Welcome to another chocolate alphabet week. Last year, I featured chocolates that contained names or items that started with A, B and C. This week, I'm covering D, E, F, G, H, I, J and K.

Today I'm celebrating the letter D with two chocolates.

D stands for Dark Chocolate
Yes, Dark chocolate is an easy choice for the letter D. However, dark chocolates and suppliers range from limited edition craft chocolate bars hand-made by small, bean-to-bar makers to high-volume confections churned out by large chocolatiers.

Dark chocolates are now available in every shape and cacao percentage one can imagine.

Chocolate in the U.S. is considered "dark" (semi-sweet or bittersweet) if it contains more than 35% cocoa solids. However, the percent you see listed on a label of a bar often refers to total cocoa content (cocoa solids and cocoa butter (fat)), so percentages don't tell the whole story.

However, there was no mistaking that today's 91% Extra Smooth Chocolat Noir bar was a dark chocolate bar. This was the perfect chocolate for a noir film screening on a dark January day as it turned out; but it also brightened the day considerably—part of the paradox of dark chocolate.

Handmade by L'Amourette Chocolat LLC (San Francisco, CA), this chocolate was made from Trinitario beans (Carenero Superior) that were "delicately roasted" and were conched (ground to make into a smooth, creamy chocolate) for up to 36 hours.

This complex and interesting 4-ingredient* bar had a dark forest aroma with notes of raspberry fruit and faint licorice spice, and a dark flavor with a range of deep fruit (fig) and spice notes with some very faint cacao funk in one small bite. There was very little cane sugar (a bit less than 9 percent) to distract one from enjoying this dark experience.

D also stands for Deser

Toni brought back today's Sweet Paradise Chocolatier (Hawaii) 6-piece variety box from a recent trip to (Maui) Hawaii—the only state in the U.S. where, at present, enough cacao trees are being grown to make chocolate in commercial quantities.

This box contained 2 solid dark, 2 solid milk and 2 lovely flowing salt caramel chocolates. Sweet Paradise offers chocolates made from Hawaiian-grown cacao and was founded by Melanie Boudar.


*The L'Amourette 91% Extra Smooth Dark Chocolate bar contained cocoa beans, cocoa butter, cane sugar and Bourbon vanilla beans. This chocolate was labeled as soy- and gluten-free.

Today at lunch, I drove to the San Francisco Bay shore. It was the week of "King" tides in California, the highest of the high tides this year (2012). Some paths, benches and signs at the water's edge were temporarily underwater.

It was cold and gray. Even so, I imagined that this seawater might be flowing toward us from Hawaii. Today was Day #5 of Chocolate and Hawaii Theme Week. As I contemplated this notion, I nibbled on a Dark Chocolate Coconut Ginger Kava bar from Hava Kava Hut (Kailua Kona, Hawaii), available through Sweet Paradise Chocolatier (Hawaii).

I cannot tell a lie, this bar tasted like it might have come from a soapy flavored plant made into a soda, and then infused into a 70% cocoa dark chocolate bar. Kava root is often ground up and served in half coconut shells, and is thought to create a mellow state of mind (and to help counter motion sickness). Kava flavor has been described as "dirty dishwater" and worse. Visitors to Hawaiian kava cafes often order their kava with POG (pineapple, orange and guava juice). The organic dark chocolate, ginger, coconut and vanilla in this Hava Kava chocolate bar helped cover up this taste.

So, did I feel more relaxed? Not that I could tell. But, the bar, made with kava from Vanuatu (an island nation in the south Pacific ocean), did help me enjoy a walk in the baylands, and a trip to a local zoo after that, where I visited with a happy bobcat and a peacock (not in the same cage). OK, maybe I was more relaxed.

Today was Day #2 of Chocolate and Hawaii Theme Week, and today's chocolate menu featured lava sea salt caramels from Sweet Paradise Chocolatier (Hawaii).

These chewy caramels were coated with chocolate and adorned with a sprinkle of Hawaiian black lava sea salt.

This past week I featured several mango + chocolate combinations. Today was the first day of "Chocolate and Hawaii" Theme Week, which included sampling pieces of dried apple banana, Maui pineapple, and dried mango -- all partially covered in Belgian dark chocolate, from Sweet Paradise Chocolatier (Hawaii).

As the weather outside turned to winter this month, I imagined touring a cacao plantation near a warm beach in Hawaii -- the only state in the U.S. where cacao is grown. Virtual travel to the islands, made possible thanks to the wonderful magic of chocolate.

Eighteen dollars may sound like a lot for an 8 oz. bag dried tropical fruit, but there were enough flavorful pieces to share with several chocolate fans and friends on a hike in a redwood forest today, with half a bag to spare. And this purchase was much less expensive than an airline ticket.

May you all find time to enjoy a bit of sweet paradise wherever you might be.

Chocolate is often mixed with fruit and alcohol. Today's chocolate truffle from Hawaii (from Sweet Paradise Chocolatier) combined local (Hawaiian) apple banana and Maui rum. The rum was not really detectable, but the filling tasted like authentic island banana.

Since today was Day #2 of Chocolate, Banana and Cherries Theme Week, I paired this banana and rum truffle with a tiny sip of homemade cherry syrup and kirsch (cherry liqueur) -- also good with chocolate and/or vanilla ice cream. A variant of this combination is likely to turn up later this week, in the form of an adult banana split.

Today was Day #6 of Chocolate and Coconut Theme Week. No better place to celebrate the fusion of these two flavors than a tropical island like Maui (Hawaii). Today's Coconut Truffle (with a sweet coconut ganache) and the Coconut Curry chocolate (with a nice savory sweet blend of coconut and curry spices) were from Hawaii-based Sweet Paradise Chocolatier.
