Today's Bachelor's Hall Estate 85% Jamaica (bar) was from Monsoon Chocolate LLC (Tucson, AZ).
Subtle aroma and flavor notes included very faint chocolate (chocolate pudding/mousse) molasses spice, fresh green stalks, green tea, caramel and fresh-baked bread and butter.
This chocolate was very approachable, friendly and intriguing. It would be very hard to find another 85% cacao bar so low bitterness and acidity. It was quiet mild, but had a well-executed, well-balanced, whispered complexity, with no detectable "off" notes.
