Welcome to Day #4 of Chocolate & India Theme Week.
Today's 70% Dark Bourbon India (bar) was from Tres Gallos Chocolate (San Jose, CA and Pescadero Baja Sur, Mexico). Tres Gallos is a woman-owned and family-run company has been making micro-batch, single origin chocolates since 2018.
Aroma and flavor notes included dark chocolate (full-bodied, with a balanced astringency), sweet green, wood-aged spirits, with some malt in the finish.
Texture: This well-tempered bar broke with a hard snap and had a relatively smooth melt and mouthfeel.
I liked the complexity of flavors and the hard snap. And I appreciated the short list of quality and organic ingredients.
Ingredients: Organic cocoa beans, organic sugar, cocoa butter, trace amounts of bourbon.
