Welcome to Day #6 of Chocolate & Tea Theme Week.

Today's Lychee Tie Guan Yin Tea Chocolate 62% (bar) was from Fu Wan Chocolate (Ping-Tung County, Taiwan).

Aroma and Flavor notes for this fruit-forward chocolate included: gentle chocolate, sweetened dried fruit (authentic lychee) and faint oolong tea.

Texture: very smooth dark chocolate with chewy lychee pieces, and a barely detectable tea astringency in the finish.

I enjoyed the dried, sweet and flavorful lychee fruits. And I appreciated the relatively short list of quality ingredients. I would have loved to have tasted a bit more of the chocolate and tea flavors, but I think most people will prefer the blend of sweet, fruity and more subtle/balanced chocolate flavors in this bar.

Welcome to Day #2 of Chocolate and Flowers Theme Week.

Today's Petrova Chocolates Garden Party Collection from Dandelion Chocolate (San Francisco, CA) was a collaboration with Betty Petrova, of Petrova Chocolates (Boston, MA). 

The collection featured 8 different flavors (2 pieces each), covered in 70% House Blend dark chocolate from Dandelion (cocoa beans, organic cane sugar). Below are the two* lovelies I selected today.

Lemon Lavender

Aroma notes: gentle sweet citrus (lemon) and lilting lavender floral 

Texture: firm dark chocolate silky soft and smooth centers 

Flavor notes: balanced, tangy lemon and gentle lavender 

I enjoyed the authentic lemon and lavender flavors and the overall balance with the chocolate. The lavender used was organic Bulgarian lavender. I also liked the subtle complexity and the fact this filled chocolate didn't seem overly sweet.

Yuzu Lychee

Aroma and flavor notes included: very subtle, jammy, tart sweet citrus (yuzu) and slightly floral, fruit (lychee). These two fruit flavors harmonized perfectly and the bright, floral notes in the lychee made the whole blend sing.

Texture: Thin firm, dark chocolate shell contained silky, soft ganache filling.

I enjoyed this chocolate a lot. And I appreciated the quality of the Dandelion chocolate and other ingredients in this spring collection.

*I was unable to try the Pistachio Rose; Blood Orange & Black Sesame; Concord Grape Tart flavors in this assortment as they contained wheat/praline/. (Thankfully that limitation saved me from eating too many.)

Allergen-related information: The overall assortment contained at least some pieces with wheat or sesame.

Welcome to Day #7 of Chocolate and Thailand Theme Week--focused on cacao/chocolates from Thailand and chocolates containing Thai-grown and Thai-inspired flavor inclusions.

Today's 54% Dark Milk Lychee Rose (bar) was from Fossa Chocolate (Singapore).

The company's description of this bar read: "Creamy and fruity rose infused Tanzania 54% Dark Milk Chocolate topped with chewy dehydrated lychee from Chiang Rai, Thailand, and crunchy cacao nibs."

Aroma notes included: fruit (floral, sweet, lychee), and cocoa/cacao.

Texture: creamy smooth chocolate base and clusters of small, slightly crunchy, cacao nibs.

Flavor notes included: a base of mild dark chocolate (made even creamier and more subtle by added cocoa butter); cacao nibs; delicious pieces of sweet, refreshing, authentic lychee fruit; and floral (rose).

I loved the authentic and balanced flavors and gentle complexity. This was a sweet chocolate bar, but the sugar didn't overwhelm the natural fruit and floral notes. (Thank you.)

Welcome to Day #12 of Chocolate and Flowers Theme Week.

Today's unique 36% Rose Lychee Nibs bar was from Fu Wan Chocolate (Taiwan). This bar had an aroma with dried fruit, dragonfruit herbal tea and floral notes—and an interesting color and texture.

The flavor was full of lychee (what tasted like smoke-dried lychee fruit pieces, with a soft fruity chew) and subtle rose (Pintung organic roses) notes and crunchy cacao nibs. It was a fun and fresh bar to sample.

The chocolate had a slightly speckled or marbled gray-burgandy hue; and it was similar to other high-end white chocolate (albeit less sweet, thank you!) bars made with cacao butter, milk and, instead of cocoa solids, ground coffee or other finely ground seed or nut substitute (used to replace or add to the darker cacao solids).

Not to say these "white" bars aren't interesting. Some are quite tasty in a novel way.*

Due to its rather unique composition, it had a rapid, almost waxy, but not unpleasant, soft melt. To be clear, it also had real cacao nibs (pieces of cacao bean) sprinkled across the back of the bar, so it did contain cacao solids. (Otherwise it would not be featured here on Chocolate Banquet.)

*We've had bars with cocoa butter and very finely ground coffee beans that were so skillfully executed they could easily have been mistaken for a conventional coffee-flavored dark chocolate bar. We have also tasted other botanically-based white chocolate bars and confections made with a variety of ground seeds and nuts, including: ground Tonka beans (Dipteryx odorata—illegal in the U.S.), Cupuacu seeds (Theobroma grandiflorum), Carob pods (Ceratonia siliqua), Jaquar Cacao or Pataxte (Theobroma bicolor), and even Jackfruit seeds and Kola nuts.

Welcome to Day #6 of And Now for Something Completely Different Theme Week.

Lychee fruit has a unique, delicate, floral flavor. But, it's rare to see this fruit in U.S. supermarket produce sections, or in chocolate.

So, I was excited to find today's Lychee Dark Chocolate bar from Lindt and Sprungli AG (Kilchberg, Switzerland). This bar was part of the company's Exotic Fruit Collection. (Earlier this year I featured their Pineapple bar.)

I wondered whether the dark chocolate would overwhelm the delicate, complex flavors of this tropical fruit. However, it was the added flavoring that almost overwhelmed the relatively neutral dark chocolate.

The bar had a very sweet and almost artificial perfume aroma. The dark chocolate was smooth, sweet, and uniform in texture and flavor. Happily, a more natural lychee fruit flavor became more evident with the second or third bite. (The bar was made with lychee fruit pieces, as well as other natural and artificial flavors.)

I enjoyed being able to try this flavor blend; although I think I prefer lychee fruit a la carte.

I love chocolatiers who experiment with new flavor combinations. And Kee's offers the most wonderful flavor selection of macaroons (macarons) that I've seen to date. My three favorites were: 1.) Kaffir Lime (with chocolate filling); 2.) Passion Fruit (also with chocolate filling); and 3.) Rosewater Lychee (no chocolate in the filling). The kaffir lime and passion fruit were not overly sweet, and I could really taste the authentic fruit flavors. The tiny size of the ones I bought in the assortment bag meant I was able to taste more of them, which was great. (Note: Images above belong to Kee's Chocolates, and are from Kee's website.)
