Welcome to Day #3 of Chocolate and Vietnam Theme Week. 

Today's Kumquat Milk Chocolate 55% Cacao Trinitario (bar) was from Belvie Chocolate Maker (Saigon (Ho Chi Minh City), Vietnam).

The Trinitario cacao beans used to make this bar were ("purchased directly from planters on an above fair trade price...") from Dong Nai province, "a highly inland area underlaid by volcanic rock, (that) supports cacao plantations on its low-lying slopes as well as its valley..."

Aroma notes included: chocolate (cocoa) slightly floral matcha latte; light fruit (banana, aromatic citrus); and barely detectable marshmallow. 

Texture: relatively smooth, with barely detectable fruit particles (kumquat peel powder). These particles were almost entirely incorporated into the chocolate.

Flavor notes included: smooth-flavored, sweet chocolate with diffuse tropical fruits (gentle, sweet citrus, banana) and very faint matcha latte marshmallow.

I enjoyed tasting this 55% dark milk chocolate--that lacked a heavy milk or cream flavor or texture,  allowing the light, aromatic fruit to shine.

Welcome to Day #4 of Chocolate and JKLM Theme Week, where I'm featuring chocolates with flavor inclusions and origins that start with the letters J, K, L and/or M.

Today's Mekong Kumquat 68% Tien Giang Single Origin Vietnamese Chocolate (bar) was crafted by Marou Faiseurs de Chocolate--chocolate makers in Ho Chi Minh City (formerly Saigon), Vietnam.*

The kumquat** is a small, orange, "inside out" citrus fruit that can be eaten whole, peel and all. In fact, the most edible part is actually the sweet rind. The inside contains a relatively small amount of tart, acidic fruit and seeds.

This bar had an aroma with smooth dark chocolate, bright sweet-tart apricot and aromatic citrus, light spice, very faint fleeting earth, and very, very faint malt/cereal notes. 

It had an even, smooth, dark chocolate melt, texture and flavor. (There were no detectable textural bits of fruit.) Fruit flavor and citrus fruit acidity were uniformly present throughout the tasting experience, although these elements shifted in an almost magical way from bite to bite.

Do savor this chocolate slowly. The kumquat fruit took a while to bloom from "just" fruit-forward acidity to fully-formed kumquat flavor. Notes of sweet orange, dried apricot, neroli (orange blossom), aromatic lemon, and various fruit-floral qualities appeared and disappeared. And this elusive dance persisted during the full hour when this chocolate was tasted and re-tasted.

The maker's tasting notes read as follows: "From the lush orchards of Tien Giang province, this small citrus called kumquat adds a bright sweetness to the spicy notes of our well-known Tien Giang chocolate."

**Kumquats (Citrus japonica, formerly genus Fortunella) originated in Eastern Asia. The small, oblong fruits can be eaten whole, sliced and included in salads and as garnishes,  and/or boiled with sugar and used in drinks, desserts, marmalades, jams and jellies.

Kumquats are cultivated in Southeast China and other Asian countries (e.g., Japan, Taiwan), and in the mighty (and agriculturally productive) Mekong River delta area in southern Vietnam. Kumquats have also been hybridized with other citrus fruits, such as the mandarin orange. Calamansi/calamondins include wild kumquat hybrids with Philippine limes/lemons (Citrofortunella microcarpa). And, Meiwa kumquat + Satsuma mandarin orange hybrids are known as "Orangequats".

And if you visit Vietnam during the Lunar New Year, you will see these small evergreen, citrus trees in pots, loaded with small orange fruits, everywhere. They'll be strapped to the back of motor scooters and small flatbed trucks, whizzing by you on big city streets.

Tien Giang province, located south of Ho Chi Minh City, is one of 13 provinces associated with the Mekong River delta area in southern Vietnam and where today's cacao was grown. The more temperate/tropical south is where fruits (especially bananas), coffee, coconuts and cacao are cultivated.

Today was Day #3 of Chocolate and Vietnam Theme Week.

Happy Mother's Day to the moms out there. I celebrated this day with a small 4-piece Mother's Day Collection box from Socola Chocolatier (San Francisco, CA). (Socola is the word for chocolate in Vietnam.) I was excited to open this box and try new Socola flavors with ties to Vietnam this week.

The four flavors in this collection: Passion Fruit Vanilla Bean, Give it to Me Guava, Jasmine Tea, and Kumquat. Kumquat was a new Socola flavor. And now it's one of my new favorites.

Kumquats and Umami
I love kumquats, and the bursts of flavor contained in these small orange fruits -- that have a sweet rind and a tart center. (I have a small, recently planted kumquat tree in my yard. I'm hoping for my own tiny harvest to combine with chocolate next year.) Fresh, tropical fruits are often served as a dessert in Vietnam and Southeast Asia. And with the delicious flavors like this, I can see why.

Socola's description of this new chocolate reminded me that the tiny slivers of salt-preserved kumquat (also made into a drink in Vietnam), that were embedded in a 61% dark chocolate ganache, were high in umami flavor. (Other umami foods include parmesan cheese, mushrooms, truffles, fish and cured meats, green tea. I'm a big umami fan, so it's no wonder this chocolate rang some bells for me.)

Guava
The second flavor I'm counting for today, Give it to Me Guava, contained a tropical guava fruit gelee (pate de fruit) and dark chocolate ganache. Like the kumquat (and passion fruit) chocolates today, it was very authentic and fresh, with real fruit (in this case, guava) flavor. The Guava truffle was decorated with a white stencil of "Harriett", the flying llama, a creative mascot for the company.

Jasmine & Memories
The Jasmine Tea truffle I'd tasted and featured before on this site. It was infused with a lovely floral tea flavor. The two sisters (Susan and Wendy) behind Socola remembered sips of their grandmother's Jasmine tea when they were growing up.

Newman's Own - Orange bar - November 10, 2012

I bought, and ate, this Newman's Own Organics Orange Dark Chocolate (54% cocoa) bar today; however, it had bloomed a bit and was somewhat brittle. That said, it was still good, and the natural orange flavor was very pleasant. I usually salvage good chocolate with bloom* by melting it and pouring it on ice cream, or making hot chocolate with it. Both options worked with this bar -- made with organic and Rainforest Alliance Certified Cocoa.

*A bar that gets too hot or too cold on the way to your table may result in cocoa butter separating from the cocoa solids resulting in whiteish coloring/spots.

A big toast to Day #10 of Chocolate and All Things Orange Theme Week. The toast, in this case, was a plate loaded with toasted, gluten free whole grain bread, with a variety of orange-related spreads, jams and preserves.

This plate included: a delicious, not-to-sweet Organic Sicilian Orange Fruit Spread from bionaturae (made in Italy); a Provencale Tomato - White Nectarine Jam from Blue Chair (Oakland, CA); a Dalmation Fig Orange spread; and a kumquat, chocolate and coffee spread from Lemon Bird Design (Wrightwood, CA). See below for details on the latter.

This exotic spread tasted like breakfast in a jar. The tart sweet strip-lets of orange kumquats imparted a citrus note (similar to orange marmalade) to a rich, dark pesto of dark chocolate and strong coffee flavors. This spread made an interesting sandwich spread with nut butters, and also a filling for small homemade chocolate cups* with a splash of Cointreau (or homemade orange liqueur).

*Chocolate cups are very easy to make. Melt chocolate in a microwave oven for a minute or two, until it can be stirred. Once softened, spread/brush the chocolate into a small silicone candy cup forms, covering all sides of the cup. Set aside to cool/harden. Gently remove chocolate cups from cup forms. Fill with desired fillings -- pudding, fresh fruit, liqueurs, jams, lemon curd, nuts, ice cream, sorbet, whipped cream, etc.
