Goldkenn - 37% Swiss Milk Chocolate with Remy Martin Cognac Fine Champagne (bar) - Mar. 19, 2025

Chocolate of the Day

Goldkenn
37% Swiss Milk Chocolate with Remy Martin Cognac Fine Champagne (bar)
Good ++
Weight: 3.5 oz. (100 g.) in total bar
Calories: 500 calories in 1 bar
Cost: $16.99 for 1 bar
Purchased from: Worldwide Chocolate, online order

Welcome to Day #7 of Chocolate and Gold Theme Week.

Today's 37% Swiss Milk Chocolate was filled with pockets of Remy Martin Cognac Fine Champagne Syrup. It was "Swiss made by Goldkenn" (La Locle, Switzerland).

This bar was part of Goldkenn's Liquor Collection (chocolate bars filled with different spirits). The company also offers a Gold Collection that includes gold (chocolate) coins, gold bars, and even a gold van filled with...yes, gold chocolates.

Aroma and flavor notes for this cognac chocolate included subtle dark milk chocolate--that tasted a bit darker than many 37% cacao milk chocolates (less sweet, hurray!), while also having a very smooth flavor that I associate with fine Swiss chocolate.

The chocolate complemented the "Remy Martin Cognac Fine Champagne" syrup filling quite nicely. The syrup did contain real Cognac--a brandy (spirit distilled from wine) from the Cognac region in France. And each filled square of this bar had an authentic (slightly bitter, boozy) cocktail flavor.

Texture: Smooth mouthfeel. The bar was divided into eight, scored, 37% milk chocolate squares. Each square had a protruding dome that contained a flowing (liquid), cognac liqueur-like filling. (Note: Eat over a plate or a napkin if you want to avoid possible cognac drips.)

There was a small percentage of alcohol in this adult chocolate. And each filled square of this bar did have an authentic (very slightly bitter/strong) miniature cocktail flavor.

This bar paired well with a fruit plate. In keeping with the gold theme, golden tangerines added some extra sweet citrus sparkle.

Ingredients: "sugar*, cocoa butter**, cocoa mass**, Remy Martin(R) Cognac Fine Champagne (7%), whole milk* powder, skimmed milk* powder, butter*fat (milk), whey* powder (milk), emulsifier: rapeseed lecithin, natural vanilla extract. (* = Ingredients from Switzerland; ** Rainforest Alliance Certified). Made in Switzerland.

Allergen-related information: Contains Milk. May contain hazelnuts, almonds, walnuts, pecan nuts, cashew nuts, pistachio nuts, eggs, soya, wheat and barley. "This product may contain traces of coconuts."

Welcome to Day #1 of Chocolate and Ecuador Theme Week.

Ecuador produces a variety of cacao varieties (Forastero, Amelonado, Trinitario, Criollo, and more) for chocolate makers to work with, so this Ecuador-themed chocolate week spans a variety of chocolate aromas and flavors.

Today's 70% Ecuador grand cru noir (tablet/bar) was from Laderach Chocolatier Suisse (Ennenda, Switzerland).

This attractively packaged, single origin bar--made with cacao from "northern Ecuador"--was purchased in a local Lauderach chocolate shop in northern California.

Aroma notes included: subtle, sweet dark chocolate, with very faint warm spice and green-lemon herb (oxalis/sour grass, wood sorrel).

This well-tempered bar broke with a hard snap and had a very smooth, almost creamy melt and mouthfeel.

The overall/initial flavor was very chocolatey (brownie batter/fresh-baked, moist brownies) with faint, fleeting green-lemon herb (oxalis), warm floral spice (vanilla) and light earth notes. (I'm guessing this 70% dark chocolate was made using a Forastero/Amelonado cacao variety(ies).)

The cacao flavors were balanced with a moderate, well-managed complexity.

Ingredients: Cocoa paste, sugar, cocoa butter, Natural Flavors.

Allergen-related information: "May contain Egg, Milk, Other gluten (Incl. Wheat), Other Nuts, Soy."

Welcome to Day #12 of European Chocolate Vacation.

Today's Milch Milk Chocolate (bar) was from Laderbach (Ennenda, Switzerland).

Creamy and sweet, this bar was a luscious, thick milk chocolate. A bit too sweet for me, but milk chocolate lovers may appreciate this attractively-packaged, classic Swiss-style "Milch" (milk) offering.

Ingredients: Milk Chocolate, Cocoa 36% Min. Ingredients: Sugar, cocoa butter, whole milk powder, cocoa paste, skimmed milk powder, soy lecithin, Natural Flavor, Natural Flavors.

Gruezi, and welcome to Day #11 of European Chocolate Vacation Theme Week(s), with virtual visits to several European countries via chocolate.

Covid-19 has made travel more challenging; but, thankfully, imaginary travel via food (and a good import and distribution network in the U.S.) is possible.

Laderach is a family-run Swiss chocolatier based in Ennenda (Glarus), Switzerland. Fortunately, they recently opened a shop nearby. And instead of boarding a plane, I drove to this local Laderach outlet to buy some Swiss-made chocolate--including today's FrischSchoggi ("fresh chocolate") Dark Chocolate and Milk Chocolate Hazelnut pieces.

In lieu of a hike in the Swiss Alps, I took a great hike in the nearby California hills (green with recent winter rains) with friend and fellow travel lover, Toni. We were able to enjoy bites of these thick slabs of "fresh chocolate" from this Swiss chocolatier while enjoying mountain views of the Bay Area.

The aromas and flavors of both these chocolates (dark and milk) were infused with sweet cocoa and true hazelnut flavor. Whole hazelnuts played a starring role in both, adding a satisfying, hearty crunchy texture, and helping to off-set the sugar.

As expected, the dark chocolate was richer and deeper with more true cacao flavor (uniform, dark chocolate mousse, brownie, with almost invisible green and cherry notes).

The "Milch" milk chocolate was quite sweet and creamy, providing a lush, sugary backdrop for the whole (Piedmont) hazelnuts--which tasted like they'd been very lightly roasted and tumbled in a very thin (caramelized) sugar coating. Light sweet finish with hazelnut cocoa (creamy hot chocolate) notes.

Note: Ingredients listed below for these chocolates were taken from Laderach website.

Dark Chocolate (56%) Hazelnut slab Ingredients: Sugar, hazelnuts (30%), cocoa paste, cocoa butter, emulsifier (soya, E322), vegetable oils (rapeseed), natural flavouring substances, cocoa powder, colouring (E100).

Allergen-related information: Contained nuts (hazelnuts) and soy. "May contain egg, milk, other gluten (inclu(ding) wheat), other nuts."

Milk Chocolate (36% min.) Hazelnut slab Ingredients: Hazelnuts (31%), sugar, cocoa butter, whole milk powder, cocoa powder, skimmed milk powder, vegetable oils (rapeseed), emulsifier (soya lecithin, E322), natural flavour, natural flavouring substances, cocoa powder.

Allergen-related information: Contained nuts (hazelnuts), milk and soy. "May contain egg, other gluten (inclu. wheat), other nuts."

Welcome to Day #2 of Chocolate and Fruit Theme Weeks.

Today's 76% Tanzanie (Tanzania) Dark Chocolate and Banana (bar) and Black Trumpet Mushroom filled chocolate were both handcrafted creations from Raven Rising (Sudbury, Ontario, Canada).

The company is helmed by Chef Tammy Maki (a "proud Saulteaux Ojibwe Kwe from White Bear First Nation in Saskatchewan" (Canada)) and produces "Global Indigenous Chocolates" including high-quality bars and confections. Maki sources ingredients from Indigenous people and businesses whenever possible, and uses Barry Callebaut (Callebaut and Cacao Barry) chocolate(s) that are traceable back to their respective origins.

Tanzanie Dark Chocolate and Banana (bar)

Maki does a masterful job of selecting chocolate origins and blends to pair with her Indigenous flavor inclusions. The Tanzania dark chocolate used as a base for light and airy banana slices was delicious, with chocolate (deep dark chocolate brownie/torte), diffuse fruit (prune, fig cookie, berry, green banana), nut and green notes.

This relatively thick bar had a creamy, smooth texture with a substantial, satisfying mouthfeel.

The freeze-dried banana slices added a subtle, authentic and highly complementary, banana fruit flavor.

Ingredients: "Tanzanie 75% (unsweetened chocolate, sugar, cocoa butter, natural vanilla flavour), Freeze-dried banana (banana)."

Allergen-related information: "Contains: Soy."

Black Trumpet Mushroom chocolate
Mushrooms may be referred to as the "fruit(ing) body" of a fungi/fungus. But, they're not really fruits. However, mushrooms can make great flavor additions to chocolate(s).

The second Raven Rising chocolate featured today was a filled chocolate flavored with black trumpet mushroom (also called the black chanterelle mushroom). The Black Trumpet was described as having a "nutty/smokey taste that pairs perfectly with the chocolate." (I couldn't agree more. Then again, I really enjoy savory/umami chocolate flavors; so perhaps I'm biased.)

This creamy, filled chocolate was made with "Cacao Barry 70% Fleur De Cao" (blend) couverature chocolate. It had well balanced, very subtle savory (mushroom), subtle tart-sweet red fruit/sweet red wine grape, faint floral (vanilla) and nut, and rich chocolate (faint brownie) aroma and flavor notes. The umami flavor of the mushroom helped balance out the sugar in these sophisticated confections.

Welcome to Day #5 of Chocolate and Venezuela Theme Week.

Today's "Trinchera 74% (cacao), 48 hour traditional conche, Las Trincheras, Venezuela" bar was from Idilio Origins GmbH Premium Swiss Chocolate (Basel, Switzerland).

This bar had a pleasant chocolately aroma and flavor with faint balanced earth, green, nutty and fruit notes.

Maker's tasting notes read: ripe banana; mild, earthy notes; and tropical wood; a wisp of vanilla.

Yes, vanilla. So true. I missed that. The ingredients list: cocoa, cane sugar and cocoa butter. No vanilla listed. But the flavor note was there.

Welcome to the 2nd day of Chocolate and Hazelnuts Theme Week.

I have a fondness for hazelnut chocolates from Europe, so today's Swiss-made dark chocolate bar chock full of hazelnuts (31% nuts) made the "must try" list some time ago.

The Dark Crunchy Nut bar from Chocolat Frey AG (Switzerland) was both dark and milk chocolate. The bar contained milk and buttery, sugary crunchy bits, that added crunchy texture and sweetened up the unsweetened dark chocolate.

It was a very edible and satisfying bar.

Philip Marks - Milk Chocolate 38% Maracaibo Criolait bar - Oct. 7, 2016

Cost: $6.99 for 1 bar
Purchased from: Piazza's Fine Foods, Palo Alto, CA

Welcome to Day #7 of Chocolate and Venezuela Theme Week.

Are there milk chocolate bars that please the palettes of dark chocolate lovers? More specifically, can you still taste the flavor nuances of single origin cacao when there are high percentages of sugar and milk in a chocolate bar?

Yesterday, I tried a 49 percent cacao Venezuela milk chocolate bar from Belgium. And today, I sampled a 38 percent Maracaibo Criolait Milk Chocolate bar* from Philip Marks Chocolates (Burlingame, CA).

Today's milk chocolate bar had a sweet, caramel chocolate aroma, and a creamy, smooth melt and texture. Surprisingly, for a 38 percent cacao bar, the chocolate did maintain a slight fruit flavor.
The bar had a sweet finish that lingered a few seconds.

Philip Marks sources their chocolate from an unnamed high-end Swiss chocolate maker*, and uses "...Grand Cru couverture (chocolate) which is produced from pure single origin cacao."

I'm assuming that "Maracaibo Criolait" means that the beans were from Venezuela, and that the chocolate might have been from Felchlin (Switzerland). (The Lake Maracaibo region in Venezuela is known for its prized Criollo cacao.)

*Ingredients: "Cacao kernal, sugar, cocoa butter, skilled milk, whole milk, cream, emulsifier, madagascar vanilla"

Artisana - Venezuelan Criollo Dark 65% bar - Oct. 5, 2016

Chocolate of the Day:

Artisana Organics
Venezuelan Chocolate Cacao Criollo

Cost: $1.99 for 1 bar
Purchased from: Grocery Outlet Bargain Market, Palo Alto, CA

Welcome to Day #5 of Chocolate and Venezuela Theme Week.

This morning I tasted the third of three different dark chocolate bars from Artisana Organics—made in Switzerland from Criollo Cacao grown in Venezuela. These Artisana bars were distributed by Premier Organics (Oakland, CA).

The supply chain seems complex, but this three-continent
assembly process is not that unusual in today's world, chocolate or otherwise. The company buys organic cacao from Rainforest Alliance Certified farms in Venezuela and organic cocoa mass is blended with other organic ingredients (cane sugar, cacao butter and vanilla) in Europe, then sent to the U.S.

Today's bar was a Dark 65 percent cacao bar. Earlier this week, I tasted Artisana Organics Dark 75 percent and Dark 85 percent bars.

All three Venezuelan chocolate bars had pleasant (and slightly different) aromas. And all three were refreshingly light on sugar compared to other "dark" bars, and long on pleasing, fruit flavor. Unlike most bar brands, Artisana's two lower percentage bars were actually more impressive (likely because lower percent bars usually are drowning in so much sugar that flavors are overwhelmed).

All three bars had a smooth and even melt and texture, and these thinner bars ensured quick and even access to flavors in the chocolate.

Today's 65 percent bar had subtle, rounded, complex, almost floral, berry jam flavor notes. I believe "forest berry" was the term used in the tasting notes.

MilkBoy - Lemon and Ginger bar - Aug. 30, 2016

Welcome to Day #23 of Chocolate, Fruit and Botanicals Month.

Today's sunny Lemon and Ginger bar was from MilkBoy (Zurich, Switzerland). Sweet, creamy 33% cacao milk chocolate was stuffed full of lemony crunchy bits. I'm assuming the bits were tiny granules of candied ginger, with some twinkles of vanilla pod. The ginger flavor was very subtle.

This blend with essential lemon oil resulted a pleasant lemon cookie aroma and flavor, reminiscent of Lemon Snap cookies from my childhood. Dark chocolate aficionados may consider this more baked good than bar, but if you like the authentic flavor of lemon blended with milk chocolate it's worth a try.

Menrose - MilkBoy Milk Chocolate bar - June 23, 2016

Chocolate of the Day:

Menrose GmbH
MilkBoy Milk Chocolate bar
Good
Weight:  .7 oz. (20 g.) / 3.5 oz. (100 g.) in total bar
Calories: 110 calores in 1/5 bar
Cost: $6.49 for 1 bar
Purchased from: Draeger's, Los Altos, CA

Welcome to Day #5 of Swiss Chocolate Week. Yo-de-le-hee-hoo (as my mom used to say).

Today's MilkBoy "Finest Alpine" Milk Chocolate bar from Menrose GmbH (Zurich, Switzerland) was made in Switzerland and imported to the U.S.

The bar's packaging was adorned with the same charming black and white mountain scenes that were on yesterday's MilkBoy dark chocolate with essential pine oil bar.

This 33% cocoa bar was quite sweet with a thick and creamy mouthfeel. (The bar also contained sunflower lecithin.)

The 24% milk solids portion of this bar was achieved using whole milk powder. Because chocolate is somewhat hydrophobic (fear of water is not correct but will do here), and will seize up if water is added at the wrong time, (dairy) milk chocolate bars are created with milk powder.

It's the first week of summer. Perhaps the cows in Switzerland are already being guided up to higher alpine pastures. As part of a seasonal traditional to celebrate the ascent (and descent of the cows in September), villagers may dress up. Thus the picture of the milk boy (in traditional garb carrying a milk bucket over his shoulder) on the MilkBoy label.

Menrose - MilkBoy Switzerland bar with Pine - June 22, 2016

Calories: 220 calories in 2/5 bar
Cost: $5.99 for 1 bar
Purchased from: Draeger's, San Mateo, CA

Welcome to Day #4 of Swiss Chocolate Theme Week.

Today's 60% Cocoa* MilkBoy bar from Menrose GmbH (made in Zurich, Switzerland) felt a little more authentically Swiss. After all, the packaging was adorned with a black and white illustration** of villagers frolicking through a Tyrolian village somewhere in the Alps.

I'm sure of it. I can almost see the white Edelweiss flowers and smell the clean, pine-scented mountain air. The "MilkBoy"—dressed in traditional gear and carrying a milk pail on his back—is about to lead his cows up to higher pastures for the summer.

So, what was the very subtle hint of mint + mild floral citrus note I tasted in this bar?

I should have guessed. The dark Swiss chocolate bar was flavored with just the right amount of essential pine tree oil: enough to have some fun without being overpowering. So, a few extra points for the creative flavor infusion.

And speaking of fun, look at those goats up in those trees. And what are those two monkeys doing inside the Swiss chalet? Oh, wait, those are two cats with long curling tails. Never mind.

*This bar was made from Utz certified cocoa.

**The image on the packaging was the work of an artist skilled in the traditional art of papercut silhouettes (decoupaging incredibly carefully trimmed black paper shapes on white paper).

It's the beginning of our summer here in California, and I'm already hoping I can make a trip to the cooler Swiss Alps to check out local Swiss chocolates. Maybe next summer.

Welcome to Day #3 of Swiss Chocolate Theme Week. Most of the chocolates I'm featuring this week are Swiss-made for U.S. or International companies. Toblerone, part of Mondelez Global LLC, makes a variety of iconic triangular-shaped bars in Switzerland.

Today's Limited Edition Toblerone SnowTop offering—the Swiss Milk and White Chocolate with Honey and Almond Nougat bar—had the classic mountain range shape, a row of 12 perfectly aligned chocolate peaks fused together. The difference? This bar was topped with white chocolate "snow."

Creamy and crispy, this milk bar was quite sweet.

Truffili - Coconut Curry and Ginger truffles - June 20, 2016

This was Day #7 of a theme week devoted to India-inspired Chocolates, and Day #2 of Swiss Chocolate Theme Week.

Today I sampled the two remaining flavors in an India-inspired variety box of truffles, made in Switzerland for Truffili di Pellegrini (Point Richmond, CA): Coconut Curry and Ginger.

Of the two, the Ginger was my favorite. It was quite sweet, but had authentic tasting ginger flavor.

Truffili - India-inspired Cardamom and Chai Tea truffles - June 19, 2016

Chocolate(s) of the Day:

Truffili di Pellegrini

1.) Aromatic - Cardamom (milk chocolate) - Good
2.) Chai Tea - (milk and white chocolate) - OK +
Weight: .8 oz. (22.5 g.) / 3.2 oz. (90 g.) in total box of 8 pieces
Calories: 120 calories (estimate) for 2 truffles
Cost: $22.00 for 1 box of 8 truffles
Purchased from: Draegers, San Mateo, CA

Welcome to Day #6 of Chocolate and India Theme Week, and Day #1 of Swiss Chocolate Week.

Today's box of 8 Swiss-made*, India-inspired truffles included two each of 4 difference flavors: Aromatic - Cardamom, Chai Tea, Coconut Curry and Ginger. I sampled the first two today.

The Aromatic truffle, topped with a green floral graphic across the top, was my favorite of the two. Both were quite sweet and had a creamy (cocoa butter) melt and texture, but the authentic-tasting cardamom flavor shone through with this one.

I didn't taste any chai spices in the second truffle, which contained an infused milk chocolate ganache and was enrobed in white chocolate. I did pick up a slight sweet alcohol and bubble gum note though.

*These chocolates were made in Switzerland for Truffili di Pellegrini (Point Richmond, CA).

Note: These truffles contained glucose, maltodextrin and other ingredients that may not be suitable for very food-sensitive or gluten-free readers.

Toblerone - Swiss Milk Salted Almonds bar - June 10, 2015

Chocolate of the Day:

Swiss Milk Chocolate with Salted Caramelized Almonds and Honey and Almond Nougat
Good

Cost: $0.97 (estimate) (sale price)

Today was Day #2 of Chocolate and Almonds Theme Week.

Toblerone Swiss Milk Chocolate bars come in several flavors, including today's big Toblerone bar with the big (or at least long) name: "Swiss Milk Chocolate with Salted Caramelized Almonds and Honey and Almond Nougat" (bar).

The unique triangular shape of the Toblerone bar was developed in Berne, Switzerland, more than 100 years ago. The bar's resemblance to mountain peaks reminded me of the Swiss Alps when I was younger.

Note: The Toblerone brand is part of Kraft Foods.
