Patric Chocolate - Sweet and Sassy Milk bar - Nov. 21, 2017

Chocolate of the Day:

Patric Chocolate
Sweet and Sassy Milk bar

Weight: 2.3 oz. (65 g.) in total bar
Calories: 345 calories (estimate) in 1 bar
Cost: $15.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Welcome to Day #2 of Milk Chocolate Theme Week.

Today's Sweet and Sassy Milk bar was created by Alan "Patric" McClure of Patric Chocolate (Columbia, MO). Alan has produced several award-winning dark milk (and dark) bars.

This creamy dark milk (46% cacao) chocolate bar offered sophisticated rich buttery caramel sweetness tempered with a touch of sea salt.

The bar was made with a short list of high-quality ingredients (organic cane sugar, organic cocoa butter, organic whole milk powder, cacao, sea salt).

Don't reach for this rich sweet and salty confection if you're overly hungry. It will completely vanish in minutes.

Patric Chocolate - Salty Sunflower Seed Bar - April 17, 2016

Chocolate of the Day:

Patric Chocolate
Salty Sunflower Seed Bar
Good ++
Weight: 2.3 oz. (65 g.) in 1 bar
Calories: 345 calories (estimate) in 1 bar
Cost: $15.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Welcome to Day #3 of Chocolate and Seeds Theme Week.

Today we focus on sunflower seeds in combination with chocolate. It's hard not to think of these bold yellow flowers as the spring weather edges toward summer.

I've seen dill pickle flavored sunflower seeds and bacon-flavored sunflower seeds in stores. But, the best use of sunflower seeds (or any seeds) may be when they're shelled, lightly roasted and salted, and then blended with high-quality chocolate.

Today's limited edition Salty Sunflower Seed Bar—from bean-to-bar maker* Patric Chocolate (Columbia, MO)—was a great example of such a bar. Organic sunflower seeds were very lightly salted, added some crunchy texture, and blended nicely with an expertly crafted milk chocolate base.

Sunflower history
The sunflower that yields most of our edible seeds (Helianthus Annuus) originated in North America. There is evidence that American Indians domesticated and ate sunflower seeds as far back as 3,000 B.C. (likely in Arizona and Mexico). So, technically speaking, some of these Indians might have sprinkled some ground sunflower seeds into their drinking chocolate. One never knows.

*Patric Chocolate is winner of 15 Good Food Awards for chocolate bars. Congratulations to Alan "Patric" McClure and team.

Patric Chocolate - Blood Orange 66 bar - June 18, 2015

Chocolate of the Day:

Patric Chocolate
Blood Orange 66 bar
Good ++
Weight: 2.3 oz. (65 g.) in 1 bar
Calories: 345 calories for 1 bar
Cost: $13.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #2 of Chocolate and Orange Theme Week.

The Patric Chocolate (Columbia, MO) Blood Orange 66 bar was suffused with a lovely, almost floral hint of blood orange essence (essential oil) from Aftelier Perfumes (Berkeley, CA). The base chocolate bar was smooth, almost creamy, and was uniformly flavorful.

If you'd like to order this bar, you should know that today's Blood Orange bar was made especially for The Chocolate Garage (Palo Alto, CA)*. So, try checking with them first.

*FYI, Patric Chocolate has moved to a rotating bar release schedule, where a smaller number of bars are released over the course of the year (and these bars usually sell out soon after the announcement is made). They also make bars for partners like The Chocolate Garage.

Patric Chocolate - Raspberry-Balsamic Pear bar - Feb. 9, 2015

Chocolate of the Day:

Patric Chocolate
Raspberry-Balsamic Pear bar
Good ++ - Very Good
Weight: .23 oz. (6.5 g.) / 2.3 oz. (65 g.) in total bar
Calories: 35 calories (estimate) for 1/10 bar
Cost: $11.00 (estimate) for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was the first day of Valentines Day Chocolates Week.

Alan ("Patric") McClure of Patric Chocolate  (Columbia, MO) makes great chocolate, and any additional ingredients tend to be carefully designed to create layers of flavor and to complement the underlying cacao. Today's Raspberry-Balsamic Pear bar was no exception.

This ambitious, and very well balanced combination of raspberry, balsamic vinegar and pear essence was lovely. The chocolate was very smooth -- almost creamy, with slightly tangy fruit and raspberry flavor at the beginning; and the subtle pear flavor kicked in as part of the finish.

The only problem, Patric bars sell out quickly. And, alas, any plans to rush out and buy this bar for a Valentines Day gift for yourself or others may be foiled. This batch may already be gone.

Thank you to my seat-mates on the flight home today for tasting help.

3,000 Chocolates - An Ethereal Celebration - Nov. 28, 2014

Chocolate(s) of the Day:

Today, the day after Thanksgiving, was a special day. It had to do with the number 3 -- or more specifically the number 3,000.

And, no, I didn't spend "Black Friday" buying a chocolate diamond ring for $3,000, or ordering the Snoozy Sleeper Chocolate 3000 (a chocolate colored fur rug, for dogs actually). I did not watch a B-movie about chocolate as part of a Mystery Science Theater 3000 re-run. Nor did I have lunch with musical star Andre 3000 (of Outkast) to propose a new chocolate song for him.

I did, however, eat my 3,000th different chocolate today -- a daily habit that began in 2006.
And, in keeping with today's numerical theme, I enjoyed three chocolates, from three different makers/vendors, from three different places, at different times today.

Restaurant 3000
I wanted to incorporate the number 3000 into a chocolate today. But, it's not like I could just find a place like "The 3000 Restaurant," right? Well, after a search, suggestion (Thanks John!), I found the "Restaurant 3000" -- a Bay Area establishment that focuses on fresh and local foods.

And, for breakfast, I enjoyed a rich, creamy and delicious chocolate panna cotta dessert from Restaurant 3000 (Menlo Park, CA).

Cost: $6.00 for 1 dessert/jar
Purchased from: Restaurant 3000, Menlo Park, CA

Restaurant 3000, located in Silicon Valley, specializes in local fare, fresh produce, and has a full menu for lunches as well as catered events.

Ethereal Bar - SweetE Organic
For lunch, I had the pleasure of sharing with family a great three inclusion bar: the Strawberries + Rose Petals + Pink Peppercorn bar from Ethereal Confections (Woodstock, IL). I picked up this bar at SweetE Organic (Mill Valley, CA), and part of Chocolate and Rose Theme Week.

Ethereal Confections
Strawberries + Rose Petals + Pink Peppercorn bar
Very Good
Weight: 1.5 oz. (42.45 g.) / 2.25 oz. (63.6 g.) in total bar
Calories: 225 calories (estimate) in 1.5 oz. (42.45 g.)
Cost: $6.00 (estimate)
Purchased from: SweetE Organic, Mill Valley, CA

This 66% cacao, bean-to-bar, dark chocolate bar was occupied by a shower of very pretty, pink inclusions; and it had well-balanced hints of strawberry and rose/floral flavor. The pink peppercorn was very subtle, allowing the more subtle flavors to shine. Thank you to Elana at SweetE Organic for pointing out these hand-crafted bars from the Chicago area.

Triple Ginger Bar - The Chocolate Garage
Last, but not least, I stopped by The Chocolate Garage (Palo Alto, CA) -- the home of many favorite chocolates. No, there was no Austin Healey 3000 sports car with a two-tone chocolate paint job in this garage. Just wonderful, great tasting chocolates with a happy supply chain. It was here that I picked up a Limited Edition Triple Ginger Bar from Patric Chocolate to celebrate another of today's "3"-related milestone. (I've already featured the Triple Ginger Bar earlier this month, but it was worth re-tasting and buying a few for gifts.)

I was also introduced to a great trio of chocolates from Franceschi Chocolate (Caracas, Venezuela) by chocolate curator extraordinaire, Sunita de Tourreil. Look forward to featuring these in a future Chocolate and Venezuela Theme Week.

Other Flights of Fancy x 3,000
If I'd had time, I might have flown to Paris or, more likely given time constraints, the Paris hotel and casino in Las Vegas, for a chocolate souffle. Or, I might have gone to the Bellagio (Las Vegas, NV) to see three chocolate items: 1.) the floor-to-ceiling chocolate fountain at Jean-Philippe Patisserie, or 2.) their chocolate holiday display -- like the giant gingerbread house (made with 1,000 pounds of (3,000) chocolate logs) that was created in November 2012. Or, 3.) perhaps, in a gluten-free world, I could have had a slice of a beautiful 3,000 calorie chocolate "ribbons and roses" celebration cake.

So many chocolates left to try. Perhaps I'll work in another chocolate fantasy trip for the next major milestone on my chocolate odometer -- my 4,000th chocolate, in August 2017.

Patric Chocolate - Triple Ginger bar - Nov. 3, 2014

Chocolate of the Day:

Patric Chocolate
Triple Ginger bar
Very Good+
Weight: 1.51 oz. (42.9 g.) / 2.3 oz. (65 g.) in total bar
Calories: 227 calories (estimate) in 2/3 bar
Cost: $12.00 (estimate) for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #3 of Chocolate and Holiday Spices Theme Week.

Ginger, cinnamon, nutmeg, allspice and cloves are all great holiday spices and together make a great blend for gingerbread, confections and drinking chocolate.

However, today's smooth and flavorful Limited Edition Triple Ginger bar, from bean-to-bar maker Patric Chocolate (Columbia, MO), focused on ginger alone.

This deep milk chocolate bar incorporated candied ginger chips, ginger sugar and ginger essential oil. A tiny hint of sea salt and lemongrass oil gave the ginger flavors a touch of complexity and depth.

Patric Chocolate - Browned Butter Bar - June 2, 2014

Chocolate of the Day:

Patric Chocolate
Browned Butter Bar
Good + - Very Good
Weight: .766 oz. (11.6 g.) / 2.3 oz. (65 g.) in 1/3 bar
Calories: 115 calories (estimate) in 1/3 bar
Cost: $10.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #2 of Chocolate and Butter Theme Week.

Butter has become more popular in recent years, as reports have surfaced that margarine isn't as healthy as it was once thought to be, and fats were deemed to be perhaps not quite the death knell that they were made out to be either. But, then again, a good solid majority of Americans continued their love affair with butter, without paying much attention to grim warnings.

Butter lovers now have something else to celebrate -- some new butter and craft chocolate combinations, such as today's glossy Browned Butter Bar from Patric Chocolate (Columbia, MO).

Dark chocolate with browned butter, brown sugar and sea salt. That's it. This bar was well balanced with fruit acid and tangy flavors from the chocolate and brown sugar and rich brown butter notes.

Calories: 172 calories in 1/2 bar
Cost: $9.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #5 of Chocolate and Peanut Butter Theme Week.

Patric Chocolate (Columbia, MO) produces a line of bean-to-bar, craft chocolate, single origin and flavored bars -- including limited release bars like today's Spicy Thai Peanut bar that I bought from The Chocolate Garage in Palo Alto, CA.

The base chocolate for this bar -- made from organic cacao beans and organic cane sugar -- had bright, fruit/berry notes that managed to shine through, even with Thai-inspired flavor additions like ginger-infused sugar crystals, roasted peanuts and habanero sea salt, competing for attention. The bar was soy and gluten free.

I envisioned eating this bar with spicy peanut butter sauce over chicken and rice, with pad thai and mango salad on the side.

Patric Chocolate - Red Coconut Curry bar - Jan. 8, 2014

Chocolate(s) of the Day:

Patric Chocolate
Red Coconut Curry bar
Good - Good +
Weight: .575 oz. (16.25 g.) / 2.3 oz. (65 g.) in total bar
Calories: 87 calories (estimate) in 1/4 bar
Cost: $9.00 (estimate) for 1 bar
Purchased from: Patric Chocolate, online order

Today was Day #8 of Chocolate and Coconut Theme Weeks. This afternoon it was time to spice things up with a piece of Red Coconut Curry bar from American handcrafted chocolate-maker, Patric Chocolate (Columbia, MO).

This (soy and gluten-free) dark chocolate (64% cocoa) "dish" was infused with lively ingredients (ginger sugar, lime, lemongrass) and a spicy kick (from smoked pimenton and arbol chiles). Thin shavings of coconut were nestled against the back of this interesting bar. The result: a fun ride and bar to share with others, with layered, exotic flavors -- that were competing with the chocolate a bit. Have a glass of water on hand for the chili finale.

Patric - Oatmeal Cookie bar - Dec. 18, 2013

Chocolate of the Day:

Patric Chocolate
Oatmeal Cookie bar
Very Good
Weight: .575 oz. (16.25 g.) / 2.3 oz. (65 g.) total bar
Calories: 86 calories (estimate) in 1/4 bar
Cost: $11.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #4 of Chocolate and Holiday Spice Theme Week; and it seemed like a perfect time to brighten up a cold, holiday morning with an Oatmeal Cookie chocolate bar, from bean-to-bar maker Patric Chocolate (Columbia, MO).

This Patric bar was made of sugar and spice and everything nice, including: organic maple sugar, oats, cinnamon, and vanilla. These ingredients were skillfully blended into (and laid on top of) a chocolate bar base, and yielded very tasty results.

I preferred this Oatmeal Cookie bar over an actual oatmeal chocolate chip cookie; but then again the foundation for this "cookie" was a well-crafted, rich and flavorful chocolate that came from one of the best New American chocolate makers in the Show-Me State,* if not the U.S.

*The Show-Me State is an historic, informal name for the State of Missouri.

Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #3 of Chocolate and Holiday Spice Theme Week.

I don't know how Alan "Patric" McClure at Patric Chocolate (Columbia, MO) hand-crafts such great chocolate bars with layered flavors; but it certainly was a pleasure to taste his Ginger Spice Limited Edition bar today.

You'll be rewarded if you can hold a piece of this bar in your mouth long enough to let the flavors unfold. I experienced the warming of the ginger, followed by a delicious gingerbread-molasses-cookie finish that took me back to childhood. (Ingredients included: cacao, ginger sugar, cocoa butter, cinnamon and vanilla salt.)

It was hard to think of better holiday dessert fare than these warming winter spices combined with great chocolate.

Patric Chocolate Holy Mole! bar - Oct. 22, 2013

Chocolate of the Day:

Patric Chocolate
Holy Mole! bar
Very Good
Weight: .76 oz. (21.45 g.) / 2.3 oz. (65 g.) in total bar
Calories: 114 calories in 1/3 bar
Cost: $8.99 (plus shipping for online orders)
Purchased from: Patric Chocolate (online order)

The thing about great chocolate is that I enjoy it so much more, and I'm satisfied with so much less. An apparent contradiction, but not necessarily so when it comes to well-crafted chocolates. I stopped after eating "only" 1/3 of today's bar, and enjoyed lingering notes of chocolate, chilies and cinnamon.

Alan "Patric" McClure, of Patric Chocolate (Columbia, MO), and his crew, know their way around well-crafted chocolate -- largely because they've been meticulous about quality, with each step in the chocolate-making process -- from sourcing the right cacao beans to finishing with fine flavor additions.

Today's Patric Chocolate's Holy Mole! smooth, dark chocolate bar contained a flavorful blend of fairly traded cacao from Papua New Guinea and Ghana; Spanish smoked pimenton from La Vera, chilies de arbol; cinnamon; and a hint of vanilla salt. This perfectly balanced melange of flavors played off each other beautifully.

The Holy Mole! bar was a collaboration with Zingerman's (a well-known deli and group of family-owned, food-related businesses in Ann Arbor, MI).

Patric - Black Licorice bar - Sept. 2, 2013

Calories: 114 calories (estimate) in 1/3 bar
Cost: $8.99 for 1 bar
Purchased from: Patric Chocolate, Columbia, MO

Today was the last day (Day #7) of Chocolate and Fig Theme Week, and I indulged a whim to pair chocolate with licorice and figs.

The result: a plate of fresh figs marinated in Pastis (a French anise flavored apertif), sherry, saffron-infused honey and lemon peel -- paired with pieces of a Black Licorice Bar from American craft chocolate maker, Patric Chocolate (Columbia, MO).

Patric Chocolate's Limited Edition (from July 2013) licorice bar was full of flavor and smooth in texture. This bar was infused with organic anise seed, house-made licorice extract from organic licorice root, and a touch of sea salt. The bar was soy and gluten free.

Patric Chocolate - Mizzou Crunch - Aug. 10, 2013

Chocolate of the Day:

Patric Chocolate
Mizzou Crunch bar
Good+ - Very Good
Weight: .766 oz. (21.9 g.) / 2.3 oz. (65 g.) in total bar
Calories: 114 calories (estimate) in 1/3 bar
Cost: $10.00 (estimate) for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #2 of Chocolate and Music/Audio Theme Week. There are many ways to define this week's theme. While one can make musical instruments from chocolate (molded items, chocsimiles of musical instruments), this week I'm also focusing on audio or music inspired by chocolate and/or the tasting arc of a given chocolate.

The Mizzou Crunch bar from Patric Chocolate (Columbia, MO) combined a high-quality dark milk chocolate bar base with crunchy chopped peanuts, cacao nibs, and a touch of salt. Throughout the tasting arc, these flavors formed a well balanced and interesting and satisfying blend.

This bar was a tribute to the University of Missouri, thus the black and gold colors and tiger stripes on the packaging. I could almost hear the school song ("Old Missouri") playing as I ate this bar. Go Tigers go!

Patric Banana Split bar - Aug. 5, 2013

Chocolate of the Day:

Patric Chocolate
Banana Split bar
Good+
Weight: 1.15 oz. (32.5 g.) in 1/2 bar / 2.3 oz. (65 g.) in 1 bar
Calories: 173 calories (estimate) in 1/2 bar
Cost: $10.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Patric Chocolate (Colombia, MO) conjured up today's limited edition Banana Split chocolate bar.

The chocolate did not contain milk, but had a rich, creamy texture from the addition of peanut butter and organic cocoa butter.

The bar was decorated with sliced banana chips, on the back of the bar, and a bit of sea salt helped enhance the nut and fruit flavor mix.

I was tempted to pair this bar with some bright berry/cherry, fruit notes, but likely this would have overcomplicated things.

Today was Day #4 of Chocolate and Banana Theme Week.

Patric Chocolate, The BOSS bar - July 31, 2013

Chocolate of the Day:

Patric Chocolate
The BOSS (bar)
Good ++ - Very Good
Weight: .766 oz. (21.66 g.) in 1/3 bar / 2.3 oz. (65 g.) in total bar
Calories: 115 calories (estimate) in 1/3 bar
Cost: $free bar for future chocolate holder purchase
Purchased from: The Chocolate Garage, in Palo Alto, CA

Alan "Patric" McClure of Patric Chocolate (Columbia, MO) has put the "craft" in American handcrafted chocolate. It is with eager anticipation that I try new Patric Chocolate bars.

Today's limited edition* bar, The BOSS, was no exception. Salty milk chocolate with an even sprinkling of crunchy Rio (Caribe) cacao nibs.

A bit of added cocoa butter and milk powder made this bar very smooth, while still maintaining much of the pleasing, bright flavor associated with Patric's darker bars.

The nibs were embedded (at just the right depth) into the back of this bar. Tiny, high-quality, crystalline shards of cocoa bean, none too sharp, the nibs crunched down to wonderful bits of rich and concentrated cacao flavor.  There was just enough salt to round out and enrich flavors, not too much. Another winner from Patric.

Today was Day #6 of Chocolate and Cacao Nibs Theme Week.

*Note: This bar was made several months ago for The Chocolate Garage in Palo Alto, CA, and continues to be very popular.

Calories: 87 calories (estimate) in 1/4 bar
Cost: $11.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Welcome to Day #5 of Chocolate and Ginger Theme Week.

The minute I sliced open the plastic wrapper that enveloped today's bar, I was treated to the smell of good chocolate. I would happily try almost any Patric Chocolate (Columbia, MO) bar for one reason: Alan 'Patric' McClure does such a masterful job crafting his chocolate, from bean to bar. Add a few high-quality flavors or "additions" to this already fine chocolate, and the stage is set for a great bar.

Authentic-tasting sparkles of ginger sugar dominated the first few bites of this Patric Limited Edition dark milk chocolate bar. The lemongrass essence was, initially, more diffuse and served as a fragrant backdrop until the latter part of the tasting arc. That was fine with me, as I was busy enjoying the ginger. Subsequent bites of this (soy and gluten free) bar see-sawed gently back and forth between lemongrass and ginger.

(Apologies: Pictures to follow later this week.)

Cost: $12.00 for 1 bar
Purchased from: The Chocolate Garage, Palo Alto, CA

Today was Day #4 of Chocolate and All Things Orange Theme Week.

Apricots and plums (prunes) were farm crop royalty back in the days of "The Valley of Heart's Delight" where I live. Today this area is largely paved over, and better known as the Silicon Valley. The old apricot trees are all but gone, but thankfully this sweet orange fruit with a zing still shows up in jams and confections -- and in bars like today's Anya Apricot Bar from Patric Chocolate (Columbia, MO).

Fortunately, a few months ago, I squirreled away this seasonal bar, made with Anya apricots that were meticulously placed on a base of subtley salty milk chocolate. While this milk chocolate was better than most available, I still found myself missing the flavor arc in Patric's slightly darker bars.

I was inspired, to at least think about, other chocolate and apricot combinations; e.g., pairing lightly infused apricots (with orange blossom water or brandy) with one of Patric's salty signature 70% bars, alongside a small bowl of toasted, very lightly salted, marcona almonds and hazelnuts. Once again, the combinations with chocolate are almost endless.

Calories: 333 calories (estimate) in 1 bar
Cost: $8.00 total bar
Purchased from: The Chocolate Garage, in Palo Alto, CA

I love tasting dark chocolate bars with two or three ingredients. This is gutsy chocolate making! Those two or three ingredients have to be good.

Fortunately, Alan "Patric" McClure of Patric Chocolate is a talented new American chocolate maker, and he has crafted an interesting 67% cacao dark bar from Madagascar beans. The bar had some of the characteristic of acidic/citrus fruits, maybe a bit of ripe blueberry that are often associated with beans from this part of the world.

Today was Day #6 of Madagascar Chocolate Theme Week.
