Welcome to Day #4 of Chocolate and India Theme Week.

Aroma notes for this two-ingredient chocolate included: dried fruit (plum/apricot/light tropical fruit (mango)), fleeting fermentation (acids breaking down), green herb with faint citrus (oxalis, sorrel), molasses, faint clean ash/clean mineral, brown sugar/caramel, and very faint roasted coffee.

This 70% India bar had smooth, creamy texture and deep, satisfying fudge brownie and red fruit (cherry, dried plum) flavor notes. 

Ingredients: Anamalai Estate cacao beans, organic cane sugar.

Welcome to Day #3 of Chocolate and India Theme Week.

Today's India 70% Anamalai (bar) was from Seahorse Chocolate (Bend, OR). The company drum roasts small batches of cacao beans and crafts single origin bars in their chocolate roastery and studio.

The complex aroma notes for this bar included: fruit (dried plum, peach/yellow stone fruit), true chocolate (fudge), faint green herb with faint lemon (oxalis, sorrel), graham cracker/brown sugar, very faint, fleeting vegetable (baked potato/mild squash) and, later, a delicate wisp of pleasant, fleeting clean mineral.

This well-tempered bar broke with a hard snap (in a cool room).

The flavor was rich and enjoyable, like a glass of fine red wine. Bold, sophisticated and balanced flavor notes included: fudge brownie, faint roasted coffee and fruit (tart-sweet, dried cherry plum). This may be one of my favorite India cacao bars I've tasted.
