It is hard to go wrong with a mixture of salted caramel + chocolate.

Today was Day #7 of Chocolate and Flower Theme Week. Lavender, rose, saffron -- these are some of my favorite floral flavorings. Today, I made ice cream sandwiches (using gluten-free cookies) that incorporated these flavors.

To make bite-sized chocolate cookie sandwiches with lavender rose ice cream* filling, I used Gluten Free Chocolate Wafers from St. Amour (Costa Mesa, CA). These small chocolate cookies stayed crispy and crunchy after being topped with ice cream.

I also experimented with Lemon Lavender cookies from The Inspired Cookie, filled with saffron ice cream, and chocolate cookies from Grindstone Bakery filled with kewra (pandan) flower infused vanilla ice cream. All good.

Breakfast consisted of a tiny gluten-free pumpkin pie from Natural Decadence (Eureka, CA), topped with a mini-scoop of homemade saffron vanilla ice cream with freshly grated nutmet; toasted almonds and walnuts; and two flower-shaped Almond Butter (silver foil) and Peanut Butter (gold foil) chocolate "bites" from Sjaak's Organic Chocolates (Petaluma, CA).

Today was Day #5 of Chocolate and Flower Theme Week.

The bright flowers adorning the package caught my eye. And the name Cocopotamus made me smile. But, what sent me to the moon was the taste of a Cocopotamus Rosie Posy Fudge Truffle, from NYDC Chocolate (Albuquerque, NM).

Individually wrapped in pink foil, each Mediterranean rose water infused truffle had a creamy chocolate center. However, instead of being encased in a hard chocolate shell, the center was surrounded by a mantle of pliable chocolate fudge, and rolled in pink sugar -- creating a multi-layered texture and taste experience. The raspberry rose-colored sugar finish provided a sugar sparkle, without the whole truffle being overly sweet.

Max and Ally Sinclair have created an updated* spin on an American tradition (fudge). The personality of the Rosie Posy Fudge truffle is described as: "the most exotic charmer in our chocolate harem." If you like floral flavors, think Roses, with a capital "r," in 3D, on a chocolate rocket, coming at you, right now.

I opened up a 9-piece box of flower-shaped chocolates from John and Kira's (Philadelphia, PA) Enchanted Forest Collection.

This box contained two different flavors: a White Tea and Rose and a Rum-Pecan Caramel.

I bit into the pink one first; and I couldn't really taste the white tea in the creamy ganache (filling); but I loved the rose flavor. Both the White Tea and Rose chocolate (and its yellow, wildflower-shaped rum pecan caramel companion) provided a welcome spot of color in an otherwise overcast day.

Were it not for the warm and sunny weather, I would have pinned one of these dark chocolate covered Blood Orange Blossom beauties from B.T. McElrath (Minneapolis, MN) to my hat before going out. They certainly would make good table favors.

Filled with fuschia-colored, blood orange and white chocolate ganache, and encased in hand-painted, 70% dark chocolate shells, these flowers were pleasing to the eye and palette, with a subtle sweet, citrus finish.

Today was Day #2 of Chocolate and Flower Theme Week.

Chocolate is an "alpha" flavor that can bury timid tasting playmates. So, I celebrated Jonathan Grahm's bold but balanced truffles. Timid they are not. Grahm is the chocolatier behind Compartes Chocolatier (Los Angeles, CA).

Jonathan's 10-piece Signature Collection is a good introduction to Compartes Chocolatier's bright and beautiful line-up. Today's Meyer Lemon Lavender truffle, stenciled across the top with lavender-colored butterflies, had just the natural tasting Meyer lemon + lavender floral punch I wanted.

My only quibble: the 10-piece Signature Collection box was a good sampler, but I would have liked the option to pick my own flavors. (Also, understandably, some intriguing flavors are seasonal and/or may not be available year-round.) I do hope to try the Cactus and other truffles in the future. I'm betting an in-person visit to the company's storefront shop in L.A. might allow for some of these options.

Today was Day #1 of Chocolate and Flower Theme Week -- in which I had some fun with flourless, flours, and flowers.

Flour Craft Bakery (San Anselmo, CA) makes gluten-free baked goods, and I picked up some of their fresh-baked Flourless Chocolate Walnut Fudgies (cookies) and their gluten-free Lemon and Lavender madeleines at the Marin Civic Center Farmers Market recently. (I'm saving the Salted Butter Chocolate Chip cookies for next week.) These treats made a great cookie plate with tea.

The Flourless Fudgies were especially good -- a fudgier, richer version of a chocolate meringue cookie. Fresh-tasting, baked walnut pieces provided delicious nutty taste and texture and helped balance the sweetness.

The Lemon and Lavender madeleines were subtlely flavored and fun. It was the first time I'd seen gluten-free versions of these traditional shell-shaped, not-quite cakes not-quite cookies. They were wonderful with Lemon and Earl Grey Lavender teas (and I suspect they would make great companions with any tea).

I was happy to find a new chocolate + lemon bar for this week. I love lemons for both sweet and savory dishes. Today's bar was sweet; however, the flavor additions (lemons, ginger, black pepper*) also could have been used to spice up a vegetable or chicken dish.

Today's Organic Lemon Ginger Chocolate with black pepper bar from Equal Exchange (W. Bridgewater, MA) was long on title and flavor. The bar contained a well-balanced mix of 55% cacao chocolate; fresh-tasting, sweet lemon (organic sugar and lemon oil); hints of candied ginger; and finely ground (or infused) black pepper and vanilla beans.

*Cacao and black pepper are often grown in the same equatorial regions (up to 20 degrees south and north of the Equator), so I've been surprised there aren't more chocolate items that contain pepper. (Equal Exchange works with small farmer co-operatives in the Dominican Republic, Panama, Peru and Ecuador for cacao; farmers in Paraguay for sugar; and farmers in Madagascar for vanilla. I'm not sure where they obtained the black pepper. While black pepper is often associated with India's Malabar coast, Vietnam, and Indonesia/Sumatra, black pepper is also grown in Central and Latin America and cacao growing countries as well.)

I'm often asked: "After 7 years, where do I find new chocolates to try?" My answer is: Everywhere! After 7 years, I'm still finding new chocolatiers where I live, in the San Francisco Bay Area, to say nothing of the rest of the world.

Today I drove up to the Marin Civic Center Farmers Market (north of San Francisco, CA) to buy a few Meyer Lemon Zest truffles from Barlovento Chocolates (Oakland, CA). It was worth the drive. I enjoyed meeting the Barlovento rep. and other vendors at the Farmers Market -- and tasting delicious foodstuffs.

The Meyer Lemon dark chocolate truffle, decorated with thin, lemon yellow squiggles, was filled with a very creamy ganache infused with authentic tasting Meyer lemon zest. The Meyer lemon has a sunnier, sweeter flavor than other varieties; and it pairs well with chocolate.

Today was Day #5 of Chocolate and Lemon Theme Week. And Meyer lemons have been well represented thus far.

Today was Day #5 of Chocolate and Lemon Theme Week.

What does this lovely Sambirano* 70% single origin bar from Rogue Chocolatier (Three Rivers, MA) have to do with lemons? The answer has to do with experimenting with flavor pairings.

Much like there are color groupings that will work better in a given context than others -- one can pair chocolate with items that mirror, complement or oppose certain characteristics of a bar. Sometimes the pairings result in delightful surprises and sometimes the results are oddly unpredictable.

The profile (tasting notes) printed on this bar's packaging stated: "citrus, rum raisin, toast." I mimicked the tasting notes, by pairing this bar with slices of (gluten-free) raisin toast, drizzled with Meyer lemon infused olive oil; Myers's dark rum, and Meyer lemon jam.

I enjoyed the pairing; however, with a bar this good, I also made sure to savor bites of chocolate before, during and after the toast plate items. This artfully complex bar did indeed have very pleasing, well-balanced citrus and raisin notes.

*This 70% Sambirano bar was made with cacao beans from the Akesson Estate, in Madagascar. The most recent batch (bar) may have slightly different tasting notes. Much like a wine, batches differ from year to year.

The November skies are getting a bit less sunny. Lemons and cherries helped brighten things up, and today's warm chocolate dessert.

I melted part of a milk chocolate cherry bar from Coco Polo (Highland Park, NJ), and used it to top a lemon souffle, along with some chopped almonds and apricot bits.

This stevia-sweetened, 39% cocoa milk chocolate bar had just the right amount of tart-sweet Montmorency cherries (from Michigan and Utah, according to Coco Polo's website) complemented the lemon souffle nicely. The almonds added some satisfying crunchy texture and also helped cut the sweetness. (I used sweet Meyer Lemon Marmalade and Limoncello in the lemon souffle.)

This morning I enjoyed a La Vigne Lemongrass chocolate* from John and Kira's (Philadelphia, PA). This dark chocolate covered square contained a ganache (filling) subtly flavored with "organic and biodynamic lemongrass from Helen and Robert Beck's California farm."

Dark chocolate was the dominant flavor, and as I savored the chocolate, the lemongrass revealed itself slowly and wonderfully. I love natural, botanical flavors like this. I would have been happy with even more lemongrass flavor, but I suspect this subtle hint is to many people's liking.

I shared today's Chile Limon Chocolate bar from B.T. McElrath (Minneapolis, MN) with a friend. We both experienced a spicy chili and cayenne pepper kick; however, he experienced grains of salt and I did not. That is the challenge with sprinkled on flavor additions; some flavors may be more unevenly distributed than others.

This bar was made with 70% dark and milk chocolate; decorated with colorful red and yellow-orange swirls; and infused with chilies and lime.

Today was Day #2 of Chocolate and Lemon* Theme Week.

*To arrive at a true chocolate + lemon item with chocolate, I made a small batch of gluten-free lemon, almond cookies (with Crabapple Meyer Lemon marmalade from McEvoy Ranch) that were topped with bits of today's bar. I enjoyed these a lot, but as I mentioned yesterday, I am very fond of most lemon and chocolate combinations.

The chocolate makers behind Antidote Chocolate (Long Island City, NY) chose a clever mix of 50 percent raw + 50 percent roasted 77% cacao for today's bar. This 50/50 blend provided a bit of the best of both worlds -- "raw" cacao is less-processed and can preserve certain flavors and nutritional properties, and "roasted" can give chocolate some unique flavors and properties as well. The bar (made in Ecuador) smelled rich but smooth, with a very subtle hint of warm spice.

The two added flavors in this bar provided flickers of candied ginger and bits of sweet dried goldenberry fruit. The packaging described goldenberries (or gooseberries) as having a tart, citrus flavor -- I agree with that description. These yellow-orange berry bits had a mild tangerine - golden raisin hybrid flavor to them.

Rainforests conjure up mysterious, steamy expanses of lush green foliage; chattering birds and monkeys; and earthy, loamy smells. Bright, tropical fruit flavors shone through the organic, dark chocolate covered bits of organic dried pineapple, mango and goldenberry in today's box of "Rainforest Delight" from Wonder Food Co. (Palm Desert, CA).

The dark chocolate was dark and rich, earthy, and slightly bitter. The tiny pieces of pineapple and mango were strong enough that I could pick out these flavors. The goldenberry was a bit more subtle; and the flavor I detected was close to that of a golden raisin.

This was an interesting tropical mix over all, lacking in artificial colors or preservatives, and presided over by two golden tamarin monkeys (mascots Coco and Keeno) printed on the packaging. This Rainforest Delights mix was part of the company's Coco Keeno product line.

This dark, dense Pure Organic Dark Chocolate Berry* Bar from The Pure Bar Company (Newport Beach, CA) was moist and chewy. Made from fruits, nuts and cocoa powder, and sweetened with agave nectar, this organic bar was satisfying, and a healthier choice than a candy bar.

Today was Day #4 of Chocolate and Berry Theme Week. Yesterday I sampled the 39% cocoa milk chocolate version of today's 70% cocoa Elderberry bar from Coco Polo (Highland Park, NJ).

Today's darker version lacked some of the creamy texture and caramel notes of the milk chocolate version. However, both the sugar-free (stevia-sweetened*), gluten-free and GMO-free bars were better tasting than many sugar-free, or stevia-sweetened bars that have been sold in the past. The natural tasting elderberry smell and taste reminded me of berry jam or wine, and perked up today's dark chocolate a bit.

*Coco Polo founders developed a successful blend of Reb A extract from the stevia plant, Non-GMO erythritol, and inulin (extract of chicory root) to sweeten their bars. There was no "off" taste, no digestive issues, from what I could tell -- just a welcome alternative to sugar, without the blood sugar spike.

Today was Day #3 of Chocolate and Berry Theme Week, and I'm giving some airtime to the small, dark blue-purple elderberry.

While not as popular here in the U.S. as in Europe or other parts of the world, the slightly tart berry (usually partly cooked/dried) paired well with chocolate .

Today's sample-sized, 39% cocoa, milk chocolate with elderberry bar from Coco Polo (Highland Park, NJ) contained a pleasing blend of flavors -- and was sweetened with stevia. Coco Polo produces a line of different, stevia-sweetened bars. I'm planning to include the 70% cocoa, dark chocolate version of this bar tomorrow.

I've been working my way through a variety of chocolates from John and Kira's (Philadelphia, PA). Today's Glenn's Strawberry chocolate*, came from the company's "Every Flavor" assortment box.

The strawberries, from Glenn Brendle's Green Meadow Farm (in Gap, Pennsylvania), were blended with Valrhona milk chocolate to make a creamy chocolate ganache (filling) infused with just the right amount of fresh, right-off-the-bush strawberry flavor.

Today was Day #1 of Chocolate and Berry Theme Week.

John and Kira's red and black, Signature Raspberry Ladybug was filled with a creamy, berry-flavored Valrhona chocolate ganache. And, John and Kira (Philadelphia, PA) know their chocolate bugs -- they offer a line of dome-shaped, hand-painted chocolate bees and chocolate ladybugs.

Today's berry flavored chocolate ladybug was the third and last flavor in the company's ladybug assortment box. (The two other flavors were garden mint and honey lavender.) Under each ladybug was an interesting ladybug fact, which made it easier to pick up more than one piece.
