Welcome to Day #5 of Chocolate and Tea Theme Week, featuring chocolate and tea pairings.

Today's Organic Chocolate 55% Cacao Coconut Milk with Coconut Palm Sugar (bar) was produced in Switzerland for Equal Exchange Co-op (West Bridgewater, MA).

Equal Exchange, a co-op owned company, has been building alternative supply chain relationships and focusing on fair trade and small farmers for many years. Their offerings include chocolate, coffee, and other packaged foods.

The ingredients used to make this bar were all grown by small farmer co-operatives around the globe. The organic cacao was grown in the Dominican Republic and Peru. The organic sugar was from Paraguay and Costa Rica. The organic vanilla was from Madagascar; and the organic coconut was from Sri Lanka and Indonesia.

This bar had notably thick, coconut (milk) creamy texture with rich, sweet, authentic toasted coconut, chocolate and brown sugar (aroma and) flavors. A hint of vanilla enhanced the sense of sweetness even more. This 55% cacao bar would be great for coconut lovers with a sweet tooth and/or those searching for a sweet diary milk chocolate alternative with a little extra flavor.

Tea Pairings

Pairing chocolate with wine, tea, coffee or milk(s), can be tricky. Ideally, one should not dominate or take the other chocolate or beverage flavor(s) sideways. The best pairings elevate each both items, resulting in delicious blend. 

I tried pairing today's coconut milk chocolate with the following tea-related items:

1.) Frozen Brown Sugar Boba tea and vanilla ice cream bar (from Taiwan)
2.) Chilled Hibiscus kombucha tea
3.) Warm chai tea (oolong tea, chai spices and chai spice-infused honey)
4.) Hot/warm grapefruit leaf tea

Once again, I found that frozen and chilled tea items dulled chocolate (bar) flavors. (Cocoa butter melts at around body temperature, at which point fats and solids start separating and, arguably, the zone where embedded flavors are most easily released and enjoyed.)

Today's coconut chocolate bar was also quite sweet (a bit of a challenge), ruling out many sweetened tea offerings as partners for fear of creating overly sugared blends. 

The pairing winner? Hot/warm fresh grapefruit leaf tea (think light green, lemon, and faint lemongrass notes). This will not come as a complete surprise to those who like Thai warm coconut milk and lemon grass (savory) soups or chilled lemongrass and coconut sugar drinks. The unsweetened, fresh grapefruit leaf tisane/tea added some flavor depth/lift in the form of light acidic fruit and green notes and balanced the inherent sweetness of this bar.

Ingredients: Fairly traded, organic coconut palm sugar; fairly traded, organic chocolate liquor; fairly traded, organic cocoa butter; fairly traded, organic coconut flakes; organic coconut milk powder (fairly traded, organic coconut milk, organic tapioca maltodextrin).

Allergen-related: "Contains coconut. May contain milk, peanuts, hazelnuts and almonds."

Welcome to Day #11 of Chocolate and Hawaii Theme Week.

Today's Ko'olaupoko O'ahu Island Chocolate 70% Cacao (Spring Harvest) bar was manufactured in Hawaii by Grass Shack Industries LLC/Manoa Chocolate (Kailua, HI).

What a great opportunity to compare two 70% cacao bars, both made from Hawaiian-grown cacao growing at the same location (Ko'olaupopo*, O'ahu Island), but harvested at two different times of the year (spring and winter). 

Today I'm featuring the Winter Harvest version of this bar. (Yesterday, I featured the Spring Harvest version of this bar.) 

This bar's aroma was slightly less green-forward, and had a more sweet dark chocolate and faint spiced fruit notes (peach, red berry). The green (green banana, green floral) was very similar to yesterday's (Spring Harvest) version. The melt and texture seemed thicker and creamier (fudgier).

The flavor of this (Winter Harvest) Ko'olaupoko bar also had a slightly more "uniform" taste and additional true dark chocolate (fudgey) and fruitiness (red berry/fruit, peach jam) and less pronounced green notes (green banana, floral and a very fleeting green nut/seed note) than its Spring Harvest sibling from the same location.

Manoa provided a helpful, side-by-side tasting wheel chart for the taster/consumer to record their own observations for the two 70% O'ahu bars in this tasting kit. I'm surprised I haven't seen an insert/card like this more often with other craft chocolate bars.

*Ko'olaupoko refers to a relatively small, windward district in Honolulu County, on the "east" shore of O'ahu. This district has some lush green areas where cacao grows (that are also near where this chocolate is made in Kailua).

This bar had an aroma had green (green banana, green floral, green tea) and a very slightly bittersweet dark chocolate and faint spiced fruit (peach, red berry) notes. The melt and texture was smooth and creamy. The flavor also had green notes and additional (less faint) fruitiness. There were very fleeting earthy green (and green nut/seed) notes in one bite. Overall the flavor was complex and appealing.

Welcome to Day #5 of Chocolate, Cherry and Berries Theme Week.

Today's small discs of dark chocolate with almonds and sea salt from TCHO Ventures, Inc. (Berkeley, CA) were made of 64% cacao and Fair Trade Certified ingredients. 

These discs were well-suited for experimenting with pairings with cherry and berry items. 
The first pairing was with a Kirschwasser (cherry brandy). The alcohol and cherry flavor seemed a bit too much, and altered and "flattened" the dark chocolate flavor, giving it a slightly artificial taste.

The second pairing item was a Chloe's frozen raspberry pop (raspberries, cane sugar and water). Also, not a great pairing, although both were good on their own. The temperature difference did not help.

The last pairing was with fresh blueberries (not pictured). This worked the best of the three, but the dark berry flavor made this chocolate taste like milk chocolate (quite sweet) in comparison. 

These discs are fine all by themselves. However, despite the lack of success today, they do seem well-suited to pairings, and experiments will continue with the rest of this package.

Welcome to Day #15 of South American Chocolate Theme Weeks.

Today we're featuring another* side-by-side pairing Sirene Artisan Chocolate Makers (Victoria, Canada). Unfortunately, a bad cold today has reduced my ability to smell and taste. My apologies to the makers for that.

73% Ecuador Bar
This bar, from what I could taste, was a well balanced bar with lots of true chocolate flavor, with more sweetness and brightness than yesterday's 100% Ecuador bar, due to the addition of cane sugar.

73% Madagascar Bar
The second bar had almost the same bright citrus and berry notes (raspberry lemonade) as yesterday's 100% Madagascar bar, and a slight brownie/cookie note toward the end. I'm tempted to say that some of the amazing fruit notes were muted by the sugar (and not by my cold).

Not only was it very interesting to do a side-by-side tasting of 100% versions these two origin bars, it was also great to compare the 100% with their 73% counterparts. As for my taste, if you have a great 100% bar, why dilute them with sugar? But, Sirene did such a nice job with all of these versions, that you can't lose either way.

Sirene founder, Taylor Kennedy, had traveled extensively (as a National Geographic photographer—my dream job) when he founded his chocolate workshop. To be a great photographer and traveler one must be lovingly observant and appreciative/respectful of details. These same traits serve one well in the art and considerable science of chocolate-making.

Sirene - 100% Ecuador + 100% Madagascar bars - Nov. 4, 2017

Welcome to Day #14 of South American Chocolate Theme Weeks. We're sampling bars from Ecuador this week.

Today's offering was a careful co-packaging of two different 100% cacao bars. These rare ultra dark bars contained just one ingredient: cocoa beans, and these two were ideal for a side-by-side tasting.

Both the 100% Ecuador Bar and the 100% Madagascar Bar were hand-crafted by Sirene Artisan Chocolate Makers (Victoria, Canada). The company makes small batches of direct trade chocolate, from beans grown on a limited group of cacao farms around the globe, in their custom workshop.

100% Ecuador Bar
The cacao beans used to make Sirene's 100% Cacao Ecuador Bar came from Camino Verde. A farm description follows:

"In Balao, Ecuador, farmer Vicente Norero treats his cacao beans like fine wine. After carefully nurturing the growth of his indigenous varieties of cacao trees, he harvests the beans and monitors the microbiology of the fermentation process. His exacting control of sugars and acids creates a rich and flavorful bean."

The Ecuador bar was described as having "rich, deep chocolatey" flavor. And, as promised, it was infused with true chocolate, deep cocoa, slightly bitter flavor. It had a very pleasing, homemade hot chocolate aftertaste. The bar possessed a deep ebony dark chocolate color.

100% Madagascar Bar
Sirene chose "fruity, citrus, raspberry-toned Madagascar beans" from Somia Plantation for this 100% Madagascar Bar.

"In the Sambirano Valley of Northern Madagascar, the Akesson family harvest a light red bean enriched by volcanic minerals and nutrients. With its strong fruity flavours, including hints of citrus and berry, this cacao is clearly a product of climate and soil and the special way it is fermented by a family who truly cares about chocolate and who has for many years."

In contrast to the deep chocolate 100% Ecuador Bar, the 100% Madagascar Bar was full of bright notes: very authentic fruit punch, raspberry lemonade, true citrus (not just generic "acidity"), with a wonderful, warbling complex fruit and cocoa finish. Even the color was a brighter, redder color than the Ecuador bar.

What a treat to try these bars, separately and together.
