Welcome to Day #4 of Chocolate and Brazil Theme Week.

Today's Trinitarios Inclusao 70% Dark with Orange Zest bar from Baiani Chocolates (Bahia, Brazil) was the fourth of four bars featured this week from Baiani.

This inclusion (flavored) dark bar was suffused with a touch of rich, balanced natural orange flavor. The base chocolate had a smooth, relatively bold, dark flavor—not unlike the company's 70% Bold Roast bar (featured yesterday).

The craft chocolate makers at Baiani source their cacao from a family farm (fazenda Santa Rita) in Vale Potumuju, Bahia, Brazil. Bahia is the largest cacao producing state in Brazil, and is located on the Atlantic coast.

Welcome to Day #3 of Chocolate and Brazil Theme Week.

Today's 70% Bold Roast chocolate bar was made tree-to-bar by Baiani Chocolates (Vale Potumuju, Bahia, Brazil).

This bold roast bar was a variation on yesterday's Mild Roast 70% bar* from the same maker, but it was, as expected, bolder and darker (with a slight roasted coffee note).

And this award-winning bar was less fruity and sweet (even though they were both 70% bars (containing cacao from the same family farm and similar amounts of cane sugar). Today's bar also had a bolder finish as well. Side-by-side tastings are always very educational (and in this case delicious as well...Hmm. Maybe we need to re-sample those two again, just to make sure.)

Today's 70% Mild Roast Terroir Lagoa bar from Baiani Chocolates (Vale Potumuju, Bahia, Brazil)
was a very nicely balanced, dark chocolate bar with fruit, cream and dark notes. It was smooth but also had depth and some complexity as well.

This Brazilian (tree-to-bar) company has roots in cacao, and their small team (listed on the inside of the packaging) is producing some great chocolate.

Welcome to Day #1 of Chocolate and Brazil Theme Week.

Today's Trinitarios Dark Milk 57% bar was made tree-to-bar by Brazilian craft chocolate makers at Baiani Chocolates (Brazil).

This flavorful dark milk chocolate Brasileiro bar had a smooth, fairly creamy melt, and true chocolate and milk notes. (The chocolate contained: 57% (cacao) and 7% milk.)

In the past decade, Brazil has been making a cacao comeback. In the 1980s and 1990s, a fungus decimated cacao trees in Brazil. The country had been one of the top cacao producers; and the state of Bahia (in NE Brazil, bordering the Atlantic Ocean) was at the center of production.

The owners of Baiani came from a line of cacao farmers and producers. Juliana Pinheiro Aquino remembers what happened. Cacao had become a very important fruit crop. "My father was depressed. He was very sad," she said.

Fortunately, in the last decade yields are up again in Bahia; and it is easier to find Brazilian chocolate.

Like many of the best chocolate makers, Juliana and Tuta Aquino continue to improve their craft.  (E.g., they consulted "cacao whisperer" Dan O'Doherty of Cacao Services to improve their growing and processing methods, including transforming their traditional drying area into a solar drying tunnel.)

Today's Milk Chocolate with Sea Salt and Baked Peanuts from Quintana Roo bar—created by Ki'Xocolatl (Merida, Yucatan, Mexico)—was brought back to the U.S. as a gift. (Many thanks to Eileen.)

This 50% Cacao milk chocolate bar from Mexico had a satisfying, smooth dark milk chocolate and balanced nut aroma, flavor and texture, with a creamy melt. The sea salt was beautifully subtle and not overwhelming.

Welcome to Day #7 of Chocolate Surprise Theme Week.

Chocolate blends well with other plants like fruits, nuts, seeds—and, surprise, even greens. Today's two chocolate items incorporate plant proteins ranging from watermelon seeds to spirulina.*

Today's first item, the Go Raw Organic Dark Chocolate plant protein bar was made by Freeland Foods (San Jose, CA). The first ingredient listed was watermelon seeds, followed by dates, cacao, chocolate extract, vanilla extract, Celtic sea salt and rosemary extract.

This vegan, gluten-free bar contained 12 grams of protein, and tasted better than many other protein bars. (I liked the short ingredient list, and I'm guessing the chocolate extract could be omitted. Quality cacao by itself is usually sufficient to impart rich flavor; but it wasn't too bad.)

The second item, was Natural Chocolate Spiru-Tein mix that contained a blend of rice, pea and soy protein (as well as spirulina, added vitamins and minerals, and a long list of other ingredients). The dry powder had a mild chocolate and vanilla aroma. It was unsweetened (which I liked) and readily mixed with liquids. The taste was slightly malty and not unpleasant.

*Spirulina is a Cyanobacteria (once classified as micro-algae) that grows in alkaline (mineral-rich) ponds and lakes in warmer climates, and is harvested and used as a food supplement.

Welcome to Day #5 of Chocolate Surprise Theme Week.

Today's Certified Gluten Free Space Adventure Cookies from Blissful Baking were Imported by Bahlsen North America Inc. (East Hanover, NJ). 

Who doesn't want to answer exhortations like "Zip up your spacesuit!" and "Strap on your jetpack!" with a resounding yes!?

The package pictured five different small cookies shapes: astronaut boy, astronaut girl, planet, rocket ship and a handsome moon. Surprise! The package also contained some bonus shapes: a sun, a shooting star and what might have been a UFO, providing characters for many possible space adventure scenarios.

The small crunchy cookies had a light chocolate flavor and, unfortunately, an artificial aroma to them, perhaps due to the fact that they were already expired when I bought them. Too bad I can't climb into the tiny rocket ship (or UFO) and go back in time. 

Instead, I'll enjoy the full moon shining through the trees branches in my backyard and will imagine what it might be like to live on a beautiful planet with giant cacao trees.

Mushrooms in your hot chocolate? The folks at Four Sigmatic (Finland) believe in the benefits of drinking mushrooms and superfoods; and they offer a range of tea, coffee and cacao mixes with different mushroom inclusions.

Today's Mushroom Hot Cacao Mix contained cacao powder, coconut palm sugar, reishi mushroom extract, cinnamon, cardamom and stevia. Reishi mushrooms are thought to help support "sleep and occasional stress."

The organic, vegan, paleo, decaf mix was made with "pure Peruvian cacao" and contained 500 grams of organic, linden log-grown red reishi mushroom (Ganoderma lucidum) per serving. 

One serving single-serving packet of dry mix was only 25 calories (more if you neutralize the health benefits and add cream of course).

Wrapped in packaging printed with an attractive watercolor illustration of an ancient amphitheater, and tied with a chocolate brown ribbon, this chocolate bar had classic, smooth, even dark chocolate flavor with a subtle hint of warm vanilla.

Today's Gold Frankincense and Myrrh dark chocolate bar was from Rococo Chocolates  (London, UK).

This 65% cocoa bar had a pleasing, complex chocolate aroma; and a rich, true chocolate flavor with hints of dried golden and citrus fruits, and slight aromatic earthy note.

The dark chocolate bar was flavored with a hint of sweet orange oil and contained trace amounts of 22-carat gold leaf, frankincense oil and myrrh oil.

Today's Alaska Pure Spicy Salted Chocolate Caramels were created by Chef Stef's (Juneau, AK). This package of six caramels were carefully transported back to California and given to me by a frequent traveler and friend. (Thank you again Toni for this chocolate surprise!)

These individually-wrapped, soft brown sugar caramels were seasoned with Gulf of Alaska sea salt and had a spicy kick at the end. (Ingredients: sweetened condensed milk, brown sugar, corn syrup, butter, unsweetened chocolate, cinnamon, vanilla, cayenne pepper, black pepper, sea salt, hot sauce pepper.)

Many years ago I visited Anchorage, Alaska, and during my visit there I tasted some remarkable chocolates, including some made with native berries—and two made with bits of smoked salmon and anchovy and blueberry, respectively. (Both were skillfully made and much better than you'd think.) Thank goodness for places with room for big ideas.

Some chocolates on this site come from friends who have recently traveled abroad. Today's Orange and Geranium Milk Chocolate bar made for the Royal Botanic Gardens, Kew (UK) was such a gift. Thank you Elisa for bringing back this lovely botanically-themed bar.

I love floral aromas and flavor notes, so this bar tasted like a bit of heaven to me. The underlying milk chocolate was smooth, creamy and sweet—but not so much so that the sweetness obscured the wonderful geranium and orange notes.

The banana flavor and almond bits were balanced and subtle, allowing the smooth, creamy dark chocolate to be prominent in the tasting experience. Flip the bar over and it was bumpy with banana and nut bits—also visible in broken pieces.

This Organic, Dark Chocolate with Orange + Toffee 64% bar was crafted by TCHO in Berkeley, CA.

The orange flavor and the bits of crunchy toffee inclusions were balanced and subtle, allowing the smooth, moderately dark chocolate to be the most prominent flavor in the tasting experience. 

The texture was slightly more crumbly than expected (perhaps due to toffee bits).

Today's Fruit Cocktail 73% Dark Chocolate Mixed Fruits bar was created by Compartes Chocolatier (Los Angeles, CA). Jonathan Grahm, took over Compartes in his twenties. 

Grahm, a native Angelino, has created a staggering array of bars and confections with flavor inclusions since then (more than 200), all artfully designed and packaged.

"Fruit Cocktail" didn't fully describe the dazzling display of dried/crystallized fruits pressed on the back of this gluten-free dark bar. It was a fantasy fashioned from the crown jewels of fruits.

Today's Filled Passion Fruit 80% Cocoa bar from Lake Champlain Chocolates (Burlington, VT) was an intriguing combination of deep dark chocolate surrounding an creamy inner filling of tropical, tart, passion fruit.

The company has added a barely there touch of lime that also helps cut the sugar level (thank you). 

Normally, a smooth but bold 80% cocoa chocolate might overwhelm more delicate fruit flavors; but the two extremes co-existed rather beautifully and seductively in this bar.

These "Real Cherries Dipped in Silky Smooth Dove Dark Chocolate" were a slight departure from traditional Dove chocolate bars and offerings.

The slightly chewy, dried cherry centers had an authentic, slightly tart-sweet cherry flavor with chocolate richness surrounding the core fruit.

Glossy dark chocolate exteriors gave these rounds some shine and durability. Altogether, they were fairly tasty.

Welcome to Day #7 of Chocolate Brownie Week.

Chocolate Cherry Chia Muffins from Muffin Revolution (Richmond, CA) 

This grain-free, paleo-friendly and Non-GMO muffin was satisfying and less sugary sweet than most muffins or brownies (thank you!).  Sweetness was supplied by dates and fruits.

The texture was slightly more coarse—it was made with blanched almond meal/flour—than processed white grain flours. The chocolate flavor was pleasing; and the cherry and chia flavors were so well incorporated they might be missed.

So, while this is technically a muffin and not a brownie, if one were to bake a less-sweet, paleo brownie it might be similar to today's chocolate cherry muffin. 

The Muffin Revolution muffins also contained fruits and vegetables (apples, bananas, blueberries, cherries, zucchini) and eggs.

Today's Ah, Fudge Nuts! Cacao-Abunga Brownie bar was from Picky Bars (Bend, OR).

This energy bar with the long name was thoughtfully constructed with a short list of ingredients by three professional athletes Lauren Fleshman, Jesse Thomas and Steph Bruce.

The gluten-free bar had a brownie and nut aroma, and a pleasant slightly fudgey chocolate chew. It contained 7 grams of protein, and had a clean finish—with no artificial after-taste that occasionally accompany some protein and energy bars.

Today's Lucy's Brownie Crisp Triple Chocolate Gluten Free Crisps were from Westminster Cracker Company, Inc. (Rutland, VT).

These Brownie Crisps had an aroma and flavor that were part brownie and part chocolate cookie. They were made with 72% chocolate chunks, 46% chocolate chips, sugar and a gluten-free flour blend, and they were, as advertised, light and crunchy.

In addition to being gluten-free, these brownie crisps were certified vegan and kosher; and contained no peanuts, tree nuts, milk or eggs; however, they did contain soy, oats and fava.* They were also Non-GMO Certified.
