Peruvian Amazonia.")

Aroma notes included: subtle dark chocolate with faint, fleeting sweet green and cookie notes.
I half expected this "Intense Experience" bar to be a real fire breather from start to finish. It wasn't. But this was made with some very special, nuanced cacao from Peru. So what would it taste like?

The initial texture was creamy smooth, and the taste started with true dark chocolate-y notes...

What happened next reminded me of a rare tropical bird that appears in the sunlight for us to admire. It was that kind of experience. The flavors didn't bloom, they gently but powerfully unfolded; and then slowly disappeared back into the jungle.

Flavor notes included: dark chocolate (initial light, sweet green, shifting to more bold, with well-mannered, balanced bitter, earth and yogurt, as well as diffuse, softly undulating/blooming fruit (red berry, very faint almost-cherry, fine red wine). And at the very end of a relatively long finish: a little tropical fruit (mango).

What I liked about this chocolate: 1.) the balanced cacao complexity from the beginning to the last note in the finish; 2.) it was part of a variety pack with an authentic and interesting range of single origin cacao flavors from Peru--that allowed me to experience unique Amazonia cacao; and 3.) this organic, gluten-free chocolate offered a sophisticated, nuanced tasting experience with just two ingredients.

The cacao used to make U Chocolate bars was crafted at the company's "organic farm in the Amazonia with a selection of...fine aroma cocoa varieties..." This bar was "Grown, Harvested and Crafted with 100% plant-based ingredients by El Mejor Cacao del Mundo S.A.C....at Hacienda Umbelina, in the Peruvian Amazonia.")

Aroma notes included: dark chocolate and spicy, authentic ginger, with very faint green floral (orchid); very faint, diffuse fruit (spiced pear); and faint, rich, dark chocolate gingerbread and/or dark chocolate ginger molasses cookies.

Texture: well-tempered (broke with a snap) and almost creamy smooth.

Flavor notes included: smooth but nuanced dark chocolate and (completely incorporated) ginger, with some faint, slightly green floral/botanical/ginger spice nuances. 

There was a very subtle, balanced, slight bitterness in this ginger + cacao blend that will appeal to some and not to others (those who aren't ginger fans perhaps). I enjoyed the full ginger experience.

What I liked about this attractively packaged 72% dark chocolate: 1.) high-quality blend of single origin dark chocolate and authentic ginger; 2.) part of a variety pack that let one appreciate the range of flavors from Peru and what different cacao varieties have to offer; and 3.) this flavorful (organic, gluten-free) chocolate was made with just three ingredients.

Today's "Coffee Experience" 78% Organic, Premium Tree-to-Bar, Dark Chocolate (bar) was made in Peru and distributed by U. Chocolate Corp. (Orlando, FL).* This was part of a larger (10-bar) chocolate variety pack that included four other Peruvian (Amazonia) cacao bars featured this week.**

The cacao used to make U Chocolate bars is crafted "at our organic farm in the Amazonia with a selection of our fine aroma cocoa varieties..." ("Grown, Harvested and Crafted with 100% plant-based ingredients by El Mejor Cacao del Mundo S.A.C. in our all-in-one facilities at Hacienda Umbelina, in the Peruvian Amazonia.")

Aroma notes included: dark chocolate (bold, spicy cacao), with initial pepper (green pepper, very faint pickled capers), faint coffee, and aromatic pipe tobacco notes. 

As with all five bars in this Amazonian variety pack, savor these chocolate(s) slowly, and leave freshly opened chocolates out to breathe, and re-taste them later, to enjoy intricate and often mellower and more delicate flavors. Unique (and balanced) vegetal notes (pepper, capers in today's bar) dissipated fairly quickly after opening, allowing other flavors to unfold (coffee, tropical fruit, spice and faint floral notes in today's bar).

Flavor notes included: bold dark and spicy 78% chocolate that was made darker with (fully incorporated) coffee, tobacco (pipe tobacco with very faint, fleeting, floral/inferred vanilla). Lighter flickers of spice (cardamom) and tropical fruit (banana, passion fruit) emerged after the package had been opened for several minutes.

This flavorful, bold chocolate reminded me of a smoky scotch whiskey. That doesn't mean it will automatically pair with a whiskey, but if I were going to investigate possible beverage pairings, I might start there. This would also make for one heckuva mocha. Hang on to your hat. 

What I liked about this attractively packaged 78% dark chocolate: 1.) bold flavors and complexity--that would make for interesting beverage and food pairings; 2.) it was part of a variety pack that contained an authentic and interesting range of single origin cacao flavors from Peru; and tasting all these bars side-by-side offers a unique opportunity to experience cacao varietal flavors; and 3.) this organic, gluten-free chocolate was made with just three ingredients.

Today's "Aromatic Experience" 72% Organic, Premium Tree-to-Bar, Dark Chocolate (bar) from U. Chocolate Corp. (Orlando, FL), and was made in Peru. It was also part of a larger chocolate variety pack (box), and the first of five Peruvian (Amazonia) cacao bars that will be featured this week.

The cacao used to make U Chocolate bars is crafted "at our organic farm in the Amazonia with a selection of our fine aroma cocoa varieties..." ("Grown, Harvested and Crafted with 100% plant-based ingredients by El Mejor Cacao del Mundo S.A.C. in our all-in-one facilities at Hacienda Umbelina, in the Peruvian Amazonia.")

Aroma notes included: a pleasant dark chocolate aroma with very faint green floral; crisp, well-managed fruit, and fleeting fruit/vegetable (juice); and very faint earth (moss, peat). (Note: most vegetable notes are not objectionable to me; almost all initial aroma notes in the vegetable range (potato, tomato, yam, etc.) will generally dissipate quickly after a package has been unsealed and left open for 20 minutes.) 

What is not typical with most bars, but I experienced here (and with other heritage variety Peru cacao bars before): if you leave chocolate out to breathe, and re-taste it later, you'll often pick up mellow caramel, mocha, mild stone fruit (e.g. peach), and herbal spice (e.g. saffron) notes that weren't immediately detectable or were temporarily obscured by other notes. All good.

Texture: well-tempered (broke with a snap) and almost creamy smooth.

Flavor notes included: dark chocolate (initial light, almost floral, shifting to more bold, with well-mannered, balanced sour notes); tropical fruits (banana, papaya, soursop); dairy (very faint fleeting "sour"/yogurt with fruits); and barely detectable green (faint nut)/botanical/atmospheric notes reappearing in the relatively long finish. (After re-tasting this bar: very faint, fleeting saffron in the finish.)

What I liked about this attractively packaged 72% dark chocolate: 1.) the wonderful cacao complexity that extended from the very beginning to the tail end of the finish in this 2-ingredient bar; 2.) this was part of a variety pack that contained an authentic and interesting range of single origin cacao flavors from Peru; a great side-by-side tasting opportunity to experience what different cacao varieties have to offer; and 3.) this organic, gluten-free chocolate was made with just two ingredients.

Welcome to Day #6 of Chocolate and Peru Theme Week.

Today's La Pareja, Piura Dom Ramon's Farm Peru 72% Dark Chocolate (bar) was from Pump Street Bakers and Chocolate Makers (Suffolk, England).

Peru is home to many varieties of cacao. The rare white piura (Piura Blanco) cacao beans (native to Peru) used to make this chocolate were from a 120-year old farm in La Pareja (Peru), a village with a population of approximately 1,000 people.

It was a stormy, rainy winter day today in California where I live; and this Peru bar was a perfect, bright and bold winter warmer.

Aroma notes included: dark chocolate; almost undetectable light floral, green, biscuit; and very faint, fleeting vegetable (ripe sweet tomato, mixed sweet vegetable juice (tomato, celery, greens)--that disappeared after the package was open for 20-30 minutes. (Note: I did not find these fleeting/initial "vegetable" notes objectionable at all. These notes often disappear fairly quickly after the opening a sealed package.)

And the aroma notes just kept unfolding; so I suggest re-tasting this bar after an hour or so. I also enjoyed rich mocha caramel, and very, very faint caramel apple, when I re-tasted this 72% Peru bar later in the day. 

Texture: smooth, with a slight astringency in the finish

Flavor notes: Dark chocolate (rich cocoa, drinking chocolate); fruit (rich ripe, sweet-tart blackberry, nectarine, cacao fruit pulp); and subtle, diffuse warm spice. Medium, balanced (fruit) acidity. Bold, bittersweet chocolate flavor, (teetering on the edge of earth (loam) and bitter notes, without fully arriving at either).

What I liked about this bar: 1.) the opportunity to taste a rare cacao with complex, bright and bold blackberry and stone fruit flavor(s); 2.) well-executed, rich (single farm) aroma and flavor notes that continued to develop after opening; 3.) warming quality - like sipping a mug of hot, single origin cocoa; and 3.) the maker's choices that let the Piura cacao/fruit nuances shine.

Welcome to Day #5 of Chocolate and Peru Theme Week.

Today's jcoco 85% Single Varietal Contamana Cacao Peruvian dark (bar) was from Seattle Chocolate Company, Inc. (Seattle, WA) and was one of three identical, individually-wrapped bars contained in an attractively blue-purple hued, larger package. 

The Contamana* variety cacao used to make this bar was from the central-southern area of Peru (Cuzco region) in Quillabamba, in a valley (not that far from Machu Picchu), known for "its unique fine aroma cacao trees."

Aroma notes for this chocolate included: dark chocolate (rich cocoa); faint (muffled) fruit (ripe blackberry); subtle, balanced and fleeting rich, loamy + peat/tannic earth; and very faint botanical.

Texture: This well-tempered bar broke with a snap. The texture was pleasing and creamy smooth with the exception of a few very tiny crunchy (nib) particles in one bite. There was also a very faint, fleeting and very well-balanced tannic astringency.

Flavor notes included: flavorful dark chocolate (dark cocoa) with subtle, complex fruit (dark/red berry, citrus (faint lime), tropical fruit: cacao pulp); very faint botanicals (light spice); and balanced earth/light tannins. The finish was light, lingering and clean, especially for an 85%er.

What I liked about this bar: 1.) opportunity to try a single region, single varietal (Contamana) Peru chocolate; 2.) relatively smooth and approachable 85% ultra-dark chocolate with complex, interesting and balanced aroma and flavor notes; 3.) the maker's choice of a low roast**; and 4.) attractive packaging + three smaller, individually-wrapped bars that made it easy to share with/gift to others.

*Contamana is a rare variety of cacao; and one of many varieties of cacao from South America (the birthplace of cacao). Just as there are many varieties of grapes used to make wine, there are many varieties of cacao that can be used to make chocolate.

Welcome to Day #4 of Chocolate and Peru Week.

Today's Limited Release 80% Dark Peru Piura Blanco (bar) was made by Dick-Taylor Craft Chocolate (Eureka, CA). The cacao used to make this single origin bar was from the Puerto Pulache Community Cooperative in northeast Peru.

After tasting raw (100%) cacao White Piura (Piura Blanco) Peru cacao beans earlier this week, I was looking forward to tasting a dark chocolate made from similar cacao. I was expecting relatively delicate, nuanced flavors with red fruit/red apple notes. 

This 80% chocolate Piura Blanco bar went boldly beyond that expectation, and illustrated how significant roasting, conching and other maker choices can be.

Aroma notes included: roasted ultra-dark chocolate with medium fruit acidity and very faint green (nut, tea, wood) notes. 

I highly recommend letting this chocolate breathe a little after you open the inner wrapper, and re-tasting after it's been opened for at least 30 minutes. More subtle notes emerged in aroma and flavor. After this package was open for 30 minutes, the deep chocolate (fudge) note(s) came forward, and the heavy roast aroma seemed to recede a bit. 

And after 45 minutes there were some pleasant, faint gingerbread chocolate and other notes (botanical, sweet green) in the aroma. It's worth the wait to enjoy the complexity. The finish seemed to grow longer (or notes in the finish became more detectable) as well. Not quite a shape-shifter bar, but close!

Flavor notes included: bold 80% cacao ultra-dark (dark roast), deep chocolate-y, followed by a significant blush of tart apple (fruit acidity) and charcoal (at least initially), and ending with a relatively mellow/sweeter (floral, date, caramel) finish with smaller upticks of tart fruit (apple). (Later there were also very faint red wine notes in the finish as well.)

Today's Peru Cuzco Raw Cacao Beans were from Meridian Cacao (Portland, OR). 

Meridian Cacao directly sources single origin cacao beans (from several countries); and they offer beans, cacao nibs, cocoa butter, and other craft chocolate-making essentials. 

Yesterday and today, I "made" my own raw cacao nibs, from these Peru raw cacao beans. Raw cacao tastes different than roasted cacao. The beans had a more uniform, and deeper dark color once the skin/husk remnants were removed.

Aroma notes for these raw cacao beans included: fresh cacao, subtle fermentation (wine-like) that diminished after opening, and faint green floral.

Texture: satisfying; firm, nut-like crunch; even texture. Unlike yesterday's White Piura beans which were very easy to shell/break into pieces by hand, today's Cuzco beans took a little more effort. (These beans were wrapped into a towel and gently thumped with a small hammer.)

Flavor notes included: smooth, very slightly nutty cocoa flavor with light, balanced sweet green floral, and cookie (coconut oatmeal cookie, graham cracker).

Raw cacao tastes different than roasted cacao. I really enjoyed these high-quality, minimally processed cacao beans, with original flavors intact, just right out of the bag. 

Both yesterday's and today's Meridian Peru beans/nibs would make a great chocolate bar, confection, or high-end snack.  If you like dark chocolate, I highly recommend sampling different varieties (and origins) of high-quality cacao beans (side-by-side). Meridian is a great source for cacao beans.

Today's Peru White Piura Raw Cacao Beans were from Meridian Cacao (Portland, OR). 

Meridian Cacao offers directly sourced, single origin cacao beans (from several countries), cacao nibs, cocoa butter, and other craft chocolate-making essentials. CEO, Gino Dalla Gasparina, was born and raised in Portland, and founded the company when he was just 24 years old. 

White Piura beans are rare (making up only a tiny percent of overall cacao harvests worldwide). They are often cited for red fruit flavors, medium acidity--and being low in astringency and bitterness. You might read mentions of panela, malt and wine, but these notes may also be influenced by fermentation choices and other local conditions.

Also, today I am tasting raw cacao beans (seeds), with the thin skins still on the dried seeds. Unroasted cacao tastes different than roasted cacao. I tried a few beans with and without the thin papery skin (that can be removed by hand with a little pressure and rolling between fingers). The beans had a more uniform, deep dark color with the skins off and it was easy to break them into cacao nib-sized pieces.

Aroma notes for these raw cacao beans were delicious, and included: fresh cacao; red apple; smooth, fine red wine; and caramelized grapes with a splash of red wine vinegar.

Texture: satisfying; nut-like crunch; even texture

Flavor notes included: rich, smooth cacao flavor with light. balanced red fruit and red wine/red grape. This was a cacao with a light nut/seed character, very low bitterness and no detectable astringency. Rubbing the skins off the bean before eating it did remove a tiny bit of flavor, but not much.

I really enjoyed these high-quality, minimally processed cacao beans, with original flavors intact, just right out of the bag. I can't help but think these would make a great chocolate bar, confection or dessert.
