Today's Blackberry Ginger 73% Cacao Chocolate Bar (Batch #000143) from The Chocolate Conspiracy (Salt Lake City, UT) was made from bean-to-bar using cacao from Peru (Ucayali region).
Aroma notes included: subtle dark chocolate with warm spice (ginger) and berry notes
Texture: smooth, almost soft, silken texture, melt and mouthfeel. The honey, blackberry Ginger balsamic vinegar and ginger oil were completely incorporated into the dark chocolate. (There were no blackberry seeds or spice grit.)
Flavor notes were similar to the aroma notes only with a deeper dark chocolate flavor. This 73% cacao dark chocolate was relatively dark and dense in flavor, but also quite smooth. The honey provided a gentle sweetener that was not too sweet (thank you), and the subtly complex ginger and blackberry flavors were balanced and authentic.
