Welcome to Day #6 of Chocolate and Vietnam Theme Week.  

Today's 100% Single Origin Dark Chocolate (bar) was from Marou Chocolate (Marou Faiseurs de Chocolat), based in Ho Chi Minh City (Saigon), Vietnam.

It's worth noting up front, this ultra-dark single origin bar was crafted using one single ingredient (cocoa nibs).

Aroma notes included: subtle cocoa, dark chocolate, and very faint botanical (barely detectable floral (orchid); very faint, diffuse fruit; nut)

Flavor notes included: dark, unsweetened chocolate; subtle, unfolding fruit (pomegranate, tangerine, green fig) and fruit (pomegranate-date) molasses; and very faint nut (Brazil). 

When I take a bite of a 100% cacao bar, I brace myself for the probable disconnect between the friendly cocoa aroma--that my brain associates with something sweet--and the bitterness that may follow. There wasn't that kind of jolt this time. 

Yes, this chocolate was bitter (unsweetened), but not too bitter (or sour). It had some natural sweetness to it; and the feel of a high-quality, well-managed chocolate. This was a pleasant dragon, with gently complex cacao flavors.

Welcome to Day #5 of Chocolate and Vietnam Theme Week--a week with some excellent single origin bars made from cacao grown in southern Vietnam.

Today's Tien Giang*, Vietnam dark chocolate 70% (bar) was from SOMA chocolatemaker (Toronto, ON, Canada). The cacao beans used for this bar came from Marou Faisseurs de Chocolat in Vietnam.**

Aroma notes for this deliciously dark bar included: rich, deep dark chocolate; faint, earthy molasses and botanicals (maple, warm spices).

The texture was smooth and uniform.

Flavor notes included: rich dark chocolate with bold cocoa shimmering with subtle dark complexity (faint, balanced earth; faint, fleeting dark, sweet berries; and faint molasses and warm spice). 

Bold and dark, yet also subtle and complex. These adjectives rarely converge in one chocolate. And oh what a beautiful, well orchestrated, convergence it was. The cacao was excellent, and so was the implementation.

This three-ingredient bar embraced the best traits cacao has to offer (across different varieties). The deep almost earthy boldness of a Forastero variety, the flavor and tart-sweet fruit of a Trinitario variety, and the beautiful complexity of a heritage/heirloom (South American) cacao (Criollo, Chuao and perhaps Nacional). 

Even the choice of organic cane sugar seemed just right. The cacao was already, inherently deep and dark. I'm always curious about what darker versions of bars would have tasted like. Not here. Going with a higher cacao percentage in this case--where flavors "darken" with proportionately less sugar--made less sense. And the sugar helped showcase the bright-dark-sweet dark berry/dark cherry fruit flavor notes.

Maker's tasting notes: "cinnamon, wild ginger, cherry jam, Brazil nut."

*Tien Giang is one of several cacao-growing provinces in southern Vietnam. The southern part of the country is warmer, and well-suited for cacao trees. Some of the best cacao grows in areas that are close to the coast and the Mekong River delta.

** Marou was founded by Vincent Mourou and Samuel Maruta in Vietnam over a dozen years ago. It's not an exaggeration to say that the Marou team was largely responsible for the Chocolate and Vietnam Theme Weeks on Chocolate Banquet for the past several years. Marou works directly with farmers in at least five provinces in southern Vietnam and makes bean-to-bar chocolates in Vietnam.

The company also has enabled other high-end chocolate makers around the globe to obtain fine Vietnamese cacao for their own single origin Vietnam chocolate offerings--such as today's SOMA chocolatemaker's Tien Giang bar.

Xin chao (hello) and welcome to Day #7 of Chocolate and Vietnam Theme Week, and Day #1 of Chocolate and Coconut Theme Week.

Today's Coconut Milk Chocolate 53% and Popped Rice (bar) was made by Marou Faiseurs de Chocolat (Ho Chi Minh City), in southern Vietnam.

Aroma notes for this single origin chocolate bar included: authentic coconut (coconut milk), dark chocolate, crisped rice (marshmallow treats) and very faint (likely implied) sweet vanilla wafer/cookie.

This high-end 53% coconut milk chocolate (single serving bar) was wrapped to look like a candy or snack bar (even though the pretty green and gold colors in the packaging signaled something more high-end). But, when I took the first bite, I knew I was on an interesting and lush flavor journey. It was satisfying aggregation of velvety, creamy and crunchy textures.

The flavor notes had more layered depth (and authentic quality) than most coconut and chocolate confections you'll find. These notes included (as advertised/expected) a well-executed, flavorful blend of rich dark chocolate (fudge brownie), sweet coconut (milk) and crispy rice flakes.

Warning: mildly addictive if you like coconut and dark chocolate. Tasted more like a darker chocolate, while at the same time being approachable for milk chocolate fans.

Welcome to Day #4 of Chocolate and JKLM Theme Week, where I'm featuring chocolates with flavor inclusions and origins that start with the letters J, K, L and/or M.

Today's Mekong Kumquat 68% Tien Giang Single Origin Vietnamese Chocolate (bar) was crafted by Marou Faiseurs de Chocolate--chocolate makers in Ho Chi Minh City (formerly Saigon), Vietnam.*

The kumquat** is a small, orange, "inside out" citrus fruit that can be eaten whole, peel and all. In fact, the most edible part is actually the sweet rind. The inside contains a relatively small amount of tart, acidic fruit and seeds.

This bar had an aroma with smooth dark chocolate, bright sweet-tart apricot and aromatic citrus, light spice, very faint fleeting earth, and very, very faint malt/cereal notes. 

It had an even, smooth, dark chocolate melt, texture and flavor. (There were no detectable textural bits of fruit.) Fruit flavor and citrus fruit acidity were uniformly present throughout the tasting experience, although these elements shifted in an almost magical way from bite to bite.

Do savor this chocolate slowly. The kumquat fruit took a while to bloom from "just" fruit-forward acidity to fully-formed kumquat flavor. Notes of sweet orange, dried apricot, neroli (orange blossom), aromatic lemon, and various fruit-floral qualities appeared and disappeared. And this elusive dance persisted during the full hour when this chocolate was tasted and re-tasted.

The maker's tasting notes read as follows: "From the lush orchards of Tien Giang province, this small citrus called kumquat adds a bright sweetness to the spicy notes of our well-known Tien Giang chocolate." 

Ingredients: Cacao nibs, cane sugar, cacao butter, dried kumquat

**Kumquats (Citrus japonica, formerly genus Fortunella) originated in Eastern Asia. The small, oblong fruits can be eaten whole, sliced and included in salads and as garnishes,  and/or boiled with sugar and used in drinks, desserts, marmalades, jams and jellies.

Kumquats are cultivated in Southeast China and other Asian countries (e.g., Japan, Taiwan), and in the mighty (and agriculturally productive) Mekong River delta area in southern Vietnam. Kumquats have also been hybridized with other citrus fruits, such as the mandarin orange. Calamansi/calamondins include wild kumquat hybrids with Philippine limes/lemons (Citrofortunella microcarpa). And, Meiwa kumquat + Satsuma mandarin orange hybrids are known as "Orangequats".

And if you visit Vietnam during the Lunar New Year, you will see these small evergreen, citrus trees in pots, loaded with small orange fruits, everywhere. They'll be strapped to the back of motor scooters and small flatbed trucks, whizzing by you on big city streets.

Tien Giang province, located south of Ho Chi Minh City, is one of 13 provinces associated with the Mekong River delta area in southern Vietnam and where today's cacao was grown. The more temperate/tropical south is where fruits (especially bananas), coffee, coconuts and cacao are cultivated.

Welcome to Day #7 of Chocolate and Coconut Theme Week.

Today's Coconut Milk and 55% Ben Tre Single Origin Vietnamese Chocolate (bar) was created by Marou Faiseurs de Chocolat,* chocolate makers (based in Ho Chi Minh City (formerly Saigon), Vietnam, and with a presence further north in Hanoi as well). This chocolate bar was imported into the U.S. by A Priori Specialty Food (Salt Lake City, UT).

Marou makes single province/region chocolate from cacao grown in southern Vietnam. The cacao in today's bar was grown in Ben Tre--a province known for coconut farming--where the great Mekong River delta has created rich soil for agriculture in general.

Like other dark milk chocolate and coconut milk bars featured this week, this one had a silken texture, with a slow, increasingly creamy melt. The only potential down side to this lovely coconut milk attribute is that (like dairy milk) and sugar, coconut milk can obscure cacao flavors. I generally have preferred slightly higher cacao percentage (60%+ cacao) coconut dark milk chocolates for this reason.

Thankfully, today's Vietnam 55% chocolate (made with Trinitario cacao) did have more detectable cacao flavor. Some balanced, acidic/fruit cacao flavor notes managed to shine through. It helped that cacao nibs were the first ingredient listed (see below for complete ingredients list).

Ingredients: cacao nibs, sugar, coconut powder, cacao powder. 

*Marou Chocolate Makers was co-founded in 2010 by Sam Maruta and Vincent Mourou, who had banking and advertising backgrounds (but, they're much more 3D than this), respectively. 

The company name "Marou" appears to be a melding of the two co-founders last names; and there is also a reference that points to its translation as meaning "gift of God." 

Well, either way, their chocolate bars that I've seen in the last ten years have been beautifully packaged and have offered a great tasting experience. Today's 55% dark milk coconut bar was swathed in an outer wrapper with a spring green and ivory background pattern, stamped shiny gold cacao pod, flower and cloud design elements. Suitable for framing.

Welcome to Day #7 of Chocolate and Vietnam Theme Week.

Today's beautifully packaged Dak Lak 70 percent dark chocolate bar from Marou Faiseurs de Chocolat (Ho Chi Minh City/Saigon) was made from cacao grown in Vietnam.

It had a subtle chocolate aroma with honey, light spice and faint green forest/wood and fruit notes.

And the flavors I tasted ranged from chocolate cake to hints of tart sweet red fruit headed toward sweet berries/cranberries/cherries.

As is often the case with craft chocolate, I tasted this bar three different times today and each time I picked up a few different flavor notes.

Hats off to the maker for carefully capturing and cultivating the flavor profile of these cacao beans from the Dak Lak province, in central Vietnam.*



*Dak Lak is in the Central Highlands, in an area where coffee, pepper and tea are also grown. It is north of Lam Dong province and most other cacao-growing regions that are further south (closer to the Mekong River Delta).

Welcome to the final day of Chocolate and Some Enchanted Islands Theme Week. Today's "island" was located in the Mekong River Delta in Vietnam.

Historic tales, like Treasure Island by Robert Louis Stevenson, feature pirate-filled quests for treasure chests of gold, coins and ill-gotten gains, often buried on exotic islands.

Island treasures also can include fragrant spices, exotic fruits—and flavorful cacao wrapped in beautifully designed packaging.

The image (upper right -- from Marou Chocolate website) is one I love. It shows the range of colors in cacao fruit (pods), and correlates these colors with some of the company's bars.

Marou Faiseurs de Chocolat is a bean-to-bar chocolate maker based in Ho Chi Minh City (formerly Saigon), Vietnam. The two founders, Samuel Mourou and Vincent Maruta, have been making chocolate from Vietnam cacao since 2011.

Tasting notes: (from Marou website): "...subtle notes of liquorice (sic) and spice in this extremely delicate 75% chocolate made with cacao growing in very small quantities on Tan Phu Dong Island in the middle of the Mekong River." I also picked up a hint of raisin cinnamon toast in the aroma and flavor associated with this bar.

Unlike many chocolate bars made in North America and Europe, today's bar was made "in-country"—i.e., the chocolate was made in the same country where the cacao was grown (Vietnam in this case).

Today's Marou bar was soy, gluten and dairy free. The bar was imported into the U.S. by Dark Chocolate Imports LLC (Bloomfield Hill, MI), and sold in specialty chocolate stores (The Chocolate Garage (Palo Alto, CA) in this case).

Tomorrow we travel to Madagascar, a large island nation that's big enough to merit its own theme week.

Today was Day #7 of Chocolate and Vietnam Theme Week.

I've really enjoyed the great Vietnam chocolates I've had this week -- and all the Vietnamese food I felt compelled to sample, in the name of research.

Today's 78% dark chocolate, single origin bar from the Ben Tre province of Vietnam -- made by Marou Chocolate (Ho Chi Minh City/Saigon, Vietnam) -- was the last in a series of attractively package Marou bars I featured this week.

The dark, tart, fruit acidity in this bar may have overshadowed more subtle flavor notes. However, I can see using this bold flavor to liven up a rich, but relatively bland dessert item -- e.g. grated, over a vanilla pot de creme; raisin cinnamon toast and cream cheese; or a croissant with some homemade whipped cream and strawberries on the side). The options are many.

Today was Day #6 of Chocolate and Vietnam Theme Week.

Marou Chocolate (Vietnam) packaging and design is so good I could eat it -- or wear it.

I wondered: How expensive would it be to buy enough Marou bars (for their paper wrappers) to make a top or a dress to wear? A small fortune, no doubt. (See some of my imagined Marou red dresses, bottom right. More to come...)

In the meantime, I was completely satisfied with eating the lovely chocolate bar inside today's Ba Ria 76% bar wrapper. It had some bold fruit acidity with a slight earthy taste in the finish.

Marou tasting notes for this bar stated: "A bold and fruity chocolate made from Trinitario cacao (beans) sourced directly from family-owned farms in the province of Ba Ria."

Today's 74% dark chocolate bar from Marou Chocolate (Ho Chi Minh City/Saigon, Vietnam) was made (in micro-batches) from cacao beans "cultivated (in the Lam Dong province) in the hilly woodland at the edge of the Vietnamese Central Highlands between Madagui and Bao Loc."

If you're like me, you have a somewhat vague idea of where this origin area is located in Vietnam. However, the beans and bar that hail from this region (described as rare) had clear and consistent citrus (acid) notes, and rich dark flavor.

So, while I haven't been to Vietnam (yet), I appreciated the opportunity to taste this bar (and the series of Marou single origin bars I've been tasting this past week*). Thank you to bean-to-bar chocolate maker, Marou Chocolate, and The Chocolate Garage, for making this possible. And thank you to Laurie for tasting help this evening.

Today was Day #2 of Chocolate and Vietnam Theme Week.

I've been working my way through a line of single origin dark chocolate bars from Marou Chocolate (based in Ho Chi Minh City/Saigon, Vietnam). The five Marou bars I have range from a 70% Tien Giang bar to a 78% Ben Tre bar.

Today's attractive, glossy Marou 72% dark chocolate bar was made from cacao beans grown in the upper Dong Nai region. The bar had good balanced fruit acidity with a slight raisin flavor; however, I did not taste the cinnamon note that I enjoyed in yesterday's 70% Tien Giang bar.

Merci to the French for introducing cacao to Vietnam in the late 1800s. I'm guessing cacao is largely grown in the southern part of Vietnam, in the Mekong River Delta area, and in the Highlands, in areas with taller trees that can help provide shade for cacao trees.

Tasting chocolates from one country has been a great way to learn more about the history, culture and flavors of a specific place in the world. Welcome to Day #1 of Chocolate and Vietnam Theme Week. There aren't that many artisan chocolate makers from Vietnam. One of the first (of possibly more to come) is Marou - Faiseurs de Chocolat, whose founders have French roots.

Today's 70% dark chocolate Tien Giang bar from Marou (Saigon, Vietnam) was made with Trinitario cacao beans, "organically grown by farmers in the Cho Gao Co-op in the Mekong (River) Delta."

Tasting notes on the packaging describe this bar as full-bodied. The bar gave off a very faint smell of sweet tobacco, although when I bit into the bar, there was no tobacco taste, but rather a nice, acid-fruit flavor spectrum -- primarily raisin/plum with some spice, rum raisin cinnamon toast.

The beautiful "wallpaper" packaging used to wrap this line of single origin bars (from different regions, farmers, co-ops in Vietnam) was mesmerizing, as good design often is. I found myself laying out the family of five different Marou bars I bought from The Chocolate Garage (Palo Alto, CA) -- onto a large, lush green, banana leaf-colored paper with a side of pearls, just so I could admire them all. Très chic.
