The Primal Chocolate Crunchy Caramel with Organic Coconut Sugar 85% Cacao (bar) was made by Eating Evolved (Setauket, NY). The company offers a line of Primal Chocolate bars, Coconut Butter cups, as well as customized chocolate bars.

Today's dairy and soy free, paleo, vegan, 4-ingredient, organic bar delivered a high-percentage (85%) cacao experience, with a very light touch of coconut and maple sugar sweetness and crunch.

Welcome to Day #5 of Chocolate and Coconut Theme Week.

Today's 100% cacao, three-ingredient* ultra-dark Midnight Coconut bar from Primal Chocolate (Setauket, NY) was made without added sugar.

But, wait; technically, the bar was not 100% cacao. It also included organic shredded coconut.

This Midnight Coconut bar had a pleasant, natural coconut aroma, and broke with a pleasing snap.
The coconut in this 100% cacao* bar gave the chocolate an almost crunchy texture.

The aroma of a 100% cacao bar can be deceptively (and sometimes shockingly) sweeter than its bitter flavor. That was the case here. The brain is expecting something sweet when it smells chocolate and coconut, and the actual signals it received after the first bite were anything but.

After the somewhat harsh bitterness, the finish was relatively more calm.

Welcome to Day #3 of Chocolate and Coconut Theme Week.

This dairy and soy free, paleo and vegan Signature Dark 72% Cacao bar from Primal Kitchen (Setauket, NY) was sweetened with organic coconut sugar.

The well-tempered chocolate (with the monkey peeking over the top of every other segment) had a slightly artificial note toward the beginning of the tasting curve, but otherwise was rich with some balanced, slight fruit/nut acidity.

Welcome to Day #8 of Chocolate and Almond Theme Week.

Today's Primal Chocolate Almond Sea Salt dark chocolate (72% cacao) bar was made by Eating Evolved (Setauket, NY).

First, I feel I need to make a few personal disclosures:
I prefer chocolate bars with five (or fewer) ingredients.*
I like a bar that can convey balanced sweetness with less sugar.
I believe "salt," if added, should not eclipse other flavors.
I will buy almost any chocolate item with a monkey on it.

This 72% cacao, coconut sugar sweetened dark bar resonated with the preferences mentioned above. It had smooth, authentic chocolate flavor, without a sugar buzz. It was dairy free, soy free, paleo, vegan, and organic. And while there was no explicit claim of this bar being gluten free, there were no gluten-containing ingredients listed on the label.

And, having a monkey on both label and bar did not hurt either.

*Today's bar contained five ingredients: organic cacao, organic coconut sugar, organic cacao butter, organic almonds, and Himalayan sea salt.
