Welcome to Day #4 of Chocolate and Ecuador Theme Week.

Today's Guayabilla Chocolate Bar 65% Cacao was made by Mashpi Chocolate (Quito, Ecuador); and imported and distributed by Andean Ecocrafts, LLC (Reno, NV).

The cacao variety used to make this bar was "Cacao Nacional Fino de Aroma."

The Guayabilla fruits (Eugenia victoriana) from Colombia and Ecuador (also known as "sundrops") are tart (sometimes described as having notes of passion fruit and/or eucalyptus) that are rich in Vitamin C. They are related to the Surinam cherry (native to NE South America).

Aroma notes included: slightly peppery tart-sweet fruit and dark chocolate.

Texture: smooth dark chocolate with a pleasing melt, interspersed with very small, dehydrated, tart-sweet fruit pieces--that were full of bright and complex flavors.

After taking a few bites, I was launched into a different universe -- feeling the joy of the newly discovered. The tasting notes that follow are the ecstatic rantings of a novelty seeker. 

Tasting notes included: tangy and tart-sweet, then the guayabilla + chocolate shimmered its way through peppery; very faint menthol; and then a combination of flavors that included dried persimmon; bittersweet white grape/golden raisins; candied red bell pepper and green bean; candied watermelon and mango; golden berries; goji berries; and a few notes that I couldn't quite identify. A remarkable fruit. The chocolate provided a rich, smooth flavor base for this fruit to really shine.

I loved tasting this guayabilla fruit for the first time. What an impressively complex and flavorful fruit -- that also paired so well with the smoother, darker and richer cacao.

Aloha, and welcome to Day #6 of Chocolate and Hawaii Theme Week.

Today's O'ahu Island Waimanalo 70% Dark Chocolate (bar) was from Manoa Chocolate (Kailua, O'ahu, HI). 

The cacao beans used to make this bar were grown on the makers' farm on O'ahu--making this not just single origin, bean-to-bar chocolate, but also single island, tree-to-bar chocolate from Hawaii. It was exciting to taste this. It's quite an accomplishment for those few makers in the U.S. (almost all in Hawaii) who have the work ethic, desire and know-how to pull this off.

Aroma notes included: green (maple), fermentation (fermented, bright fruit - grapes, goji berries, faint pineapple and even fainter sweet tangerine), followed by sweet green dark chocolate again.

The flavor notes resembled the aroma notes listed above. In addition, there were lots of rich, smooth chocolate notes (fudge brownie), more bright, naturally sweet and nuanced layers of fruit, and faintly green/maple, sweet earth notes.

Manoa maker's description: "Waimanalo is a small town just 15 minutes from our Kailua based factory. It is home to our very own cacao farm, a parcel with about 130 mature cacao trees. In 2021 we had three bountiful harvests from this orchard, providing us with enough cacao to make the first Single Origin Waimanalo Bar -- grown and made by us!"

Manoa suggested beverage pairings: Wine: Dry Rose; Beer: Berry Lambics; Liquor: Gin

Chao mung (Welcome) to Day #1 of Chocolate and Vietnam Theme Week.

Today's Lam Dong* Single Origin, Dark Chocolate 70% Cacao (bar) was made in Vietnam by Belvie Chocolate Maker (Ho Chi Minh City, Vietnam). Belvie offers a variety of chocolate bars made from cacao grown in southern Vietnam, including some with Vietnam-inspired flavor additions.

The aroma of today's bar was hard to pin down but it had fruit, herby-spice (liquorice, faint star anise), and warm, mineral earth/clay/adobe notes.

This 70% bar offered an enjoyably complex and interesting flavor ride, with warm spice (Five Spice blend); generic fruit sweetness/acidity; very faint, brief light vegetable (light savory: cucumber + potato); cocoa--followed by a longer stretch with upticks of coffee, bright fruit spikes (predominantly red raspberry, but also nectarine, kiwi) and earth. 

For those who enjoy experiencing layered flavors and parfait desserts, this chocolate would be a unique addition to a chocolate tasting platter. 

Belvie chocolate maker's notes: "...Chocolate made of beans from Lam Dong has a fruity quality, but here the top notes are kiwi, raspberry and (l)iquorices (sic) aroma and an intense chocolate flavor that lingers on the palette."

Welcome to Day #2 of Chocolate and Nicaragua Theme Week.

Today's 70% Nicaragua La Colonia (bar) from Triangle Roasters (Philadelphia, PA) was well executed and complex. Its shimmering aroma and flavor notes held my attention, and sparked joy, from start to finish. 

The aroma was delightfully multi-layered with very faint green tea latte, light sponge cake, brown sugar, light spice (cinnamon, vanilla), subtle fruit (goji berry, golden raisin) notes. A few minutes later there was a very faint umami/savory (leather, mushroom) note.

The bright chocolate flavor was fruit-forward (ripe boysenberry--a cross between a raspberry and a blackberry) with a fleeting but balanced earthy nut (walnut) note. A pleasant fruity tartness bloomed (into tart cherry) after the first chew and lingered into the long finish, that ultimately ended with a polite, earthy nut note. 

The maker's notes read as follows: "toffee, blackberry, hazelnut."

Ingredients: Cacao, cane sugar.
