Today's Pumpkin Spice Dipped Waffle Cone - Crispy Cone in Dark Chocolate was from Raaka Chocolate (Brooklyn, NY).
Aroma and flavor notes for this tasty, seasonal treat included: chocolate, cookie, pumpkin, and pumpkin spice (cinnamon, nutmeg, ginger).
Every element of this chocolate was executed thoughtfully with quality ingredients. The maker's choice of single origin 54% cacao (Semuliki Forest, Uganda) gave this chocolate a bit of flavor depth and oomph that I liked. I also appreciated the pumpkin flavor (use of real pumpkin powder) and the authentic pumpkin spice(s).
Last, but not least, was the texture. This bar was a great blend of smooth, creamy dark chocolate and crispy-crunchy (flat) waffle cone/cookie. I loved the skillful waffle-cookie execution and texture achieved -- using rice and brown rice flours (plus other GF flours/seed meal, and a hint of apple puree for coherence).

Today's Blueberry Lemon 60% Cacao Unroasted Dark Chocolate (bar) was from Raaka Chocolate (Red Hook, Brooklyn, NY).
Cacao source: Kokoa Kamili, Tanzania. (Kokoa Kaimili "purchases freshly harvested cacao from over 4,000 farmers in the Kilombero Valley of Tanzania." And Raaka sources cacao from them.*)
Aroma and flavor notes included: deep, dense dark chocolate; earthy dark berry (blueberry, dark cherry); and bright citrus (lemon).
Texture: well-tempered (broke with a hard snap in a cold room); relatively smooth and creamy.
I liked that the whole dark, this chocolate wasn't too bitter. The blueberry and lemon (powders) tasted authentic and were thoroughly integrated with the dark chocolate. The lemon was indeed "bright and refreshing" and served to balance out the darker cacao and blueberry elements in this bar.
I also appreciated the short list of quality and organic ingredients.

Aroma notes included: dark chocolate, dark red raspberry, and very faint vanilla.
Texture: smooth dark chocolate and tiny crunchy bits. (The berry flavor was fully integrated, so there were no berry bits or seeds.)
Flavor notes included: dark chocolate with balanced bitterness, and subtle dark berry.
I enjoyed that this bar wasn't too sweet. This single origin (Kokoa Kamili, Tanzania) dark chocolate was relatively smooth in flavor, and tasted "darker" than its 59% cacao content might indicate. I also appreciated that the waffle pieces were gluten-free and were not too sweet. The berry (raspberry) and vanilla were authentic-tasting, background flavors.

Today's Day Break Functional 63% Cacao Dark Chocolate (bar) made by Raaka Chocolate (Brooklyn, NY).
Aroma and flavor notes included: dark chocolate (rich, chocolate-y, caramel); bright, dark ripe berry/berry syrup; sweet green (noccino); very faint wood and warm spice notes. This was a great morning, winter warmer chocolate.
Texture: smooth, almost creamy texture--with no detectable mushroom powder/grit (thank you!).
This blend was well executed, well balanced and full of appealing flavors. There were no "off" loamy notes, or strong bitter or acidic notes, or anything that tasted like fungi/mushrooms to me.

Today's while today's Coconut Milk 60% Unroasted Dark Chocolate (bar) from Raaka Chocolate (Brooklyn, NY) does not come from Hawaii (cacao origin is Uganda, Semuliki Forest), it did spark some fond Hawaii memories.
I enjoyed this Coconut Milk bar by itself, and then with two different Hawaiian coconut milk-based smoothies made with fresh banana, orange, guava and passionfruit. Today's virtual travel to Hawaii via chocolate and island fruits was inspired by the onset of colder, winter weather where I live.
Aroma and flavor notes for this bar included: dark chocolate (fudge, cocoa, dark chocolate milk); authentic, aromatic and sweet coconut (milk); and very faint, diffuse fruit (ripe red berry).
The texture was smooth, silken, cream-y. (Most coconut chocolate confections are loaded with sugar-saturated coconut. You won't find dry or over-processed coconut in this bar.)
Raaka's chocolates tend to be less processed, and feature bars like this one made with unroasted cacao. Why unroasted? The flavor can be milder/smoother as a result. And less processing of high-quality cacao is often associated with preservation of certain desirable flavor characteristics and nutritional properties.
I liked that this chocolate was gluten-free, soy-free, organic, and made with a short list of quality ingredients. For dairy-free and/or vegan chocolate lovers, Raaka offers some good options.

The cacao used to make this blend was from Kokoa Kamili, Tanzania, Africa.
Aroma notes for this blend included: sweet-tart red fruit (red berry) and dark, chocolate-y chocolate. Once blended together with hot milk, the resulting warm beverage had a relatively creamy melt and texture.
The balanced, subtle chocolate and cocoa flavors were accented with gentle warm spice, vanilla and faint coconut notes. A judicious dose of coconut sugar provided mild, balanced and warm sweetness. (Coconut milk powder also may have contributed to a relatively smoother, creamier mouthfeel than some other artisan cocoa mixes.)

Today's Pumpkin Swirl Unroasted Dark Chocolate 60% cacao bar was made by Raaka Chocolate (Brooklyn, NY), and included Oat Haus (maple-sweetened) Granola Butter.
Today's Pumpkin Swirl had a very subtle cacao aroma* with warm spice (maple, cinnamon, pumpkin pie and oatmeal) notes.
The dark chocolate was fully blended with the warm spice blend that was blended with a swirl white chocolate and pumpkin powder, adding even further flavor depth and complexity.
The spice-infused chocolate was sweet but the pumpkin powder, dark chocolate and perhaps some of the "butter" and spices helped balance the sweetness in the well-executed, overall blend. The pumpkin, spice and granola flavors played well together in this, and there were no off notes in this dairy-free and gluten-free bar.

Today's Lemon Coconut Meringue Unroasted Dark Chocolate 56% Cacao (bar) was from Raaka Chocolate (Brooklyn, NY). The company offers an impressive array of chocolate bars with flavor inclusions, made with single origin, unroasted cacao.
The cacao for this bar came from Zorzal Cacao, Dominican Republic. From what I could detect (from the mix of flavor notes), this was a smooth, deep dark chocolate base. The second ingredient of this bar was organic cane sugar, but the chocolate was remarkably un-sweet for a 56% bar. (A combination of buckwheat flour and coconut milk powder may have helped dampen the sugar.)
Aroma and flavor notes for this bar included: an aroma with slightly earthy coconut cookie/pie crust with faint dark chocolate and lemon/citrus. The flavors did evoke a less sweet pie--a bit of bright, authentic lemon meringue filling + subtle but pervasive coconut and coconut pie crust. Very small amounts of vanilla and cinnamon added warmth and very subtle pie flavors.

Today's Mango Mojito Unroasted* Dark Chocolate 68% Cacao (bar)--created by Raaka Chocolate (Brooklyn, NY)--was a nod to the Cuban Mojito (rum, sugarcane, mint, lime). No alcohol was detectable in this chocolate, but the flavors honored the spirit of this cocktail.
Aroma notes for today's limited edition ("first nibs"), spirited dark chocolate included: smooth, dark chocolate; tart sweet fruit (apricot, mango, pineapple, citrus); subtle green (mint, oxalis); and faint brown sugar.
Flavors for this well-tempered, 68% dark chocolate bar included dark, flavorful chocolate (with a hint of natural marshmallow sweetness and implied, fleeting floral vanilla).
Infused into this chocolate was a relatively subtle and balanced bouquet of accent flavors including fruit (mango, citrus) and green herb (mint). Tiny clumps of brown sugar adorned the back of the bar, and provided warmth and depth to the overall taste.
The cacao used to make this bar was from Tanzania (Kokoa Kamili). The mint and lime ingredients were seamlessly infused into the added cocoa butter that was in turn blended completely with the cocoa solids.
The texture was smooth (no crunchy fruit or botanical bits) and uniform, as you might expect from a freshly-made, shaken, sieved cocktail. And the sugar levels were relatively restrained, allowing the chocolate and the added mango mojito tribute flavors to be savored and appreciated.
This chocolate offered a sophisticated, restrained vibrance that seemed designed to break through winter to wish everyone a very Happy New Year's Eve, and Feliz 2022!

Today's French Apple Tart unroasted dark chocolate 67% cacao (bar) was from Raaka Chocolate (Brooklyn, NY).
The company offers a wide variety of bars made with cacao that is not roasted--a choice made to capture "the brighter, bolder, and fruitier side of cacao."
Aroma notes included bittersweet dark chocolate and diffuse fruit. The (unroasted) cacao used to make this dark bar was from Kokoa Kamili (cacao producers in Tanzania) and was relatively smooth in aroma, texture and flavor.
Flavor notes included subtle, tart fruit (apple and stone fruit (cherry) tart/pie) with floral (vanilla) and very faint (possibly implied) spice--all melded with dark chocolate that lingered a bit in the finish. It was easy to imagine sitting outside a cafe in Paris on a sunny autumn day, enjoying a luscious bit of tart apple fruit pastry--with flaky crust edges rimmed in dark chocolate.
The 67% chocolate had rich dark flavor (smooth, and not too sweet); and overall bar had a balanced, but relatively high (fruit) acidity, and low-medium (and quite smooth) bitterness.

Today's 70% Cacao Pomegranate Orange Unroasted Dark Chocolate (bar) was crafted by Raaka Chocolate (Brooklyn, NY)--with other flavor and sweetener inclusions from Just Date Syrup (San Mateo, CA).
Raaka makes their chocolate using fermented but unroasted cacao. Raaka does not used the term "raw" cacao as temperatures in the fermentation, mixing and fine grinding (e.g. melanging and conching) steps typically exceed 112 degrees (F) (44.4 degrees (C)).
The cacao used for this bar was from Zorzal Cacao (a fermentery, specialty cacao farm and bird sanctuary) in the mountains of the Duarte Province in the Dominican Republic.
Aroma and flavor notes for this bar included: dark chocolate (warm, rich cocoa) with faint tangy citrus and red fruit. These concentrated fruit flavors were subtle and well integrated into the dark chocolate and were more discernible in the flavor than the aroma.
During the tasting of this bar there were also balanced upticks of light earthiness and green notes, as well as very faint sparkles of authentic orange, dried fruit (date, plum), and pomegranate.
This bar had a fairly creamy, smooth texture, had smooth but interesting flavor complexity, and was not too sweet (thank you). It was sweetened with lower-glycemic** organic date sugar and Just Date's pomegranate molasses syrup, giving it a bit more flavor depth.
Maker's tasting notes: "Sweetened with date sugar and Just Date's pomegranate molasses, this bar blends tangy pomegranate with bright orange zest for a refined sugar-free treat."

*Hispaniola refers to the Caribbean island that encompasses both Haiti (to the West) and the Dominican Republic (to the East). Island nation neighbors include Cuba to the northwest of Hispaniola, and Puerto Rico to the southeast.
The Dominican Republic (DR) is larger than the U.S. state of Maryland, but smaller than West Virginia, and is home to more than 10 million people. It has varied terrain, including rain forests and mountains and areas well-suited to growing cacao.
Almost all DR cacao is shade-grown (under the canopies/leaves) of other trees, such as citrus, banana and avocado; and much of the cacao is Trinitario (variety).
**The date sugar was considered to be "lower glycemic," meaning this food item would be absorbed more slowly, and scores lower on the glycemic index (GI) scale. The result is that blood sugar does not spike as much or as quickly as, e.g., more processed/refined white sugar.
