Today's Chocolate Mousse Cheesecake was from Pie in the Sky, LLC (Longmont, CO).

This chocolate cheesecake had an authentic (gluten free) graham cracker-style crust and had a satisfying smooth, creamy cheesecake texture and flavor.

I enjoyed this dessert with a coconut beverage.

Simple is better. A shout out to Robyn Stone's recipe for chocolate filled fresh raspberries (found on her Add A Pinch website).

This is an easy, fresh way to combine berries and chocolate. Even though finding fresh berries in December required a fairly extensive search, it was worth the drive to be able to create these flavorful little beauties.

Melt a little dark chocolate with a bit of coconut oil and either carefully spoon the melted chocolate* into individual berries, or put this chocolate a plastic bag and cut off a small corner to pipe warm chocolate into each berry. Chilling these for even a few minutes firms up the chocolate.

This off-the-shelf snack dessert package of Philadelphia "cheesecake cups" (contained two serving containers and) was made with a pocket of chocolate cream cheese and a pocket of raspberry sauce, and no artificial flavors or colors (thank you!).

A consumer can mix the chocolate and raspberry pockets or sides together as they wish. Just grab a spoon and eat.

Kite Hill Raspberry Artisan Almond Milk Yogurt—distributed by Lyrical Foods, Inc. (Hayward, CA)—with dark chocolate shavings was the third small dessert for the day.

It's nice to have a non-dairy yogurt alternative that can be eaten plain or incorporated into some dessert like this. The texture was smooth and velvety. The raspberry flavor was authentic and the yogurt had a very faint plant/nut taste at the end.

And dark chocolate shavings seem to be right at home with any yogurt, or ice cream.

*Note: An 80% cocoa dark chocolate single origin bar, and a Tart Raspberries + Dark Chocolate 72% Cocoa bar (featured earlier version of this site) from Endangered Species (Indianapolis, IN) were also used to make these desserts.

Patti's Lemon and Chocolate Cupcakes - LMNOPQR Week - Feb. 24, 2017

Welcome to the first day (Day #1) of LMNOPQR Theme Week. We'll be continuing to work our way through the chocolate alphabet this week, starting with the letter "L."

What starts with "L" that blends well with chocolate? Answer: Lemon. I've always enjoyed bars and confections made with dark (or dark milk) chocolate and lemon.

Limoncello, lemon custard or lemon curd in a dark chocolate shell is like a little black dress in a woman's wardrobe that's simple, elegant, and always in fashion.

Today's find of the day was Patti's Perfect Pantry (Morgan Hill, CA). Their bakery, cafe and take-out offerings were all made in a dedicated gluten-free kitchen. It's not every day I can enjoy a "Mad Hatter" sandwich (honey ham, Swiss cheese and pineapple) on gluten-free pumpernickel bread. (Thank you Don for finding this place.)

Chef Patti has created a series of gluten-free cupcakes, including ones with lemon and and chocolate. The two made with lemon curd were particularly delicious. I wouldn't suggest eating four whole cupcakes at one sitting. But, I did have a slice of all four mentioned above, for scientific research purposes.

I'll likely go back to Patti's to try other gluten-free chocolate cupcake flavors: brownie, chocolate peanut butter and Boston cream cupcakes, to name a few.

Welcome to Day #2 of Chocolate and Coconut Theme Week.

This Chocolate Cheezecake from Daiya Foods (Vancouver, British Colombia) contained coconut oil and creamed coconut, giving this dessert a creamy mouthfeel and texture.

However, this "cheezecake" (flavored with chocolate and carob) contained no cream. It was free of dairy, soy, gluten and eggs and most all common allergens.

The cheesecake even had a layer of relatively light and cake-like crust on the bottom. It comes unadorned, so that you can add a variety of your own toppings if you'd like.

Daiya cheezecake is available in New York, chocolate, key lime and strawberry flavors.

Today was the second day of Chocolate and Raspberry Theme Week.

What's up today? How about a chocolate and raspberry drink, made with almond "chocolate milk" from Pacific Foods (Tualatin, OR) and flavored with a hint of raspberry syrup and Chambord (black raspberry liqueur)?

Shaken, not stirred...and then sipped with an adorable side of Raspberry cheesecake from Dia Desserts (Montanta).

I enjoyed my fancy chocolate raspberry drink. It was flavorful without being too sweet. (This drink was also good with Pacific Food's Hazelnut Chocolate non-dairy beverage and few drops of raspberry syrup.)

The gluten-free cheesecakes were developed by two sisters (thank you Melissa!). Each single-serving, layered cheesecake was packed in a junior sized, glass canning jar, complete with customized (branded) lid. Watch for these lovely treats in Montana this summer.

A raspberry flavored Greek Yogurt "Bite" (small container) with flecks of dark chocolate chips might be healthier than ice cream, but I probably downgraded the health benefits a bit by mixing this yogurt with some cream cheese. I poured this cheesecake-like filling over a ground nut (almond, pecan, walnut and date) crust -- to make shotglass and miniature ersatz cheesecakes.

I also made a similar pineapple cheesecake with Chobani's pineapple and caramel flavored Bite yogurt.

Neither one was as rich as a full fat New York style cheesecake, but they were tasty all the same. And, small portion sizes work well for me (and my test kitchen).

Tortuga Turtles, Cheesecake - Mar. 2, 2013

Today was Day #8 of Chocolate and Umami or Bacon Theme Week. I can't seem to let go of wonderfully sweet + savory foods, so I'm extending this current theme "week" by a few days. Today was also the first day of Chocolate and Butter Theme Week.

Umami, Caribbean Style
Tortuga means tortoise or turtle, and also refers to at least three different Caribbean islands -- some tinged with legends of pirates. It is also the name of a company, Tortuga Rum Company (Grand Cayman, B.W.I.), creator of the three sweet and spicy offerings I incorporated in today's dinner and dessert(s).

After enjoying some smoky, barbequed pulled pork with Tortuga Sweet Heat Caribbean sauce, sweet peppers and pasta, and a butternut squash souffle lightly dusted with savory cocoa, it was time for dessert.

Tortuga Chocolate Rum Turtles with Sea Salt were made with pecans, caramel (corn syrup, butter and cream) and Jamaican rum flavor. Even a little real butter improves the taste of a caramel center like this. Each sweet, softly chewy chocolate turtle (so named for it's turtle-like shape) was decorated with a sprinkle of coarsely ground sea salt crystals.

This same milk chocolate coated turtle became the subject of another dessert: "Turtle on a Beach." And, I used Tortuga's Pepper Jelly as a cheesecake topping. (See below for more on both desserts.)

1 Tortuga Chocolate Rum Turtle with Sea Salt
1 scoop coconut ice cream (or coconut frozen dessert)
1 Tb. toasted white sesame seeds

Scoop coconut ice cream in a cup; and sprinkle toasted white sesame seeds over ice cream. Top with a Tortuga turtle.


Pepper Jelly White Truffle Cheesecake

The following recipe is for individual cheesecakes with a colorful, kick. This slightly less sweet (gluten-free) cheesecake is flavored with white truffle oil, and covered with a light layer of sweet, and spicy-hot, Tortuga Gourmet Pepper Jelly.

Recipe for White Truffle Cheesecake with Pepper Jelly

1 1/2 pounds cream cheese (3 six-ounce packages)
1 cup sugar
1/4 cup gluten-free flour blend (rice flour + other flour mix)
2 Medium eggs
1/4 cup creme fraiche
1/4 cup sour cream
1 1/4 Tablespoon White Truffle Oil (such as La Tourangelle, see this for link for similar recipe)
1 10 oz. jar of (Tortuga) spicy pepper jelly
(You'll also need several individual ramekin or miniature souffle dishes.)

Let cream cheese soften at room temperature for an hour before placing in a bowl to make it easier to blend with other ingredients.

Pre-heat oven to 350 degrees Farenheit, and place a baking pan with 1/4 inch water in oven.

Put softened cream cheese in a bowl. Gradually blend cream cheese (with an electric mixer, or immersion blender), until fluffy, then add sugar, egg, creme fraiche, sour cream, flour and truffle oil, just until all ingredients are fully incorporated. (Set pepper jelly aside for use after cheesecake is baked and cooled.)

Spoon into ramekins or small souffle dishes. Makes 6-8 individual cheesecakes in ramekins -- depending on size of dishes used. (To make a full-size, 10-inch cheesecake, double this recipe (except eggs -- use 2 larger eggs); and grease springform pan before filling with cheesecake batter.)

Bake in 350 degree oven for 30 min., then reduce to 325 degrees, and cook until firm in middle(s), about 25 more minutes until slightly firm. Do not overcook. Turn off oven, but leave oven door open.
Let cheesecake cool in oven for an hour, then refrigerate for several hours or overnight.

Spoon over pepper jelly across top of individual cheesecakes (amount depending on taste) and refrigerate, or serve the cheesecakes.

These Hershey's Kisses with New York Cheesecake flavored creme centers were quite sweet (a bit too much so), and were somewhat artificial tasting. But, then again, mentioning New York Cheesecake sets a high bar, by conjuring up wonderful cheesecake memories in my mind.
