Today's Black Pepper + Clove 60% Cacao (bar) was from Intrigue Chocolate Co. (Seattle, WA).*
Collaboration with Aluel Cellars of Seattle, WA.

The cacao used to make this bar was "mostly Trinitario and Amelonado" (cacao varieties) from Uganda (Region: Rwenzururu; Semuliki Forest; Harvest year: 2022.)

Aroma and flavor notes included: smooth dark (chocolate-y) chocolate, bright black pepper, citrus, red wine/sangria, and clove. It was a bit on the sweet side for me; but rather than dampen the spices and chocolate too much, it added an uplifting brightness. 

Texture: smooth dark chocolate with a buttery melt

I liked the rich, well-balanced complexity, and the long satisfying flavor finish. This chocolate was designed by a chef; and it would make a great after dinner chocolate, dessert pairing, possible red wine pairing**, or a decadent warmer-upper to take on a hike/walk.

**Maker's tasting notes: "Aluel's full-bodied flagship "Coat of Arms" (a Bordeaux-style red wine) can stand toe-to-toe with a little heat, and plays well with the lingering fruitiness and tongue-tingle spiciness in this chocolate bar."

Today's 60% Uganda (Semuliki) bar was from Chocolate Spiel (Seattle, WA).

Aroma notes for this attractively "painted"* chocolate were relatively faint and included: smooth dark chocolate and very faint, diffuse fruit.

Texture: smooth and creamy, with a buttery melt.

Flavor: appealing sweet dark chocolate (chocolate-y), sweet, light, diffuse, slightly tart fruit. Relatively low in bitterness, and the natural fruit sweetness was well-balanced--gently tart without being too acidic.

Maker's tasting notes: "dates, fig and raisin"

Today's Uganda Kisinga 78% Cacao (bar) (Batch 000000022124) bar was made by Intrigue Chocolate Co. (Seattle, WA).*

The cacao used to make this bar was "mostly Trinitario and Amelonado" (cacao varieties) from Uganda (Region: Rwenzori, Kisinga microlot). Harvest year: 2022.

Aroma and flavor notes included: a relatively faint aroma, but the dark chocolate (true chocolate-y) flavor was rich and satisfying as were the subtly complex secondary notes: mixed citrus (orange, kumquat, Meyer Lemon, candied pink grapefruit) marmalade, toasted nuts (Brazil nut, almond butter), dates; and very faint, very fleeting herbal-floral (almost jasmine).

Texture: smooth dark chocolate with a satisfying melt, with a very small amount of balanced dryness/astringency toward the finish.

I enjoyed the chocolate-y flavor and relatively subtle complexity in this bar and appreciated the opportunity to try this Kisinga Uganda cacao (micro-batch bar). I found myself leaning forward and going on a tasting treasure hunt through a tropical forest when I tried this chocolate.

The sweetness level (78% cacao) seemed like a good choice for dark lovers. The cacao had natural fruit sweetness (and well-balanced tartness, acidity, and characteristics of a fine Trinitario cacao). Less cacao and more sugar might retain a sense of citrus brightness, but mask some valuable/interesting flavor nuances.

Maker's tasting notes: "This origin yields chocolatey dense/rich flavors of baked dates, candied lemon and grapefruit peels, and almond butter."

Today's M.B.P.* Uganda Distinct Flavors By Origin: Mango, Banana, Pineapple (bar) (Harvest: 2022, Batch #10) was created by Hapa Chocolat, LLC (Los Gatos, CA) using cacao from Uganda (Semuliki Forest) and three fruits that mirror naturally occurring cacao flavors.

Aroma and flavor notes include: dark chocolate and tropical fruits (pineapple, banana, mango and cacao pulp/fruit).

Texture: smooth dark chocolate with a slight crunchy granularity (finely ground, likely freeze-dried fruit particles) that all melted/chewed down together nicely by the finish. 

I enjoyed: 1.) the texture and flavor arc; 2.) authentic fruit flavors that mirrored/complemented naturally occurring cacao (fruit pulp) flavors; and 3.) the short list of ingredients.

Welcome to Day #10 of Chocolate, Cardamom & Ginger Week, and Day #1 of Chocolate & Uganda Week.

Today's Cardamom and Rose (Batch 000000072524) 60% Cacao bar was made by Intrigue Chocolate Co. (Seattle, WA). (Note the company is moving soon to Chisholm, MN.) Intrigue offers some great spice blends, so I was happy to be able to feature them this week.

Cardamom and ginger are members of the same family (botanically speaking); yet, it's hard to find them together in chocolates in the U.S. -- except for lovely, India-inspired chai spice blends. So this theme week has included several "either" cardamom "or" ginger spiced chocolates--allowing each spice sibling to shine on its own.

The cacao used to make this bar was "mostly Trinitario and Amelonado" (cacao varieties) from Uganda (Region: Rwenzori, Kisinga microlot). 

Aroma and flavor notes included: smooth dark chocolate with sweet, fragrant spice (cardamom), sweet floral (rose, attar), and very faint citrus (sweet orange peel) and nut (almond, hazelnut). (Note: there were no nut ingredients listed for this bar.)

Texture: smooth dark chocolate with some mild dryness (mealiness/astringency). It was not clear whether the dryness was coming from the cacao or the rose petals, or both. (I don't think it was the green cardamom seeds, but I can't be sure.)

I liked all three flavors (dark chocolate, rose and cardamom); they tasted authentic and were individually appealing. There was a sense of balanced liveliness about this bar; but the flip side was that they seemed to not completely settle down with each other completely; perhaps because of the slight astringency/dryness. 

Ingredients:  Roasted cacao nibs, raw cane sugar, cocoa butter, rose petals, green cardamom seeds.

Welcome to Day #9 of Chocolate, Cardamom & Ginger Theme Week.

Today's 95% Dark Chocolate Wicked Dark Ginger (bar) was made from bean to bar by Taza Chocolate (Somerville, MA).

Aroma notes for this "perfectly unrefined" bar included: dark chocolate (drinking chocolate), fresh baked bread and ginger.

Texture: stoneground ultra-dark chocolate and candied ginger bits. These two were fully blended into each other, but the chocolate was less refined/processed (not velvety smooth). Why stonegrind cacao other than it is a time-honored technique? More flavors tend to be preserved with stoneground/less processed chocolate. Some will love this. Others who prefer softer, more diffuse end results may not. 

Flavor notes included: ultra-dark, relatively bitter (initially quite strong) chocolate, but with pleasing (almost, but not quite fully integrated ginger); however, as long as you're not ultra-sensitive to bitter flavors, you may enjoy this bar more than you think you would. Just eat this bar slowly. The bitterness tends to recede after the first few bites and you'll find authentic cacao and ginger flavors that melt together and are worth the time.

I appreciated being able to taste this 95% organic dark chocolate bar. Sometimes I prefer a small piece of very flavorful, high-percentage (cacao) dark chocolate--as long as it's balanced, without all the sugar. Would I include this in a chocolate tasting for the general public? Probably not. This one might be too much for more delicate palettes, or for those seeking sweet solace.

Welcome to Day #8 of Chocolate and Ginger Theme Week.

Today's Ginger Lime - Cuban Baracoa 70% Dark Chocolate (bar) was from / made by Willie's Cacao Ltd (Uffculme, UK and Copenhagen, Denmark). 

This travel inspired, bean-to-bar chocolate was made using cacao from (Baracoa) Cuba. 

Aroma notes for this bar included: lime, chocolate and very faint warm, island spice (ginger).

Texture: pleasantly smooth and fudge-y with tiny slightly crunchy bits of crystallized (I'm presuming) candied ginger and maybe candied lime peel. The overall textural blend was well-balanced, and seemed just right to release the layered flavors in this chocolate. (They all melted down together in a pleasing way.)

Flavor notes included: an upbeat blend of smooth dark chocolate, tangy sweet lime, subtly spicy ginger and faint honey.

I literally felt happy after tasting this chocolate. 

Ingredients: "cocoa mass, raw cane sugar, crystallised ginger 12% (stem ginger, sugar), cocoa butter, essential lime oil 0.1%". (Cacao solids 70%)

Today's Limited Edition Gingerbread Hot Cocoa Drops were from Ritual Chocolate (Heber City, UT).

Aroma and Flavor notes included: rich, sweet cocoa, and faint spices, and vanilla (marshmallow).

Texture: The oat milk chocolate covered drops/pieces were light with fluffy (marshmallow) in the middle.* Once made into hot cocoa (with added milk of your choice) there was a light, marshmallow layer that floated to the top.

I liked the light, cocoa with marshmallow and spice flavors. (I also added some extra cinnamon, ginger and cardamom as I prefer a bit more spice.) 

*Note: these hot cocoa "drops" can also be eaten as a sweet snack without adding anything.

Welcome to Day #6 of Chocolate and Ginger Theme Week.

Today's package of Dark Chocolate (70%) Candied Ginger (pieces/strips) was from Ranger Chocolate (Portland, OR).

Aroma notes included: authentic ginger (warm spice) and dark chocolate (rich, warm drinking chocolate).

Texture: the ginger had just the right amount of chewiness (not too soft/gelatinous and not too tough); and the dark chocolate was smooth with a nice melt.

Flavor notes for these attractive, sugar-bejeweled confections included: prominent warm and authentic, spicy ginger (that wasn't too spicy) and dark chocolate (that coated only about 1/4 of the ginger pieces--along the long edge of each strip). 

I liked the ginger and dark chocolate flavors. My only quibble was: I wanted to taste more of the chocolate. The focus was on the candied ginger. And it was tasty, authentic, sweet ginger. But, I would have loved tasting more of the 70% dark chocolate.

Today's Gingerbread Rooibos Chocolate Bar was made (from bean-to-bar) by The Chocolate Conspiracy (Salt Lake City, UT).

This chocolate was "crafted with organic, unroasted, single-origin Peruvian cacao beans and sweetened with raw, unfiltered honey."

Aroma and flavor notes for this herbal tea-infused dark milk bar included: dark chocolate (relatively smooth, subtle herbal (tea), honey; faint, diffuse fruit (very faint pineapple, papaya, mango); and very faint earth and nut (walnut). 

This bar was also fairly low in bitterness, acidity and astringency. 

There were faint, diffuse spice notes; but it was hard to make out any ginger (that may have inspired the "gingerbread" (rooibos) in the product name.

I liked the 1.) smooth, luxe texture; 2.) the subtle, diffuse tropical fruit and floral honey notes; and 3.) the relatively short list of authentic, less-processed, quality ingredients (no emulsifiers or "Natural Flavors").

Welcome to Day #9 of Chocolate & India Week; and Day #2 of Chocolate, Cardamom and Ginger Theme Week.

Today's thoughtfully-produced and delicious duo: 1.) Spice Cake Ecuador (bar) from Hapa Chocolat, LLC (Los Gatos, CA), and 2.) Cocoa Cardamom Chai tea latte beverage distributed for Sunwise Farms (Oakland, CA), contained high-quality ingredients sourced from at least three continents.

Aroma and flavor notes include: Boston brown bread--a sweet cake-like moist (steamed) bread typically made with molasses, flour and corn meal and raisins); smooth and subtly flavorful dark chocolate (made with cacao from Camino Verde, Ecuador); and fresh salted butter. It was very tasty.

Texture: well-tempered; this bar broke with a hard snap. There was a slight granularity (finely ground spice brittle) in the mouthfeel. It was similar to a well-executed, very slightly rougher, stone-ground chocolate, where everything melts down smoothly together by the finish. There was no spice "grit" or other residual texture once that happened. Best of both worlds -- all the flavors; but, without distracting tiny particles in the final melt phase.

I enjoyed the texture arc, the spices, the short list of ingredients, and the match between the Ecuador cacao and the rich, warm spice flavors.

Ingredients: Chocolate (organic cacao, cacao butter, sugar), Spice Brittle (organic sugar, cinnamon, cloves, salt, ginger)

Kathas Coconut 

For decades I searched to find items that blended cacao/chocolate with chai tea flavors. Happily, there are more options now. But, I still rejoiced recenlty when I saw this can in the refrigerated section at a local grocery store.

Today's Kathas Coconut-Milk Latte - Cocoa Cardamom Chai with Black Tea and Spices was a chilled chai beverage in a can that was locally(Oakland, CA) distributed for Sinwise Farms. 

The tea and cardamom used to make this chai beverage were sourced from Kerala, India. (The Kathas makers obtained the cardamom from their family farm.)

Aroma and flavor notes included: beautifully aromatic sweet cardamom and chai tea and mild cocoa (high-grade chocolate milk). (Note: there was no dairy milk in this bar, just a touch of coconut milk.)

Note: this beverage can be consumed hot or cold. (I drank it cold.)

I liked: 1.) the well balanced flavors; the authentic and nuanced cardamom and other spices; 2.) the addition of the chocolate (cocoa) that added very complementary flavor depth); 3.) the delicate use of coconut milk; 4.) the sweetness level (sweet, but not too sweet); and 5.) the fact that the black tea was there, but the overall astringency and bitterness levels for tea and cacao were quite low--making this a friendly, comforting as well as refreshing spiced tea coconut milk latte.

While the list of ingredients for this chai was long (I'm not a fan of phosphates, gels and gums), the overall flavors tasted smooth and full-bodied and very delicious. The cardamom was the star of the show.

Welcome to Day #8 of Chocolate and India Theme Week; and Day #1 of Cardamom and Ginger Theme Week.

Today's Cardamom 60% Cacao (bar) from Madhu Chocolate LLC was made in Austin, TX.*

For the past several years, the company has offered chocolates and confections with traditional Indian dessert-inspired flavors.

In today's bar, single origin cardamom seeds from Guatemala were ground into Tumaco Colombia cacao and sugar.

Aroma and flavor notes included: smooth dark chocolate and fragrant cardamom. I loved the very pleasing, authentic and well-balanced cardamom spice flavor in this bar. 

Texture: well-tempered (broke with a snap) and smooth. The cardamom was fully incorporated into the chocolate. There was no spice grit; i.e., there were no discernible spice particles.

And the well-tempered and executed 60% dark chocolate was smooth in flavor and relatively sweet -- both traits that would make for an excellent, exotic cup of cardamom hot chocolate, a dark chocolate truffle, or other chocolate and cardamom dessert (torte, mousse, cake, etc.).

Today's Bon-fiction "Order of the Dark Roast" 91% dark chocolate (bar) was made from tree-to-bar in India, and imported and distributed by Godavari Chocolate Inc. (Folsom, CA).

The cacao used to make this bar was "hand-picked from farms in the Godavari region of Southern India."

Aroma notes for this single origin 91% bar included: faint dark roast cacao/dark chocolate and subtle and relatively pleasing umami and roasted notes (faint oven-roasted/barbecued earthy greens).   

Flavor notes for this India-grown and made chocolate included: rich, roasted ultra-dark chocolate, with a subtle sweetness, followed by some balanced tart and bitter notes which peaked and then rapidly receded and lingered at a much lower level into a relatively long and pleasant ultra-dark finish.

The texture was smooth and relatively buttery/creamy with a very tiny bit of (surprisingly little) astringency in the finish.

I enjoyed this more than the 99% "Eclipse of the Senses" dark bar (that I tasted yesterday) from the same maker. Just a little sugar (and possibly a different batch/roast profile) made this 91%er a more balanced bar. I like trying dark roasts, as long as I can still enjoy some balanced complexity in the cacao.

Today's 91% "Order of the Dark Roast" bar was fun to try. This chocolate may still be too bold and bitter for some. But, just like wine, and many other things in life, not everyone will agree on what's "best" or even taste chocolate in the same way.* 

As for me, I enjoyed several small bites, consecutively, each more inviting than the last. (That first bite was a bit like jumping into cool/cold water--a little brisk.) I liked that I could taste some additional and pleasing chocolate-y (cocoa) and then very faint spiced hot chocolate notes in the finish after 3-4 bites. 

Savor small pieces...slowly. I also advise exposing this chocolate to open air for 10-15 minutes, after you open the sealed inner package, and before eating. (Yes, that's right; it's like certain very bold red wines. It may need to "breathe" a little first.)

Today's Bon-fiction "An Eclipse of the Senses" 99% dark chocolate (bar) was made from tree-to-bar in India, and imported and distributed by Godavari Chocolate Inc. (Folsom, CA).

The cacao used to make this bar was "hand-picked from farms in the Godavari region of Southern India."

Aroma notes were roast-y and chocolate-y, and relatively subdued. The intensity arrived with the first bite. The flavor notes for this single origin, tree-to-bar 99% cacao chocolate included: ultra-dark chocolate; with relatively tart (yogurt), bitter and roasted wood and earth notes.

The texture was smooth and relatively buttery/creamy. (Note: Often there is added cocoa butter, on top of what is present with the cacao beans being used in ultra-dark bars. Surprisingly, there was no added cocoa butter listed on the ingredients. I consider that a brave choice with very bold, dark cacaos like this (with strong Trinitario + Forestero qualities.)

"The Eclipse of the Senses" was a fitting name for this bar. There were very few subtleties here. But, just like an eclipse, at the very end you feel the light from the Sun/Moon coming back again. 

I could imagine small quantities of this almost unsweetened chocolate being used with other, sweeter, flavors (sauces, meats, specific vegetable dishes, spirits, smoothies/shakes, dried fruits, affogatos, etc.)--to provide some interesting contrast or flavor depth.

I liked that this was tree-to-bar chocolate (made "in country" in India where the cacao was also grown); the short list of (two) ingredients; the unapologetic darkness (in small doses); and the faint mellower chocolate note(s) that popped up briefly at the very end of a long finish.

Today's 72% India (bar) was from ChocolateSpiel (Seattle, WA).

The word "Spiel" can refer to a game or a pitch. Colorful chocolates from Angi at ChocolateSpiel (Seattle, WA) convey pure fun that she is sharing with us through her wide range of bean-to-bar chocolates and confections. (At least five of her bars that I've tried were made with single origin cacao beans without flavor inclusions.)

Aroma notes for this beautifully-painted* India bar were relatively subtle (dark chocolate with very faint fruit).

Texture: smooth, almost creamy

Flavor notes included smooth. flavorful and well-balanced tropical fruit (mango) and stone fruit (peach). It had pleasing fruit complexity with very faint (also pleasing) botanical notes. 

The 72% dark chocolate was fruity without being too acidic. And it was sweet without being overly so.

I enjoyed the single origin (India) cacao flavors and the pretty visual appearance. And I appreciated the small bar (single serving) size and the short list of ingredients.

The cacao used to make this bar was "hand-picked from farms in the Godavari region of Southern India."

Aroma notes for this coconut mylk bar included: smooth, slightly fruity dark chocolate. The flavor notes were a richer version of these same aroma notes. There was a small, unexpected but tasty, uptick in spicy chili in one or two bites. And there was a pleasing, diffuse and faint tropical fruit (mango, cacao fruit/pulp) note. 

The coconut mylk and sugar flavors were pleasing, authentic; not too strong and not overly sweet (thank you!). (This was not your chain store coconut chocolate bar.)

The texture was very smooth, and fairly creamy/buttery.

I enjoyed the authentic, balanced and smooth cacao and coconut flavors, and the relatively low levels of acids/tannins and bitterness.

Aroma and flavor notes for this single origin, tree-to-bar chocolate included: rich dark chocolate with faint tropical fruit (mango, cacao fruit); honey; and a balanced, very faint, fruit (grape) muskiness and maltiness. The levels of tannins/acids and bitterness were all relatively low in this bar.

The texture was smooth and relatively buttery/creamy with a very, very mild fruit (grape or mango level) astringency. 

I liked the balanced, subtle sweet fruit flavor notes and the short list of quality ingredients.

Today's 51% Cacao Teh Tarik tea-infused milk chocolate was made by Fossa Chocolate Pte Ltd (Singapore). The company offers a variety of high-quality tea chocolate bars that draw from some of the best single origin tea and cacao traditions.

Teh Tarik ("hand pulled" or "pulled tea" in English) is a popular Malaysian style tea created by pouring hot black tea and condensed milk back and forth, until the two are fully integrated. 

To create a dark milk chocolate version of this beverage, the makers sourced fine cacao (from Hacienda Limon, Ecuador) and Pine Smoked Darjeeling Tea (from Gopaldhara estate in India).

Aroma and flavor notes for this bar included: complex sweet black tea, condensed milk/Thai iced tea, faint floral, brown sugar, spices and sweet pine resin; and balanced, flavorful milk chocolate.

Texture: creamy and smooth

I loved the Darjeeling tea notes in this rich, luxe milk tea bar. I wondered if the tea notes were somewhat subdued by the milk and sugar.

I reminded myself that the milk and sugar may also have masked some astringency, bitterness or tannins. But that too was unlikely, given that these "bolder" aspects were all but missing in this chocolate,

I also appreciated the short list of high-quality (and single origin) ingredients.

Today's 54% Dark Milk - Earl Grey Lavender (bar) was made by Fossa Chocolate Pte Ltd (Singapore).

This 54% milk chocolate was made using "((biscuity) Tanzanian cacao from Kokoa Kamili fermentery Semuliki Forest organic cacao"; and the lavender flowers used were from Germany.

Aroma and flavor notes included: dark milk chocolate (drinking chocolate/rich dark creamy cocoa); floral (aromatic lavender); very faint, diffuse tart fruit (apple, citrus); and barely detectable earth, and balanced tea astringency.

Texture: smooth; and creamy. And this chocolate became creamier the longer it was melting my mouth.

I liked: 1.) the short list of quality ingredients; 2.) the authentic lavender floral taste; 3.) If you like floral flavors, specifically lavender, and chocolate, I recommend giving this bar.

This chocolate was "crafted with organic, unroasted, single-origin Peruvian cacao beans and sweetened with organic coconut palm sugar."

Aroma and flavor notes for this tea-infused dark milk bar included: dark chocolate (relatively dark, bold but balanced, with very faint earth); and subtle infused spices (star anise, clove, cinnamon, citrus (orange peel tea), and faint herbal/fennel*). 

I liked the 1.) small quantity of milk that contributed to a smoother texture, but didn't muffle the cacao and spices--flavors that were mellowed, not overwhelmed; 2.) choice of coconut palm sugar (that added warmth, helped slow/minimize the sugar buzz); and 3.) short list of authentic, less-processed, quality ingredients (no emulsifiers, "Natural Flavors").

Today's 56% Dark Milk Osmanthus & Golden Berries (bar) was from Fossa Chocolate Pte Ltd (Singapore).

The cacao used to make this bar was from "Paquibato Village in Davao City" in the Philippines. 

Tiny white Osmanthus flowers also contributed flavor to this dark milk chocolate. These fragrant blooms are used to flavor oolong, green, black and herbal teas, and tea blends. The tiny blossoms have a lovely, sweet, apricot-like scent.*

Aroma and flavor notes included: dark chocolate (bold but balanced), tart sweet fruit (golden berries, sweet, sun-dried tomato, golden raisin, dried apricot), faint floral, and very faint (barely detectable) earth.

Texture: smooth, creamy dark chocolate and chewy pieces of dried golden berries.

As with every Fossa Chocolate bar I've tasted to date, the flavors in this chocolate were very well-balanced, well-integrated and executed, and authentic. Their choices of single origin cacao(s) and teas--as well as fruits, spirits and unique botanicals). Single origin and high-quality ingredients really do matter.

The Osmanthus used in this bar came from Southern China. (It also grows near where I live in California. Its perfume emanates from a tall green hedge with tiny clusters of ivory-colored flowers. The scent is strong and alluring on some days, and dormant on other days.)

Welcome to Day #3 of Chocolate and Tea Theme Week.

Today's Jasmine Green 51% - Drifting Snowflakes (bar) from Fossa Chocolate Pte Ltd (Singapore) was part of the company's Tea Chocolate collection.

The cacao used to make this bar was from Hacienda Limon in Ecuador. And the jasmine green tea was sourced via Pekoe & Imp (a collaboration partner focused on specialty, single origin teas).

Aroma and flavor notes included: intoxicating jasmine floral; green tea (clear/clean mineral, botanical); and subtle sophisticated milk chocolate. 

The jasmine green tea floral notes (from the Bi Tan Piao Xue traditional green tea from Sichuan Province in China harvested in spring, layered with jasmine flowers that bloom in summer) lingered into a long and satisfying finish.

This 51% cacao bar was relatively sweet -- think sweet milk tea; but the high-quality tea and chocolate flavors were excellent and well-balanced.The green tea (and to a lesser extent cacao) polyphenols (tannic acid, astringency); and very slight, fleeting bitterness (from cacao and tea) were both well-managed and buffered by the milk in the chocolate and relative high-quality of the ingredients.

Loved the floral and green tea flavors, as well as the smooth texture with a creamy melt and mouthfeel. But, more than that was a glimmer of chocolate magic, where nuanced complexity jumps up to the next level.

With skilled precision, execution and balance, one might be able to surf two ("double up") waves, almost at the same time. This is the sensation I had with this bar. (Surfing in on an elegant catamaran might be a better analogy.) I felt like I was simultaneously sipping an excellent tea and nibbling on a high-quality chocolate. I love floral tea flavors and chocolate magic moments like this.

This 53% milk chocolate was made using Hojicha roasted Japanese green tea from Kyoto and "Ugandan Semuliki Forest organic cacao."

Aroma and flavor notes included: subtle dark milk chocolate, and lovely roasted (almost malty) and floral tea notes.

Texture: well-tempered chocolate with a thick and luxurious creamy melt and mouthfeel.

I really enjoyed the: 1.) sophisticated, complex tea flavor notes, 2.) very smooth, creamy dark milk chocolate, and 3.) well-executed and almost perfectly balanced chocolate--made with a short list of quality ingredients.

Today's Milk Tea Toffee Brittle was from NeoCocoa (Belmont, CA).

NeoCocoa founder and chocolatier, Christine Doerr, has produced a line of very tasty chocolate covered toffees and treats since 2008 (and probably before then). See previous entries on Chocolate Banquet.*

Aroma notes for today's toffee brittle included: subtle dark milk chocolate; tea with milk and sugar; faint botanical (citrus, seed) and floral (bergamot orange blossom, and (imagined) very faint, sweet lavender).

Texture: generously-sized, shards of (crunchy then chewy) toffee brittle were covered in smooth milk chocolate.

Flavor notes: smooth, creamy milk chocolate, authentic buttery toffee (browned sugar, butter, vanilla), and very faint seed and botanical (tea with bergamot). The Earl Grey (bergamot orange) tea flavor became more prominent toward the finish, and continued (in a most pleasing way) into an extended finish. I loved the progression of the tea flavor. 

As with all NeoCocoa toffee brittles, this Milk Tea flavor was addicting. Be forewarned. If you're overly hungry, this toffee in this package will disappear almost immediately.

Welcome to Day #13 of Chocolate and Hawaii Theme Week.

Today's Dark Chocolate 70% Cacao "Grown in Maui" (bar) was manufactured by Maui Ku'ia Estate Chocolate Inc. (Lahaina, Maui, HI).

This dark bar was made using locally grown cacao. from Maui. It's also a rare example of a "made in country" (from tree to bar in the U.S.) chocolate. Hawaii is a special place in many respects; it's also one of the only U.S. states with the optimal climate and soils to support cacao trees.

Aroma notes included: dark chocolate with sweet green botanical; subtle diffuse tropical fruit (mango) and date), faint floral and barely detectable ripe white wine grapes/cacao pulp.

This 70% chocolate had a rich, balanced and authentic dark chocolate flavor with bright, diffuse tropical fruit (mango, cacao pulp, sweet white wine grapes) notes; and faint, fleeting floral oolong tea and then more fruit in the relatively long finish.

Goldilocks zone achieved. (It was not too strong, bitter or sweet. It was just right.) The chocolate was full of sophisticated, subtle flavors; and it had a pleasing natural fruit sweetness* rather than a sugar-y sweetness (thank you!). 

I really enjoyed the balanced complexity and natural bright fruit sweetness in this Hawaiian dark chocolate--thoughtfully made with just three ingredients.

Dark Chocolate 65% square

Aroma and flavor notes for this smooth-textured 65% dark chocolate included: dark chocolate (dark ganache/torte, cocoa); slightly acidic but balanced fruit (citrus); and barely detectable balanced, bittersweet, cream, clean mineral and fleeting floral/oolong tea notes.

Dark Milk Chocolate 60% square

Aroma and flavor notes for this creamy, smooth-textured dark milk 60% square included: rich, creamy (hot chocolate/drinking chocolate), nuanced (and very slightly milk-buffered) cacao complexity.

What did I like? The genuine robust, well-balanced and gently complex cacao/dark chocolate flavors in the dark chocolate square; and the rich taste and creaminess (with cacao flavor depth) in the dark milk chocolate 60% version. 

Both these chocolates were good. The former was well-executed, flavorful and not too sweet (thank you!); and the latter is a dark milk chocolate that I think will likely please both dark and milk chocolate lovers.

Today's Dark Milk Chocolate Calamansi 60% Cacao squares were manufactured in Hawaii by Maui Ku'ia Estate Chocolate Inc. (Lahaina, Maui, HI). 

Company founder and CEO Gunar Valkirs set up a farm with the intent to share net profits with the community, and they have done so. They offer chocolates (like this one) made using cacao from Costa Esmeraldas, Ecuador--and chocolates made with Hawaiian cacao.

Today's individually-wrapped chocolates (squares) were part of a attractive, 48-piece assortment box featuring 1/2 Dark Chocolates and 1/2 Dark Milk Chocolates--almost all with different flavor infusions.

There was also a darker sibling (Dark Chocolate 65% Calamansi) square in this assortment. However, because I'd already featured the dark chocolate 65% version (in a Chocolate and Lime themed week), the Dark Milk 60% version appears by itself today.

Aroma notes for this dark milk chocolate included: subtle dark milk chocolate (cream) and citrus (lime).

Texture: smooth and relatively creamy

Flavor notes included: subtle dark milk chocolate and aromatic, sweet lime + lemon natural flavoring. The latter lingered into a long sweet citrus finish (slightly bittersweet lime + lemon candy/soft drink).

Aroma and flavor notes for this creamy smooth dark chocolate square included: relatively bold but well balanced dark chocolate-y chocolate infused with citrus (blood orange) flavoring.

Dark Milk Chocolate Blood Orange 60% (square) 

Aroma and flavor notes for this dark milk 60% chocolate included satisfying dark milk chocolate with citrus (orange) infused flavor. The milk added a creamy texture and helped balance and mellow the flavoring.

Normally I prefer dark chocolate over milk chocolate, but the Dark Milk Chocolate version won out by a narrow margin this time.

Aroma and flavor notes for this creamy smooth dark chocolate square included: relatively bold but balanced chocolate-y chocolate infused with robust peppermint flavoring.

Dark Milk Peppermint 60% (square) 

Aroma and flavor notes for this dark milk 60% chocolate included satisfying dark milk chocolate with a mint (peppermint) flavoring. The milk added a creamy texture and helped buffer the "natural flavoring" a bit.

Normally I prefer dark chocolate over milk chocolate, but the milk in the Dark Milk Chocolate won out this time.

Aroma notes for the smooth-textured, Dark Chocolate 65% cacao square included: sweet, smooth dark chocolate, light cream and faint fruit.

Flavor notes included: sweet, smooth dark chocolate, bright tropical fruit (mango flavoring) with a slight bitterness in the finish. (I'm not sure if the bitterness was caused by the mango "natural flavors" added or whether it was from the cacao. It's not been present with other flavors tried so far in this assortment box.)

Dark Milk Mango square

Aroma and flavor notes included for the 60% Dark Milk Chocolate included: smooth, creamy milk chocolate, tropical fruit (mango) flavoring. The slight bitterness in the finish that was present in the 65% dark version was slightly muted by the milk in this square.

Dark Chocolate Mokka Coffee 63% (square)

Aroma notes for this 63% cacao dark square included: sweet, smooth dark chocolate with warm spice and coffee

Smooth, soft, very slightly gummy chewy that quickly resolved into creamy dark chocolate with relatively low acidity (chocolate and coffee) and bitterness. 

Flavor notes included: sweet, smooth dark chocolate, faint coffee, warm spice, and almost undetectable sweet herbal. There was also some faint sweet coffee/mocha in the finish.

Dark Milk Chocolate Maui Coffee 58% (square)

This 58% dark milk square with 2% Maui Mokka Coffee square had very similar warm aroma and flavor notes as the Dark chocolate version, but with a creamier (milk) taste and texture.

Milk Chocolate Maui Coffee 55% (bar)

This 55% Cacao bar had a rich, luxurious milk chocolate aroma, texture and flavor -- with subtle, freshly-made, mocha latte/cappuccino notes.

I enjoyed the gentle complexity and warm flavors in all three of these Maui-made chocolates. 

I liked the higher percentage dark square best because the dark chocolate and flavors were clearer. Milk chocolate lovers will appreciate the luxe, creamy, milky cappuccino-like flavors and textures in the dark milk (square) and the even milkier 55% milk chocolate (bar) featured today.

These two lemongrass infused chocolate squares were part of a larger, 48-piece (dark chocolate and dark milk chocolate) assortment box. Each chocolate square was individually-wrapped.

Aroma and flavor notes for the dark chocolate 65% lemongrass-infused squares included: citrus, (herbal lemonade), lemongrass and relatively robust but smooth, almost creamy dark chocolate. 

The 60% dark milk version was creamier and sweeter; and the milk muted some chocolate and lemongrass flavors. (Think rich, creamy gelato.) Milk chocolate fans will enjoy this creamier taste and texture.

I enjoyed the crisper, purer flavors in the darker (65% cacao) version.

These chocolates were made in Hawaii using cacao grown in Ecuador* and Hawaiian guava essence. 

Dark Chocolate Maui Guava 65% (square and bar)

Aroma and flavor notes for the Dark Chocolate Maui Guava 65% Cacao Square included: smooth dark chocolate and fruity, almost floral tropical fruit (red/pink guava and strawberry guava jam). The guava was an extracted fruit essence--completely incorporated into the chocolates (rather than pieces of identifiable guava fruit).

Interestingly, the smaller (individually-wrapped) dark guava 65% square had more guava flavor than the full-sized dark guava 65% bar version. The bar had more pure dark chocolate (less guava); and the smaller, individually-wrapped square had more guava fruit flavors.

Dark Milk Chocolate Maui Guava 60% (square)

Aroma and flavor notes included: dark milk chocolate, tropical fruit (guava, berries, and guavaberries) with balanced chocolate and tart-sweet fruit flavors (ranging from guava to guavaberry, pineapple and mild herb/spice (faint eucalyptus, warm black pepper, allspice).

Overall, I liked the 1.) authentic and relatively complex guava flavors in the squares best; 2.) smooth, balanced dark flavors that weren't boring or overly sweet. (The very slightly sweeter dark milk 60% version was a true dark milk.) 

I usually don't care for "natural flavors," but today's guava flavors were an exception.

Aroma notes included: dark chocolate (faint earth, hops); coffee; and very faint black olive.

Texture: soft, very briefly slightly gummy, then pleasantly creamy once melted. 

Flavor notes included: slightly earthy dark chocolate and coffee (crunchy bits of coffee bean).

The moderately complex flavors were a bit bold and earthy, but also well balanced. I liked the slightly  darker/bolder (yet also smooth) flavors in this three-ingredient bar, as well as the creamy texture that developed over the first few seconds and continued into the finish.

Today's 63% Dark Chocolate with Mandarin Orange (bar) was from Hana Gold Farm (Hana Highway, Maui, HI). The company is a "branch-to-bar" chocolate maker on the island of Maui. 

Hawaii has both the climate (lower latitude, and large areas with very few cold snaps) and the rich, volcanic soils--conditions that enable many working cacao farms/plantations.

Aroma and flavor notes included: rich, tart sweet dark chocolate (bold, very slightly earthy/peaty--but nicely balanced--cacao) with pieces of tart, sweet, authentic (and delicious) mandarin orange.

Texture: relatively smooth texture, with (three+ pieces) of wonderfully thin, chewy orange. 

I liked the 1.) balanced, robust dark and the high-quality chocolate, 2.) perfectly thin, chewy pieces of  authentic mandarin orange, and 3.) short list of ingredients.

Welcome to Day #2 of Chocolate and Hawaii Theme Week. 

Today's 72% Dark Chocolate "Maui Made" (bar) was distributed by Hana Gold Farm (Hana Highway, Maui, HI).

Aroma and flavor notes included: deep dark chocolate with diffuse, balanced fruit and forest notes. I could almost taste (or at least the chocolate conjured up notions of) slightly earthy (peaty/amended) volcanic soils in the greener parts of Hawaii.

Texture: soft, initially very slightly gummy, texture with a creamy and light mouthfeel once melted. 

I liked this bold but balanced 72% dark chocolate. Dark fans will appreciate the less sugary taste and the slightly earthy but smooth dark complexity. Today's 51% Milk Chocolate with Hana Banana (bar) was distributed by Hana Gold Farm (Hana Highway, Maui, HI).

Aroma notes included: dark chocolate and light banana.

Texture: soft, initially almost gummy, texture with a creamy and light mouthfeel once melted.

Flavor notes included: slightly fruity, rich, sweet, dark and milky/creamy chocolate--with thin, crunchy banana slices of dried banana.

This sweet, balanced dark milk chocolate bar still had some pleasing, mild complexity (very slightly fruity cocoa, banana, vanilla). That is, the higher percentage of sugar and milk (51% vs. 70%) in this bar did not eclipse the other/more subtle flavors.

Welcome to Day #9 of Chocolate and Gold Theme Week. 

These spirits-filled chocolate bottles were from Anthon Berg (Ballerup, Denmark). This Danish chocolatier (now a division of Toms International) has a history that stretches back to 1884.

Today's three foil-wrapped chocolate bottles were part of a deluxe, 64-bottle Anthon Berg Golden Jubilee Selection, that were housed in an attractive, large gold package (box). The filled chocolate assortment featured several well-known spirits/liqueurs fillings from different countries.

Matusalem

The 50% dark chocolate "bottle" enclosure had a smooth dark milk chocolate* taste with a creamy melt and mouthfeel. 

Matusalem is a premium Caribbean rum produced in the Dominican Republic.

The Matusalem Gran Reserva liquid (syrup) filling was authentic, with pleasing almost whiskey-like caramel and vanilla, along with very faint and rich wood/oak and stone fruit notes.

Famous Grouse

Famous Grouse is a brand of blended Scotch whisky(s) produced in Scotland.

Sweet, creamy and aromatic dark milk chocolate surrounded a generous sip of sweet, boozy, rich and smooth single malt Scotch flavor.

Sobieski Vodka

The well-tempered, creamy dark milk bottle-shaped exterior contained a sweet and "clear" boozy dose of vodka, with a clean finish.

The chosen dark chocolate couverture complemented all the spirits-based fillings in the Golden Jubilee flavors I tasted.

*Note: Today's chocolates did not list milk in their ingredients list; they are 50% dark chocolates--despite my repeated descriptions of these chocolates having the smooth, creamy taste and texture of a dark milk chocolate.

How did each one taste? 

Cointreau 

The chocolate "bottle" had a smooth dark milk chocolate taste with a creamy melt and mouthfeel.

The Cointreau liquid (syrup) filling was authentic, with pleasing, clean, clear fragrant sweet orange and  very faint, pleasing herbal and balanced bitter orange notes toward the finish.

Remy Martin Cognac Fine Champagne 

Sweet, creamy and aromatic dark milk chocolate surrounded a generous sip of sweet, boozy, cognac/brandy flavored syrup.

Southern Comfort

The well-tempered, creamy dark milk bottle-shaped exterior contained a sweet, relatively complex warm, sweet whiskey, with very faint citrus and oak notes.

Note: The dark chocolate did not contain milk, even though it had the smooth taste and creamy texture of a dark milk chocolate.

A testament to how versatile chocolate can be, the chosen dark chocolate couverture complemented all the spirits-based fillings well.

Welcome to Day #7 of Chocolate and Gold Theme Week.

Today's 37% Swiss Milk Chocolate was filled with pockets of Remy Martin Cognac Fine Champagne Syrup. It was "Swiss made by Goldkenn" (La Locle, Switzerland).

This bar was part of Goldkenn's Liquor Collection (chocolate bars filled with different spirits). The company also offers a Gold Collection that includes gold (chocolate) coins, gold bars, and even a gold van filled with...yes, gold chocolates.

Aroma and flavor notes for this cognac chocolate included subtle dark milk chocolate--that tasted a bit darker than many 37% cacao milk chocolates (less sweet, hurray!), while also having a very smooth flavor that I associate with fine Swiss chocolate.

The chocolate complemented the "Remy Martin Cognac Fine Champagne" syrup filling quite nicely. The syrup did contain real Cognac--a brandy (spirit distilled from wine) from the Cognac region in France. And each filled square of this bar had an authentic (slightly bitter, boozy) cocktail flavor.

Texture: Smooth mouthfeel. The bar was divided into eight, scored, 37% milk chocolate squares. Each square had a protruding dome that contained a flowing (liquid), cognac liqueur-like filling. (Note: Eat over a plate or a napkin if you want to avoid possible cognac drips.)

There was a small percentage of alcohol in this adult chocolate.And each filled square of this bar did have an authentic (very slightly bitter/strong) miniature cocktail flavor. 

This bar paired well with a fruit plate. In keeping with the gold theme, golden tangerines added some extra sweet citrus sparkle.

This sweet, smooth--and elegant looking--60% cacao bittersweet chocolate bar was draped with a generous helping of 24 karat gold leaf pieces.

Welcome to Day #5 of Chocolate and Gold Theme Week. 

Today's Willie's Gold Pure Gold Sur Del Lago Venezuela 100% Cacao (bar) was from chocolate maker Willie's Cacao Ltd. (Devon, UK). 

The cacao used to make this bar was grown in Sur Del Lago (south of Lake Maracaibo) in Venezuela. Maracaibo is a famed lake where the skies are charged with tropical lightning.* Bananas, peanuts, cocoa and other crops are grown in this area.

Aroma and flavor notes for this smooth (silky, buttery) textured chocolate bar included: deep, luscious dark chocolate (fudge brownie with nuts (almonds, walnut)) -- without the sugar. (Note: there were no nut ingredients.)

Ultra-dark chocolate lovers will appreciate this two-ingredient bar that captures the essence of cacao very nicely. As with all other 100%ers, milk chocolate/candy lovers may miss the bright sweetness that comes with sugar-sweetened chocolate.** 

I enjoyed this bar with friends in the Golden State of California, at a Golden State Warriors basketball game in San Francisco, with views of the Golden Gate bridge. It was indeed a 100% gold-filled day. Happy Saint Patrick's Day to all who celebrate this day. We saw rainbows today, but no leprechauns (cancelled due to weather) jumping into pots of gold.

*The Catatumbo lightning over Lake Maracaibo is part of a rare atmospheric phenomenon -- a reaction driven by the interaction between warm air from the Caribbean and cooler air descending from the Andes mountains. The word "catatumbo" comes from the local Bari language and roughly translates to "house of thunder." 

**Note: I am someone (part of roughly 25% of the population in the U.S./Europe) who not only tolerates, but really enjoys more bitter flavors (cacao, hops, arugula, coffee, etc.). And while this may be largely genetically determined, I am thankful my genes allow me to savor the nuanced flavors in these lovely items. Yes, there are some plant items that are too bitter even for me, but thankfully cacao seeds (aka cacao beans) are not on this list.

My tasting notes: smooth, and slightly woodsy dark chocolate with a bit of very subtle sweet fruit, botanical and light umami and pleasant wood in the relatively long finish.

Today's Sweet Dreams 70% Cacao (bar) was from Heart of Gold Organics (Minneapolis, MN). The company produces a line of different chocolate bars. (One of these does contain gold, and I'm featuring that one tomorrow.) In the meantime, this Sweet Dreams bar was described as "Adaptogen Nootropic Infused."*

My tasting notes: smooth, and slightly woodsy dark chocolate with a balanced bit of bitter in the finish.

*Normally the theobromine (the primary stimulant in cacao) keeps people feeling wide awake. However, I didn't quite get the same buzz I associate with some dark chocolates -- likley due to use of coconut sugar, vs. refined "white" sugar. (Coconut sugar is lower on the glycemic index.) 

Cacao is considered by some to have nootropic (cognitive enhancing) properties. I'm not sure if the unspecified "adaptogen nootropic" properties of this particular chocolate contributed to a sense of relative calm or not. And there was no other information available on the packaging to explain how this bar was "formulated to reach a deeper, more restful sleep." I guess I'll find out tonight....P.S. I slept very well and did have great dreams.

Welcome to Day #2 of Chocolate and Gold Theme Week.

Today's Gold Frankincense & Myrrh 72% chocolate (bar) was from Chocolarder (Falmouth, Cornwall, U.K.).

This seasonal bar was made from bean-to-bar using Peruvian cacao, tree resins from the province of Kenitra in Morocco, and gold leaf. 

For all its shimmering beauty, gold is an inert element that imparts no flavor that I'm aware of. However, this dark chocolate was dressed for an evening out, with sparkling flecks of gold (very thin gold leaf/foil pieces) carefully placed in a chocolate mold so that on the finished bar, the gold pieces adorned the company name ("Chocolarder") and some cocoa pods.* 

Aroma and flavor notes included: smooth dark chocolate; faint diffuse fruit (mild citrus (sweet orange or mild tangerine); and pine or herb-like, aromatic resins (frankincense and myrrh). There was also a very faint (barely detectable but pleasing) cherry cola with sweet herbs soda note in the finish.

Maker's Tasting Notes: "Warming aromas of orange and pine needle with undertones of red fruit and green apple."

Ingredients: "Cocoa beans, unrefined raw sugar, cocoa butter infused with Frankincense and Myrrh, 23ct gold leaf"

Allergen-related information: "Made in a factory that also handles dairy and tree nuts."

*Typically flavor inclusions are sprinkled on the "back" of a bar, and it was impressive to have all these elements present on one side. Extra luxe (and extra time and care too I imagine).
