Today's Caramelized Goat Cheese 58% Dominican Republic (bar) was from Standout Chocolate (Goteborg, Sweden).
The makers chose to use cacao from Oko Caribe in the Dominican Republic and used Getmese ("a traditional Swedish food") made from "goat's milk whey that has been boiled down and caramelised."
Aroma and flavor notes included: smooth, sweet (caramel) dark chocolate (rich, chocolate-y, slightly earthy) with very slight tangy sweet, very light umami (mild, sweet cheese).
