Today's "Cacao Selection - Dark Chocolate 74% Cacao Intense with Cacao from Peru" (bar) was from Alfred Ritter GmbH and Co. (Waldenbuch, Germany). 

The company has offered a wide variety of bars with different flavor inclusions for many years. In 2019, they launched a series of Ritter-Sport "Cacao Selection" (selected origin) bars made with just 3-4 ingredients.

Today's thick, dark "intense" bar consisted of squares that could be broken off, to create a preferred serving size. It was made with Peruvian cacao beans,* and had fairly deep dark, roasted cacao flavor. However, this chocolate was not blandly uniform. It also possessed some pleasingly complex cacao aroma and flavor nuances.

The aroma had hints of concentrated fruit (dried plums, apricots), and fleeting aromatic, green-floral-fruit cocoa notes (hibiscus/rose, light cherry, hot chocolate) in the tasting experience.

Ingredients: Chocolate liquor (made from cocoa beans from Peru), sugar, cocoa butter.

Today's SkinnyDipped Dark Chocolate Peanut Butter Almonds were distributed by Wild Things Snacks, Inc (Seattle, WA).  

This tempting snack blend of roasted almond, peanut butter and chocolate aroma and flavor. The whole roasted almonds at the core provided satisfying crunchy texture, and a thin layer of peanut butter and dark chocolate added a creamy, nutty flavor and finish. 

Crunchy, creamy, sweet (sugar and organic maple sugar) and salty (sea salt). Classic snack food formula. I would have preferred a little less sugar and salt, but that didn't stop me from eating an entire, resealable package over the course of a day. 

The founders (a mother and daughter team) are to be commended on creating a tasty snack that contained fewer unnatural ingredients, preservatives and sugary glazes than many traditional confectionery chocolate-covered offerings. And the ingredients were Non-GMO Project Verified. 

The nuts were the stars here, but I was able to taste the relatively thin ("skinny dipped") underlying chocolate layer. Some of the cocoa was alkalized (made less acidic with alkali) making the chocolate smoother, less bitter/acidic. This is a common process for high-volume hot cocoa and chocolate candy--making it more consistent and approachable to more buyers. However, I wondered what high-quality, unadulterated cocoa or (milder and pricier) heritage cocoa would have tasted like?

Today's SkinnyDipped Milk Chocolate Peanuts were distributed by Wild Things Snacks, Inc (Seattle, WA). 

The aroma of this snack was similar to a Nestle Butterfinger bar. It was a healthier version perhaps, but the smell summoned memories of addictively sweet and salty childhood chocolate and peanut confections nonetheless. This offering had "no shiny glaze or wax" and "no artificial colors or flavors," and came in a sealed, and resealable, package. 

Instead of a more processed, layered, crispy peanut center you may find in a candy bar, the peanut pieces at the heart of these treats were jumbo-sized (premium Virginia) peanuts--wholes and halves--dipped in a light coating of darker milk chocolate, sweetened with sugar and maple syrup, with a pinch of sea salt. 

These were a bit too sweet and salty for me, but there was more authentic peanut and chocolate flavors poking through (that were nice!), and these chocolate dipped peanuts were not quite as sugar-drenched as many similar alternatives.

Welcome to Day #6 of Chocolate and NOPQ Theme Week, featuring chocolate items with origins and flavor inclusions that start with the letters N, O, P and/or Q.

Today's Cacao Pulp in Heirloom Dark Chocolate (bar) was from Chocolate Naive and Produced by Mulate AEB (Zietelos, Lithuania). Chocolatier Domantas Uzpalis produces a line of thoughtfully created and skillfully executed chocolates, from bean-to-bar, in Eastern Lithuania.

This Cacao Pulp* bar had a polite, but complex, sweet cacao aroma with light fruit notes (strawberry milkshake, mango, cacao fruit pulp), and very faint, warm spice (gingerbread) and light green seed/nut (Theobroma bicolor/Jaguar cacao seeds) notes. About an hour after opening the sealed packaging (and tasting the first few bites), subtle caramel notes were also present.

The chocolate had a creamy, almost whipped rich chocolate mousse feel to it.

The flavor notes were consistent with the aroma notes listed above, with more direct, mildly acidic tropical fruit (cacao pulp/fruit, mango, was well as light pineapple, lychee, sweet red berry, ripe tangerine) flavors. This bar was crafted from prized "white" cacao beans known for their sophisticated, subtle fine flavor, and was very low in bitterness.

Chocolate Naive maker's tasting notes included: "champagne, citrus, lychee and mango," and the following description: "Slightly sweet with a little bit of fresh and bright champagne-like sourness, tingling the teeth and the back of the throat."

Ingredients: heirloom 70% chocolate (white cacao, organic cane sugar, organic cacao butter), dried cacao pulp. 

*Cacao pulp, also known as cacao fruit, baba, mucilage and cacao placenta, surrounds a core of almond-sized seeds (the cocoa beans used to make chocolate) at the center of the cacao pod/fruit. Whiteish in color, the pulp is sweet, slightly tart and fruity; and, depending on the cacao variety, the origin/terroir, and other factors, it might have citrus and floral notes. You may taste watermelon candy, mango, and/or a host of other tropical fruits. 

It is very tasty. Sadly, it's hard to find in the U.S. You may find it frozen. In Hawaii, look for the multi-colored cacao fruit/pods at roadside fruit stands and farmers markets.

Today's Dark Chocolate Almond cereal was from Kind LLC (New York City, NY).

This primarily flake-based cereal contained a blend of almonds, cocoa, oats, sorghum, quinoa and amaranth. The golden brown flakes appeared to have a very light cocoa powder coating, giving it a slightly richer color, that was accented with tiny, darker chocolate squares. 

The cereal flakes had a hearty texture and crunch, a slightly nutty cereal flavor, and were not too thick or thin. And the dark, semi-sweet chocolate pieces offered additional bursts of sweet, rich dark chocolate flavor.

The almonds, quinoa and oats contained a fair amount of protein. This gluten-free cereal contained 6 grams of protein in each 2/3 cup serving.

Today's Dark Chocolate Almond Oatmeal was from Kind LLC (New York City, NY). Kind has been most well-known up until now for its whole nut and fruit snack bars (with relatively short ingredients lists). Some contain chocolate. They've recently expanded into cereals.

This warm, creamy, smooth oatmeal was full of oaty goodness and two great, complementary flavor inclusions. The gluten-free, whole grain oats were blended with sliced, roasted/toasted almonds and small chunks of semi-sweet dark chocolate. 

The single-serving packets (6 to a box) made this a good choice for a portable and easy-to-make breakfast on the go. I added hot water, waited a minute, and stirred. The melted dark chocolate pieces gave this hot cereal a subtle, uniform, authentic chocolate flavor and a subtle ebony hue.

Each packet of oatmeal contained 5 grams of protein, and was high in fiber, making it filling enough to tide one over until lunch.

Today's ONE Oat Milk + Dark Chocolate 55% cocoa (bar) was from Endangered Species Chocolate, LLC (Indianapolis, IN). The company offers a wide selection of chocolate bars with flavor inclusions; and a portion of net profits from chocolate sales (10% from this bar) are set aside to help "save our wildlife."

Oats and oat milk (and coconut) have become popular non-dairy add-ins/alternatives for chocolate bars in recent years. Oats, rice and other cereal grains can also help tame or mellow certain bitter, or ultra-dark cacao flavor notes.

This relatively thick, well-tempered bar had an aroma with dark chocolate and oat cereal/granola notes. 

Their texture was uniform and relatively smooth, with a very faint, barely detectable graininess/dryness (from the finely ground oats I'm guessing).

The flavor was quite even, with dark, dense (Forastero cacao variety-like) and sweet chocolate notes (enhanced by a touch of vanilla); hints of oat cereal and malt; and a very faint, flicker of nuttiness (roasted hazelnut) in the finish. 

This bar tasted like it was made using a heavily roasted, deep, dark and bold cacao, which made it taste darker than most 55% bars usually taste. (It could easily pass as a 65% or even a 70% chocolate.) Both the bold cacao and higher sugar levels (than, say, a 70%+ chocolate) were somewhat muted by the oats.

Welcome to Day #2 of Chocolate and NOPQ Theme Week, in which chocolate items are featured with flavor inclusions and origins that begin with the letters of N, O, P and/or Q.

Today's organic, Cacao Nibs raw, vegan superfood snack squares were from Rowe of Venice (Los Angeles, CA).

Cacao nibs are the essence of cacao. They are pieces of cacao bean used to make chocolate. And as long as they are high-quality (well sorted) nibs, they are great a la carte too. They add true chocolate (brownie), almost nutty, and occasionally fruity/fermented flavor--as well as a soft, crunchy texture to any chocolate item. 

This was absolutely true for today's Cacao Nibs "superfood snack." The small squares were peppered with nibs, and offered a super-sized, substantial, satisfying tasting experience. (*The fact that they were made with organic ingredients was an added bonus.)

These squares had a rich, authentic cocoa and coconut aroma, and flavor. The nibs, together with cocoa powder, created divinely true cacao/chocolate flavor with very slight earth, cream and fermented flavor notes. 

*Ground almonds added protein. And nibs, nuts and coconut all contributed some natural plant fat/oils. A little fat and protein makes chocolate snacks more filling, and more satisfying than items that are high in sugars or carbohydrate content. For me, this holds true whether I'm on a walk in the hills, or sitting around indoors.

Last, but not least, these agave nectar-sweetened snack squares weren't too sweet (thank you!).

Welcome to Day #1 of Chocolate and NOPQ Theme Week, where chocolates with flavor inclusions and origins starting with the letters N, O, P and/or Q.

Today's Noir Orange Gastronomie (Baking) Chocolate 56% Cacao (block) was from Valrhona Chocolate. Varhona has been producing premium chocolate in the small village of Tain-l'Heritage, France, in a wine-growing region near Lyon, since 1922.*

This smooth, dark chocolate was perfumed with a balanced, natural orange aroma. A hint of vanilla added warmth, for eating and baking. And, happily, it was not too sweet for a 56% cacao chocolate (thank you!). 

When I started my Chocolate Banquet journey in 2006, I noticed I was gravitating more toward baking, i.e. less sweet, chocolate. There were fewer dark chocolate options back then. French chocolate had a certain cachet; and Valrhona chocolate was one of the first dark chocolates I remember really liking.

Today's orange-flavored French chocolate offered both a pleasing, high-end eating and baking/dessert experience. This would be great choice for chocolate mousse (regular or non-dairy versions), brownies (regular or gluten-free versions), melted over ice cream or in a smoothie, drizzled over a croissant or crepe, made into chocolate fondue, etc. 

The chocolate had a uniform undercurrent of rich, velvety, sophisticated, true chocolate (dark chocolate fudge brownie) from start to finish. The orange evolved during the tasting experience, from neroli (orange blossom)-like scent, to a slightly tart-sweet, true orange citrus flavor finish.

Ingredients: "sugar, cocoa beans, cocoa butter, emulsifier (soy lecithin), orange flavor, natural vanilla extract."

Allergen information: "This product might contain traces of nuts, milk and egg proteins, gluten and peanut."

*I remember as a child growing up in the U.S. in the 1900s, Valrhona chocolates, and French chocolates in general, were spoken about with great reverence.

My young siblings and I were chocolate monkeys back then. I can remember climbing up on the counter to investigate baking chocolate in the cupboards above. Most of the American baking chocolates were too bitter. But, Swiss-processed (alkalized) varieties were more approachable. A few pieces of the dark stuff would fuel tree-climbing, bicycling and swimming adventures for hours in the summers. 

And, for outdoor sun protection and trips to the beach, squares of ivory-colored cocoa butter were rubbed on and applied. The smell was heavenly, even if these 100% cacao fat squares weren't particularly edible.

Welcome to Day #10 of Chocolate and Madagascar Theme Week.

Today's Millot Farm 80% Dark Chocolate Sambirano Valley, Madagascar (bar) was from Chocolarder (Falmouth, Cornwall, United Kingdom).

Chocolarder crafts single origin bars, from bean-to-bar, using single estate/plantation cacao(s) from countries including Venezuela, Java, Madagascar, Peru and the Dominican Republic. And they also offer small batch bars with intriguing flavor inclusions (gorse flower, cinnamon toasted cacao nibs, Cornish honeycomb), as well as confections.

The company's Millot Farm Madagascar 80% chocolate bar today was made using cacao grown on a Malagasy farm (established in 1904, that also produces spices and essential oils) located in the Sambirano Valley in northwest Madagascar, a region known for great cacao, like today's "fine flavour" Trinitario hybrid cacao strain that originated in Java.

This bar had aroma notes that included: deep dark chocolate, green sencha (roasted brown rice) tea, wood, brown sugar and very faint spice.

This 80% cacao chocolate was made with less sugar (less than a 70% cacao bar, that might be 30% sugar). It wasn't too sweet (thank you)!* 

I applaud the chocolate makers this week who were bold enough to go with 80%+ cacao Madagascar bars. Great choice for this origin. (Note: Chocolarder also offers a 74% Ottange Farm, Madagascar bar if you're looking for an interesting side-by-side tasting pairing.)

The first bite of this two-ingredient bar was full of pleasing dark chocolate flavor. I enjoyed this chocolate's light, balanced fruit (golden raisin, and aromatic, sweet white wine grape) flavor notes. There was also a faint, fleeting tart sweet stone/red fruit astringency, and a balanced, very faint, woodsy earth tone/note. 
 
The makers' tasting notes read as follows: "Bursting with tart cherry and sweet raisin flavours with hints of sandalwood."

Ingredients: cacao beans, unrefined raw sugar
Allergen information: "Made in a factory that also handles tree nuts."

*Why does the sugar content matter? Sugar can amplify or obscure/overpower certain cacao flavors in chocolate. Madagascar-grown cacao is known for its very bright, tart-sweet fruit (typically citrus and berry) flavors that blossom with, or soon after, the first bite. (Now, think fresh berry lemonade with a little white grape and maybe some orange, grapefruit, peach and cherry juices thrown in. And imagine adding 30% sugar. Do your teeth hurt yet?). 

I'm here for the cacao, and not the sugar; and I love experiencing (Sambirano Valley's) Malagasy cacao fruit notes with a bit less added sugar. Anyone who has slowly savored the flavors in a ripe mango, or peach, or has enjoyed the fruit pulp that surrounds cacao seeds/beans, will know what I mean.

Welcome to Day #9 of Chocolate and Madagascar Theme Week.

Today's Single Origin 70% Mork (Dark) Madagascar small batch chocolate (bar) was handcrafted, from bean-to-bar, in (Hardangerfjord) Norway by the maker(s) at Fjak Sjokolade. 

The organic cacao used to make this bar was from Akesson's Bejofo Estate in the Sambirano Valley in northwestern Madagascar.

A wealth of enjoyable aroma notes over a period of minutes included: dried fruits: (fig, date, raisins), fleeting fermentation, sweet cocoa, whipped cream, and spice cake.

The melt and texture: smooth, even, thick, and almost creamy with a light, tart astringency. (My teeth also felt the presence of citric/citrus acid, tannins* and sugar in many of this week's fruity Madagascar chocolate bars.) 

Flavor notes included satisfying chocolate flavor, a blend of acidic fruits (sweet lemon, sweet cranberry, cacao pulp, faint sweet-tart melon, tart cherry), and subtle hints of cream and earth. Late in the post-finish there was a brief, fleeting sparkle of dried plum and goji berry notes. 

All these tart sweet fruit notes made this bar taste more like a sweeter, 60% or 65% cacao, bar.  Again, a relatively common experience with Madagascar bars. 

Fjak maker's tasting notes read as follows: "Bold dark chocolate with rich notes of black cherry and citrus."

Ingredients: "Cocoa beans, cane sugar and cocoa butter;" Allergen notes: "Processed in a facility that handles nuts, dairy and gluten"

*Tannins are polyphenolic compounds that have health properties; but they can also be bitter and astringent (dry mouthfeel, slightly grainy coating on teeth), and can cause an upset stomach if consumed in excess. Tea, coffee, wine, chocolate, fruits and berries (unripe bananas and  persimmons, grapes, cranberries, blueberries), and certain leaves and spices, all contain relatively high levels of tannins.

Today's Madagascar 70% bar was from Christopher Elbow Chocolates (Saint Louis, MO).

The organic cacao used to make this bar was from the Akesson Estate in the Sambirano Valley in northwest Madagascar, known for great cacao. 

The initial aroma: sweet white, aromatic dessert wine (Gewurztraminer) and very faint maple syrup, followed by a slight shift toward brown sugar and fruit notes. 

The flavor notes were more complex. Traces of the (above mentioned) sweet aroma notes bloomed into tart sweet fruit (white grapes, nectarine, tart cherry, faint citrus), chocolate, faint earth and cream. There was a slight (persimmon) astringency; and a honeyed white grape/fruit note lightly lingered into the finish.

Welcome to Day #7 of Chocolate and Madagascar Theme Week.

Today's Madagascar Sambirano Valley 84% Cocoa (bar) was made by Firetree Chocolate Limited (Peterborough, U.K.). The company offers a line of single origin bars made with cacao directly traded (with farmers).

Volcanoes and chocolate?
Firetree describes their lineup as "rich volcanic chocolates." Several of their bars are crafted from cacao grown on South Pacific islands that are part of (or are close to) the "ring of fire," known for its volcanic and seismic activity. (This "ring" also extends over to the Americas bordering the Pacific and Nazca plates, and near the origins of cacao.)

How do volcanoes relate to chocolate? When absorbed over time into soils, volcanic lava, ash and debris can contribute key plant nutrients like potassium, phosphorus, magnesium and iron--needed to cultivate crops and trees, including cacao trees. (Some of the best cacao and coffee we enjoy are grown in volcanic soils.)

Historically, volcanic activity has existed on every continent. Madagascar, a large island nation off eastern Africa has volcano-related enriched soils, from activity 90 million years ago. 

Back to today's bar...

Many of the Madagascar chocolate bars featured this week have had delightfully complex aromas that shift and shimmer a bit as well--including today's Firetree bar.

The first whiff of today's bar had notes of aromatic red berry (musk* strawberry, raspberry) with a fleeting hint of tropical fruit (passion fruit). A few minutes later there was a tiny shift to fermented red berry (tart-sweet strawberry-raspberry fruit vinegar). And after a few more minutes, an earthy red fruit note, followed by true chocolate (raspberry + strawberry fudge brownie) notes. What a ride! Thank you.

Chocolate lovers' brains have learned to link the smell of chocolate with sugar. Ultra-dark bars (over 80% cacao and with "only" 20% sugar or less) often retain an aroma with implied sweetness, causing the brain to anticipate sugar in the first bite. Some chocolate customers suffer a disconnect when they taste darker chocolates for the first time. Some want their "missing" sugar back, especially if they're new to 80%+ bars.

So, with the above facts in mind, I am extra grateful to Firetree for making an 84% ultra-dark bar using this bright Madagascan cacao. The cacao's natural brightness and fruitiness made this a balanced treasure chest; the flavors were almost as fruity and fun as the aroma.

The flavors mirrored the layered aroma notes above, and included deep, rich and faintly earthy dark chocolate, and ripe, tart-sweet raspberry and faint strawberry. The finish lingered a bit, with the red fruit notes heading a bit more toward cherry. I highly recommend holding a piece of this chocolate in your mouth for awhile, to enjoy the warm, blooming bouquet of naturally tart-sweet fruit flavors.

*The musk strawberry (Fragaria moschata) is native to Europe. It is also known as bubbleberry, hautbois strawberry (France), and fragola di bosco (Italy). This aromatic strawberry (rarely seen in the U.S.) has notes of strawberry, pineapple and raspberry. Its flavor has also been described as "naturally flavored bubble gum."

Today's gluten-free, vegan Madagascar 70% Sambirano (bar) was from Solstice Chocolate, Inc. (Salt Lake City, UT).

The cacao that the Solstice team used to make this bar came from the Bejofo Estate, an organic cacao plantation in the Sambirano Valley in northwest Madagascar. The maker's description: "...Cacao grown here has notes of citrus and berries, which gives our chocolate its bright, fruity quality." 

This region and this cacao flavor profile will sound familiar to those who have been reading about other Madagascar bars featured this week.

Today's three-ingredient* Solstice dark bar had an aroma with bright, warm chocolate notes: grape/raisin, brown sugar/light caramel, rum when the sealed package was first opened. (After being opened for an hour, there was a slight shift that included mild red berry (goji berry) and light, fragrant oolong tea notes.)

The texture was smooth, with an almost creamy mouthfeel. 

The flavor overall was full of the expected tart, tangy-sweet, acidic fruit (Vitamin C) brightness that one often finds with Madagascar single origin bars. The sunny, natural sweetness lingered, along with cream and very faint earth notes, into the finish. 

As noted with some other 70%+ cacao Madagascar bars this week, this characteristic bright,  fruity sweet, warm flavor profile may fool you into thinking you're eating a chocolate with more sugar (that is, a 60% or 65% cacao bar). I even found myself double checking the packaging. (Yes, it did contain 70% cacao.)

Welcome to Day #5 of Chocolate and Madagascar Theme Week.

Today's Madagascar 75% Cacao Fine Selection (bar) was made in Italy by Slitti Cacao Pregiati (Monsummano Terme, Tuscany, Italy).

Most dark chocolate bars I've tasted from Italy (and other countries) have uniform, almost bland, roasted dark chocolate flavor. This is the understandable result when taking high volumes of different cacao(s) from different places (often West Africa), with the goal of blending them into one consistent flavor profile over time. Some bars have some added vanilla, adding a little lift. But, the bars are fairly predictable. So I was curious to see what this single origin Madagascar bar might taste like.

This gluten-free chocolate began with an aroma of uniform baked fudge brownie and chocolate cake...what I'd normally expect.

But then this classic chocolate aroma was quickly joined by some welcome complexity: balanced fermenting cacao fruit (sweet vinegar, brown sugar, fruit (peaches, plums, apricots, cacao pulp)); warm spice (cinnamon); very faint, fleeting green floral (imagined vanilla) and baked sweet bread notes. 

The shift--from a scent with uniform chocolate brownie/chocolate cake to one with more noticeable fruit nuances--evolved over a minute or two, after the inner, sealed packaging was opened. 

The fruit notes were within the range I associate with Madagascar (Sambirano Valley) cacao-based chocolate(s). (Madagascar cacao is often described as having tart-sweet citrus fruit and berry notes, but may also include concentrated/dried stone fruits such as peach, nectarine, plum, and apricot notes, depending on the cacao varieties and fermentation techniques used.)

In fact, I found myself anticipating tart fruit notes the minute I opened this dark bar, so perhaps I was bound to find them. (This is why blind, side-by-side chocolate tastings can be more enlightening; they help reduce biases we all have--even though these same expectations, based on memories, also make us smile as we encounter "old friends" in tasting experiences.)

The flavor of this bar was uniform, roasted, smooth dark chocolate, with a touch of fruit acidity--initially less citrus (orange/tangerine) and more stewed stone fruits mentioned above with a few red currants popped in for good measure. On the third time I re-tasted this bar there was also a very faint, fleeting dark chocolate + spice/herb note (caraway, rye bread) note.

The chocolate was low in bitterness. It was relatively sweet for a 75% cacao chocolate; but some of that perceived sweetness likely came from natural fruit flavor from the cacao itself. And this chocolate had a clean, subtle chocolate-y finish.

Welcome to Day #4 of Chocolate and Madagascar Theme Week.

Today's Single Origin Madagascar Sambirano Valley 2016 (Harvest) ("Batch 22591") 70% Pure Dark (bar) was made by Nuance Chocolate Company (Fort Collins, CO). 

Nuance produces a variety of small-batch, bean-to-bar chocolates (bars and confections). This single origin dark chocolate was made using a Trinitario (variety of) cacao grown in the lush Sambirano Valley in northwest Madagascar.

The aroma, flavor--and texture--of this chocolate all had a balanced smoothness and sophistication that even Goldilocks* would be pleased with. There were no traces of dense darkness, earthiness or spiky surprises in this bar. It had a natural tart sweetness, but was not overly sour or bitter. It had a clean, crisp fruit/peaches and cream finish. It was just right.*

The chocolate had a "warm," true chocolate (hot chocolate, drinking chocolate) aroma and flavor, and an almost creamy, smooth texture. Most notably, it had a gentle wave of bright, tart-sweet fruit acidity (a blend of ripe, acidic citrus, faint ripe red berry, and concentrated stone fruits (nectarine, plum, apricot)). These acidic fruit flavor notes are very characteristic of Madagascan cacao.**

Nuance Chocolate's tasting notes read as follows: "Fascinating and sophisticated layers of flavor, with a long and satisfying finish. Brightly acidic fruit, in particular grapefruit and raspberry, with a backdrop of softer flavors like plum and apricot."

*Goldilocks was a young girl in a fairy tale (or in an earlier version of the story in Europe, an older woman), who entered a home to try out the occupants' (a family of bears') furniture and porridge. During her larcenous visit, Goldilocks located items that were "just right" (not too hard, not too soft, not too hot, not too cold, etc.) that were to her liking. 

I do not advocate breaking into a bear's home. You're more likely to find grubs and honey (and trouble) there than chocolate anyway. 

Bears will eat chocolate but, like dogs, eating too much can make them quite ill. So, politely decline if they ask you for some. Humans can process the plant alkaloid theobromine (and smaller amount of caffeine), found in cocoa and chocolate; but many other animals cannot.

**These lovely citrus and other fruit flavors reminded me of cacao fruit. If you are traveling in Hawaii (the only U.S. state where you'll likely find cacao growing) or other tropical country within 20 degrees latitude of the Equator, do look for opportunities to try cacao, specifically the pulpy white cacao fruit.

If we could transport ourselves to the plantation where the Trinitario cacao used to make this bar was grown, and we broke open one of the cacao pods (fruits) to taste the ivory-colored fruit pulp surrounding the seeds (cacao beans), we'd find that the fruit has its own tart sweet fruit flavor that's a blend of many of the fruits referenced in today's description. 

Cacao fruit is bright, tart-sweet and delicious. The flavor(s) vary in intensity depending on the cacao variety and where it's growing. Citrus, watermelon, various tropical fruits (mango, mangosteen, pineapple), and many other fruit and floral descriptors, have been used to describe this exotic fruit that begins to ferment fairly quickly once harvested. 

Madagascan cacao seems to capture some of this cacao fruit essence better than some other origins.

Welcome to Day #3 of Chocolate and Madagascar Theme Week.

Today's 70% Dark Mava Ottange Madagascar (bar) was crafted by Fossa Chocolate in Singapore.

Fossa is known for small-batch chocolate(s) with different tea inclusions. (Their oolong tea infused bars are especially nice.) Almost all their offerings I've sampled have had a subtle sophistication about them.*

This chocolate was made using cacao from the Sambirano Valley area in northwestern Madagascar, a region known for its cacao. Most of the Madagascar bars this week share this same origin.**

The cacao beans in this bar were from the MAVA Plantation--that encompasses eight different farms, including the Ottange Farm.

The aroma of this vegan, gluten-free bar had a softly sweet, slightly fragrant (hot cocoa, hot drinking chocolate) with faint fruit, floral (neroli), spice, and almost undetectable green notes. 

The chocolate had a uniformly smooth melt and texture and was made using cacao from the MAVA Plantation that contains several different farms, including the Ottange Farm.

The Dance of the Seven Citrus Veils
The taste fulfilled on the promise hinted at in the aroma notes. It was as if I "heard" a dance party happening, on the other side of a set of large wooden doors. And, after the first bite of this chocolate, those doors were suddenly thrown open and I was invited to join the party. 

My senses were suddenly illuminated with a sweet-tart candied citrus peel brightness. Flavors shimmered and shifted around me within a bright hemisphere of light. These flavors were mostly within the citrus spectrum, including ripe tangerine, sweet orange, tangelo, Mandarin orange, Valencia orange, Navel orange and kumquat--and pure sunshine and sugar. 

It was hard to pin down the other more subtle flavor elements in the midst of the dance of a seven citrus veils. But they included a faint flickering of forest/earth and chocolate malted milk powder.

All this fun, from only two-ingredients: cacao and cane sugar. Except for the bright citrus headlights, this is one of the most civilized, and sweetest, Madagascar ride I've taken in a few years. The 70% cacao landed closer to a 60-65% cacao bar on my palette, in part due to its bright sweetness.

*Yes, that included Fossa's limited edition "Duck Shit" Dancong Tea Chocolate bar that had a faint, but balanced, grassy flavor note that recalled a marshy area where you might see ducks dabbling. (No actual duck contributions were involved in the making of this bar; so there's no need to be squeamish.)

**Decades ago, cacao from Bertil Akesson's family plantation launched many of the first Madagascar craft chocolate bars in the U.S. Akesson became one of the first well-respected suppliers to provision the new wave of new bean-to-bar makers with single origin beans. 

Other "made in country" bars/chocolates in Madagascar worthy of note include those from Chocolaterie Robert SA.

Beyond Good (formerly Madecasse), a cocoa and vanilla company with direct ties to Madagascar (based in Brooklyn, NY), was started in 2006 by two Peace Corps volunteers. Madecasse chocolate bars were some of the first "Madagascar" bars I can remember sampling when I started Chocolate Banquet in that same year.

Today's Mangaro Noir 65% Madagascar (bar) was from Michel Cluizel (Damville, France). This chocolate was made using cacao from a single farm (Mangaro Plantation) located in northwest Madagascar, in the lush Sambirano River valley--a region known for its high-quality cacao (which is sometimes referred to as "green gold").

This chocolate had a complex and appealing aroma, especially for a 65% (sub-70%) cacao bar. Aroma notes included: dark chocolate, light honey, fruit and faint/fleeting green (tea, very faint chicle/rubber, forest) and light earth and roasted notes. 

The chocolate had a smooth melt and texture with little to no astringency.

Flavor notes included earthy dark chocolate, faint, fleeting (balanced) umami/savory fermented, and faint fruit (ripe citrus, tart sweet berry) and warm spice. There was a friendly amount of well-managed earthiness; that is, there were no jarring "dirt" or "loamy" spikes. 

A very subtle hint of authentic, slightly earthy vanilla pod rounded out this bouquet of flavors and added a bit of warmth and charm.

The finish was relatively short and clean, with only a trace of smooth, sweet chocolate remaining by the very end.

Welcome to Day #7 of Chocolate and JKLM Theme Week, where chocolate items with flavor inclusions and origins beginning with the letters J, K, L and/or M are being featured. Today also marked the first day of Chocolate and Madagascar Theme Week.

Today's Organic 92% Single Origin Madagascar Dark Chocolate (bar) was from Trader Joe's (Monrovia, CA). This 92% cacao chocolate was made, from bean-to-bar, in Madagascar. Heirloom cacao beans used to make this bar "in country" were grown in remote tropical forests, and "directly sourced from farmer-run, organic cooperatives."

The resulting chocolate was packed with very deep, dark, complex aroma and flavor, and was a great example of a balanced, naturally savory (umami) bar, with a minimum of sugar. 

The aroma had complex, very dark chocolate, and fleeting savory/umami notes (baked bread, brownie, Boston brown bread (with molasses and raisins), baked potato/roasted root vegetables) and very faint leather and clay/earth. 

In the heart of the tasting curve there was a relatively high degree of fruit acidity: bright, tart, bittersweet citrus fruit notes. Think orange juice, orange marmalade, and/or dark, aged and mellowed balsamic vinegar infused with tangerine, plum and berries, or charcoal roasted holiday citrus fruitcake. (Madagascar cacao is known for its citrus and red berry notes.)

This was a hearty meal of a bar. Toward the end, the robust dark flavor(s) converged into a relatively long finish, reminiscent of an ultra-dark, lightly salted, complex, fudge brownie with caramel. (Note: There was no salt, and very little sugar, in this chocolate.)

I liked this bar, especially when it had been unwrapped and left to breathe for just a few minutes). Left out too long, it may lose some of the more complex and delicate flavors. And you'll be left with roasted and acid notes that are quite bold, but without some of the finer flavors that make it more balanced and approachable for a 90%+ cacao chocolate.

I plan to add it to future tasting flights to allow people to experience its unique attributes. Thank you to the farmers and processors for growing this cacao and making skillful fermentation, roasting and conching/grinding choices that, together, resulted in such an interesting bar. And thank you to Trader Joe's for sourcing some great, high-quality chocolates over time.

Today's Oat Latte (with) Cacao was from Elmhurst Milked, LLC (Elma, NY). The company offers plant-based milks with no added "fillers, gums or additives."
 
Today's Oat Latte possessed a rich mocha aroma--smooth but robust (flash brew Arabica) coffee and dark chocolate syrup notes with rich texture and flavor. (It was also not as sweet as the aroma seemed to indicate, which was to my liking.) This brew had a lush, oat-milk enabled liquid velvet mouthfeel. And there were no added gums or emulsifiers in this vegan, dairy-free drink. (thank you!).

Maca, Mocha, Lucuma, Mushroom Latte 
Just for fun, I also mixed a little bit of this beverage with an Essential Living Foods Maca, Lacuma and Mushroom powdered mix. The dry blend had faint caramel and light vanilla angel food cake notes that brightened up and complemented the darker coffee and cacao in today's Cacao Oat Latte beverage. A few too many flavors; but it was fun to try.

Today's Kilimamwenza Congo Dark Chocolate 70% (bar) was crafted by Domantus Uzpalis at Chocolate Naive (Zietelos, Lithuania).*

African cacao cannot be easily summarized. But when people hear African cacao, what comes to mind is typically bold, deep, dark forastero cacao beans grown in a few countries in West Africa and chocolate made using a relatively heavy roast profile. 

Today's award-winning dark chocolate was a relatively eloquent, soft-spoken entree, made with a lighter Trinitario-Forastero hybrid variety of cacao grown on Kilimamwenza farm in Mambasa, Ituri province, located in the Democratic Republic of Congo, in central, sub-Saharan Africa.

This chocolate had a smooth but relatively complex dark chocolate aroma--with light, balanced, fermentation and umami (leather), and very faint fruit and green-floral notes.

The melt and initial texture were fairy uniform and creamy. A mild astringency in the finish led to a mouthfeel with a slight dryness/graininess. This astringency comes from polyphenols and tannins (as in unripe fruits (bananas, persimmons, olives, avocado), tea or red wine). 

While polyphenols have health benefits they also need to be balanced for a positive tasting experience. Heating/roasting/processing tends to diminish their presence.

The lightly roasted (110 degrees C./230 degrees F.) dark chocolate flavor was smooth, with a touch of honey-like sweetness, and a light, lingering finish with delicate green-floral, honey and fruit notes. **Sometimes a chocolate maker has a rare, time-limited opportunity to purchase a small amount (a micro-lot) of cacao beans from a certain farm, origin and/or harvest year. This Chocolate Naive Kilimamwenza nano-lot, micro-batch bar was born from such an opportunity. 

Often there are small cacao fermenteries and co-ops involved in small, high-quality batches of bean output as well. This is not dissimilar to coffee projects and co-ops (usually not far from where cacao grows) in equatorial regions. (Chocolate Naive's chief chocolate maker does mention he was inspired by an individual(s) who helped local coffee co-ops export beans and to break into the specialty coffee market.) Who knows how many other pockets of great cacao in the massive continent of Africa are out there, waiting to be discovered?

Welcome to Day #4 of Chocolate and JKLM Theme Week, where I'm featuring chocolates with flavor inclusions and origins that start with the letters J, K, L and/or M.

Today's Mekong Kumquat 68% Tien Giang Single Origin Vietnamese Chocolate (bar) was crafted by Marou Faiseurs de Chocolate--chocolate makers in Ho Chi Minh City (formerly Saigon), Vietnam.*

The kumquat** is a small, orange, "inside out" citrus fruit that can be eaten whole, peel and all. In fact, the most edible part is actually the sweet rind. The inside contains a relatively small amount of tart, acidic fruit and seeds.

This bar had an aroma with smooth dark chocolate, bright sweet-tart apricot and aromatic citrus, light spice, very faint fleeting earth, and very, very faint malt/cereal notes. 

It had an even, smooth, dark chocolate melt, texture and flavor. (There were no detectable textural bits of fruit.) Fruit flavor and citrus fruit acidity were uniformly present throughout the tasting experience, although these elements shifted in an almost magical way from bite to bite.

Do savor this chocolate slowly. The kumquat fruit took a while to bloom from "just" fruit-forward acidity to fully-formed kumquat flavor. Notes of sweet orange, dried apricot, neroli (orange blossom), aromatic lemon, and various fruit-floral qualities appeared and disappeared. And this elusive dance persisted during the full hour when this chocolate was tasted and re-tasted.

The maker's tasting notes read as follows: "From the lush orchards of Tien Giang province, this small citrus called kumquat adds a bright sweetness to the spicy notes of our well-known Tien Giang chocolate."

**Kumquats (Citrus japonica, formerly genus Fortunella) originated in Eastern Asia. The small, oblong fruits can be eaten whole, sliced and included in salads and as garnishes,  and/or boiled with sugar and used in drinks, desserts, marmalades, jams and jellies.

Kumquats are cultivated in Southeast China and other Asian countries (e.g., Japan, Taiwan), and in the mighty (and agriculturally productive) Mekong River delta area in southern Vietnam. Kumquats have also been hybridized with other citrus fruits, such as the mandarin orange. Calamansi/calamondins include wild kumquat hybrids with Philippine limes/lemons (Citrofortunella microcarpa). And, Meiwa kumquat + Satsuma mandarin orange hybrids are known as "Orangequats".

And if you visit Vietnam during the Lunar New Year, you will see these small evergreen, citrus trees in pots, loaded with small orange fruits, everywhere. They'll be strapped to the back of motor scooters and small flatbed trucks, whizzing by you on big city streets.

Tien Giang province, located south of Ho Chi Minh City, is one of 13 provinces associated with the Mekong River delta area in southern Vietnam and where today's cacao was grown. The more temperate/tropical south is where fruits (especially bananas), coffee, coconuts and cacao are cultivated.

Welcome to Day #3 of Chocolate and JKLM Theme Week, where chocolate items with flavors and origins starting with the letters J, K, L and/or M are being featured. Somewhat surprisingly, I found a lot of "K" entries this week.

Today's Essential Living Foods* Roasted and Salted Keto Crunch Low Carb Trail Mix was from Essential Living Foods (Torrance, CA), distributed by Terrafertil US, LLC.

I have never been on a ketogenic** diet; however, I've come to prefer less sugar over time. So I found this low carbohydrate, Keto Certified mix very appealing. It was a little sweet, a little salty, yet so different (and more satiating over a period of hours) than most highly sweetened, high-carbohydrate (often granola-based) trail mixes. 

The mix provided lots of satisfying crunchy texture with every element, toasted coconut pieces, cocoa nibs and roasted pumpkin and sunflower kernels (seeds). The cacao nibs conveyed the essence of cacao--unsweetened, slightly nutty, dark chocolate flavor.

The refreshing lack of sweetness also made it easier to taste and savor the individual elements that made up this mix. I enjoyed this as a stand-alone snack or breakfast, and even as a topping for my (non-keto) oatmeal. 

Ingredients: Organic toasted coconut chips, organic cacao nibs, organic roasted pumpkin kernels (organic pumpkin kernels, salt), organic roasted sunflower kernels (organic sunflower kernels, salt).
 
*Ecuador based snack-food company, Terrafertil Nature's Heart/Terrafertil Group, acquired the assets of Los Angeles-based Essential Living Foods (an organic, vegan, superfood brand) in 2017. In 2018, Nestle expanded their organic/plant-based offerings by acquiring a majority stake in Terrafertil (Nature's Heart and Essential Living Foods brands).

**Keto is short for ketogenic, as in a ketogenic diet that is low in carbohydrates and relatively high in fat and protein that results in the body switching to/burning more fats vs. sugars for energy. Ketogenic diets have become popular for weight loss; but when not taken to an extreme, cutting carbs/sugars in combination with eating more whole (less processed) foods can provide other benefits.

Every few years I've gone on an alphabetic chocolate treasure hunt. This may be my last year to do so, as there are many other interesting chocolate themes to pursue. 

Today's Smooth Organic 52% Milk Chocolate with Key Lime (bar) from Endangered Species Chocolate (Indianapolis, IN) has been waiting for years in my chocolate vault for its turn. What better K + L flavor item than Key Lime?*

Chocolate and citrus pairings typically yield refreshing and delightfully tart-sweet results. And today's smooth, organic dark 52% cocoa milk chocolate suffused with natural key lime flavor was no exception. As billed, the texture was smooth, almost creamy. A hint of vanilla added a bit of floral warmth and paired nicely with the chocolate and the lime.

Ingredients: Organic milk chocolate (organic cane sugar, organic whole milk, organic cocoa butter, organic chocolate liquor, organic soy lecithin (as an emulsifier), and organic vanilla), Key Lime Oil.

*Smaller and more thin-skinned than Tahitian or Persian limes, Key Limes (aka Mexican limes) are often grown in Florida in the U.S. When ripe they can be yellow-green. They are aromatic (almost floral) and tart-sweet, with relatively low bitterness, and make a great flavoring for desserts (Key Lime pie), beverages (cocktails, limeades) and other items, including flavor inclusions in (or part of fillings or ganaches for) chocolate bars and confections.

Welcome to Day #9 (last day) of Chocolate and Jamaica Theme Week; and Day #1 of Chocolate and JKLM Theme Week, in which I feature chocolate items with flavor additions and/or origins that begin with the letters of the alphabet. This week those letters are: J, K, L and/or M.

Today's 80% Cacao Bachelors Hall (Jamaica) bar was made by Nancy Nadel owner and chief chocolate maker at The Oakland Chocolate Company (Oakland, CA). 

Nadel makes single origin bars and confections, all from Jamaican grown cacao--from a single parish (Saint Thomas) and estate/farm (Bachelors Hall Estate).

The aroma of today's 80% cacao Jamaica bar had a true chocolate (fudge brownie) aroma, with very faint and balanced umami, fermented cacao, and pleasing earth notes. 

The flavor notes were very similar with a hint of cream, and red fruit (mild, ripe cherry), fleeting coffee and spice. (Note: there was no cream or dairy in this bar.) It had balanced, relatively low bitterness for an ultra-dark chocolate.

Almost all the Jamaica bars featured in the past week, from different chocolate makers, used cacao from the same farm (Bachelors Hall Estate). So any differences in aroma and/or flavor were more likely to be due to a maker's choices, such as different cacao bean inspection (micro-sorting), roast profiles or conch times, or even aging or packaging.

Today's bar was a great example of all the tasting notes possible with this Jamaican cacao origin. Luscious true chocolate brownie flavor--with a little earth, fruit, spice, fermented cacao, umami and cream, but not too much (or too little) of any one element.

*Jamaica is located at approximately 18 degrees North latitude -- well within the cacao growing belt (0 to 20 degrees north and/or south of the Equator). 

Most chocolate makers today are using Jamaican-grown cacao beans from the country's largest cacao farm in St. Thomas Parish, in Surrey County, in Eastern Jamaica -- Bachelor's Hall Estate, east of Kingston. Although where you find coffee farms in Jamaica, you may also see a few cacao trees as well. The two crops have similar growing requirements.

Welcome to Day #8 of Chocolate and Jamaica Theme Week.

Today's Caramel Bar was made by Nancy Nadel owner and chief chocolate maker at The Oakland Chocolate Company (Oakland, CA). Nadel makes reasonably priced, high-end craft chocolate bars and confections, from scratch, using cacao grown in Jamaica.

This snack-sized, filled, dark chocolate Caramel Bar was a very satisfying take on a traditional dark chocolate and caramel filled confection. A thick covering of flavorful, rich dark chocolate elevated this bar to the next level. 

When I started Chocolate Banquet in 2006, most chocolate covered caramels had fragile, bland and sweet chocolate shells that collapsed (into a sweet, sticky mess) if not handled very carefully. The emphasis was on the sugar and not on the chocolate. 

This Oakland Chocolate Co. bar was an artful melding of single origin (Bachelors Hall Estate (farm), Jamaica) dark chocolate (with fudge brownie aroma and flavor notes) and soft, rich, buttery caramel--made with real cream and butter.*

The addition of the coconut palm sugar used to make the caramel filling increased flavor depth and helped reduce the sugar buzz** a little (thank you Nancy!). Yet, there was enough sweetness to be appealing to caramel fans as well.

Today's Caramel Bar was a satisfying and enjoyable high-end take on a confectionery classic.

*Ingredients: "Cocoa mass (direct source from farmer Desmond Jadusingh, Bachelors Hall, Jamaica), organic cane sugar, cocoa butter, cream (milk), butter, organic coconut palm sugar, rice syrup, vanilla, sea salt." 

** Coconut palm sugar is lower on the glycemic index than processed cane sugar. I noticed I wasn't experiencing as rapid a rise in blood sugar, i.e. a "hard" sugar buzz, with this sweetener many years ago when I started sampling chocolates made with coconut palm sugar. And as long as a sweetener (of any sort) doesn't interfere with tasting the chocolate, I am all for that. The stimulants in cacao (primarily theobromine, and a bit of caffeine) in chocolate are enough for me. 

Coconut palm sugar starts with people climbing high up in palm trees to gather coconut flower sap/nectar that is then made into the sugar we see in stores and in chocolates. After watching people collect this nectar in SE Asia, I have a great deal of respect for those engaged in this work.

Welcome to Day #7 of Chocolate and Jamaica Theme Week.

Today's Raspberry Bar was made by Nancy Nadel owner and chief chocolate maker at The Oakland Chocolate Company (Oakland, CA). 

Nadel has been making her bean-to-bar (and bean-to-bonbon chocolates) from cacao beans grown in one country, Jamaica, for many years now. She was also the first woman craft chocolate maker I met in the U.S. when I started Chocolate Banquet in 2006.

She obtained cacao to make the three bars featured this week from Bachelors Hall Farm, Saint Thomas Parish, in eastern Jamaica, and practices Direct Trade. She knows the cacao farmer (Desmond Jadusingh at Bachelors Hall Estate) personally. 

Raspberries are one of my favorite items to pair with dark chocolate. This small (filled) Raspberry Bar was packed with great aroma (true (brownie) dark chocolate, red raspberries).

The dark chocolate had smooth, almost creamy, substantial texture and the same rich, true chocolate (brownie) flavor as the aroma, with faint earth and red fruit notes. 

The tart-sweet raspberry filling wasn't overly sweet or tart (thank you), allowing authentic fresh/ripe berry flavor to shine through. The filling contained real raspberries (with real seeds) that were delicately firmed into a soft jelly with judicious use of pectin and lemon juice.

Welcome to Day #6 of Chocolate and Jamaica Theme Week.

Today's Limited Edition Jamaica Bachelor's Hall Estate 90% Limited Edition (bar) was from Pump Street Chocolate (Suffolk, England). The company produces a range of baked goods, and artisan chocolates. 

This ultra-dark, 90% cacao chocolate had an aroma with notes of dark chocolate, fruit (red apple), faint umami, and very faint fermented fruit. It had a slow, dense melt and a thick, smooth texture.

The flavor embodied rich, uniformly roasted cacao (think unsweetened fudge brownies), with faint, balanced charcoal roasted cacao, very faint, fleeting roasted nut (peanut butter*) and very faint roasted/baked banana notes. 

For such a high cacao percentage (90% cacao and only 10% sugar) bar the acidity and bitterness levels were relatively low, making it a bit more approachable for sensitive palettes. 

Pump Street Chocolate's tasting notes for this single estate (farm) Jamaican chocolate bar (Batch No. 02506, 2018 Crop) read as follows: "A rich, deep, high cocoa percentage bar which expresses the unique banana and rum character of the Bachelor's Hall Estate terroir." 

Ingredients: Cocoa beans, cane sugar and organic cocoa butter 

*Please note there were no peanut butter or nut ingredients listed for this bar. Although trace amounts of potential allergens can occur if chocolates are created in a place where shared spaces are used, tasting notes for chocolate, wine, beer, coffee, and many other foods and beverages often describe perceived flavor or aroma notes. 

If one drills down to the molecular level, similar substances can be created, e.g., in fermentation/oxidation or roasting processes, that may evoke (remind us of) other food or beverage items, even though no direct connection exists.

Welcome to Day #4 of Chocolate and Jamaica Theme Week.

Today's single origin Jamaique Marvia* Noir 63% (bar) was from the French artisan chocolatier A. Morin (SAS Chocolaterie A. Morin, Donzere, France). The company's origins stretch back to 1884.

This relatively thick, generously sized French chocolate bar had a deep, dark chocolate flavor. A pleasing true chocolate (smooth, baked fudge brownie) note was accompanied by a slightly woodsy, loamy earth undercurrent and a very faint fruit (lightly spiced peach) note. These notes were consistent from start to finish. 

The chocolate was not too sweet (thank you). In fact, the 63% cacao content tasted darker, more like a 70% cacao chocolate.

*I am not sure about the "Marvia" name; but, if I had to guess, it may be a reference to Marvia Borrell, the Jamaican-born founder and CEO of Black River Chocolate in the Blue Mountains of Jamaica, and cocoa ambassador. Her company also has a presence in Europe.
