Today was Day #6 of Chocolate and Brownie Theme Week -- with a focus on the growing number of raw, organic, gluten-free, brownie alternatives available.
These petite macaroon-like, mounded bites were made from organic and raw coconut, almond flour and cacao. Sweetened with maple syrup, these Brownie Mini Coco-Roons, with a soft chew, were less sugary than most macaroons. Thank you to the chef at Wonderfully Raw for that!Sequoia Cheney, the chef behind Wonderfully Raw Gourmet (Watsonville, CA) has created a line of different raw, mini coconut macaroons -- including today's Brownie flavor. This line grew out of her own desire to eat and prepare healthy foods (and training as a raw foods chef), after being diagnosed with Type II diabetes.
