Welcome to Day #3 of Chocolate and Flowers Theme Week.

Today's Pierce the Veil Dark Chocolate with Rose Lime Leaf and Ginger bar from Violet Sky (South Bend, IN) sounded very complex and ambitious.

Was this another delicate chocolate confection with rose essence? No. This bar had a bold underlying bean-to-bar chocolate base with the energy of a recently exploded constellation of flavors.*

Violet Sky Founder Hans Westerink produces a wide variety of craft chocolate bars (all swaddled in unique paper wrapper and colored foil wrapper combinations) with creative and interesting flavor blends and inclusions.

Today's Pierce the Veil bar's was made with a blend of Guatemalan cacao (Lachua) and Peruvian cacao (Maranon). And despite the distinctive flavor adds, the dark, fruity, acidic chocolate base shone through nicely.

Citrus notes were amplified by Kaffir lime leaf bits; and pieces of ginger dominated. The rose petals added some nice pink-purplish color to this riot of color, texture and flavor that were applied to this side of the bar. (It was all serious dark chocolate on the flip side.)

Tasting tip: If you want to taste the rose, choose a piece with less ginger (light golden-beige bits) and more of the pink (rose petal) bits.

Look forward to trying more Violet Sky bars, including those with barrel-aged components.

I loved this exotic, strangely refreshing Kaffir Lime Caramel bar from Coracao Confections (Emeryville, CA). Made with organic, raw coconut palm sugar, cashew butter and cacao butter, the caramel filling in this vegan, gluten and dairy free, bar was surrounded by 81% raw cacao dark chocolate. The combination of the dark chocolate and the coconut and the kaffir lime leaves was well executed -- the best of its kind that I've sampled to date.

The round-shaped Pignoli had a great dark chocolate ganache filling, and was coated in toasted pine nuts.

The second chocolate I tried today was the Kaffir Lime. I like this flavor. However, I noticed that the same Kaffir Lime chocolate tasted a little bit better a few days ago. I'm guessing warm summer weather may have degraded the taste of this flavoring slightly over a day or two. Fresh is usually best. I am sorry I couldn't carry home Champagne, Fennel, and many other flavors to try from Kee's. I will have to order some online, maybe when the weather cools down.

I like summer, and I don't much care for winter. I'm always looking for some things to like about the cold and gray season. Being able to ship chocolate back and forth with greater ease should definitely be on my Why I Don't Hate Winter list.

I love chocolatiers who experiment with new flavor combinations. And Kee's offers the most wonderful flavor selection of macaroons (macarons) that I've seen to date. My three favorites were: 1.) Kaffir Lime (with chocolate filling); 2.) Passion Fruit (also with chocolate filling); and 3.) Rosewater Lychee (no chocolate in the filling). The kaffir lime and passion fruit were not overly sweet, and I could really taste the authentic fruit flavors. The tiny size of the ones I bought in the assortment bag meant I was able to taste more of them, which was great. (Note: Images above belong to Kee's Chocolates, and are from Kee's website.)
