Welcome to the first day of Chocolate and Banana Theme Week.

Bananas pair well with chocolate in many different forms: fresh, frozen, dried, fried, incorporated into ice cream or pudding. There are many combinations to contemplate. And, natural accompaniments such as nuts, liqueurs and cream, add to the mix.

Clandestino (San Diego, CA) makes a Banana Bar with exactly 1 ingredient: fresh bananas. I tasted this bar first. The mahogony-colored, minimalist sports bar had very rich, concentrated banana flavor that would be good as a trail snack, or as part of a savory dish, such as a banana curry over rice. The company's target audience for the Banana Bar has been the surfing and sports community. (Bananas are a good source of potassium and magnesium.) Clandestino's "about us" statement on their website read as follows:

"We are undercover operatives who provide surfing candy to the community of surfing and endurance sports. Our constitution is to support the protection of the environment."

Clandestino also produces versions with milk or dark chocolate. Today, I tried a Banana Bar with Milk Chocolate. The smooth, thin milk chocolate coating helped balance out and mellow the strong banana flavors a bit without adulterating the condensed banana intensity.
