Welcome to Day #13 of Chocolate and Jamaica Theme Week.
Today's Bachelor's Hall Estate 100% Jamaica (bar) was from Monsoon Chocolate LLC (Tucson, AZ).
Subtle aroma and flavor notes included very faint chocolate (chocolate mousse) molasses spice, green tea, faint caramel and very faint, fresh-baked bread with butter and honey and peach jam.
This chocolate was wonderfully approachable for a 100% cacao bar. This was similar to the 100% bar from LetterPress earlier this week (and yesterday's 85% bar from Moonsoon Chocolate). All three were made from cacao from Bachelor's Hall Estate*--and all three were low in bitterness and acidity, but not flavor. Today's 100%er had very mild, balanced green + fruit acidity, and possessed a well-executed, well-balanced subtle complexity, with no detectable "off" notes.
