Welcome to Day #16 of Chocolate and Spirits Theme Week. (Note: this post is likely not appropriate for children. This bar contains alcohol and some adult cocktail references.)

Today's Gay Bar 69% Cacao Boozy Dark Chocolate (bar) was from Fruition Chocolate Works (Shokan, NY).

Aroma notes included: dark chocolate, and a slight boozy richness and fullness (think oak barrel, citrus, cherry, whiskey, vermouth -- in other words, something like a Manhattan (cocktail) fully incorporated into a smooth, rich dark chocolate.

Flavor notes took the aroma notes (listed above) one step further--with the dark chocolate (Peru (pangoa) + Colombia (tumaco) taking center stage. There was also a pleasing, lingering, slightly boozy (sweet, layered whiskey cocktail with cherry), buttery and very smooth oak finish. (Note: there was no dairy butter in this bar.)

Disclosure: I do very much enjoy dark chocolate and whiskey pairings. In skilled hands, fine quality dark chocolate + spirits and oak barrel/seasoned wood produces some very appealing results. The vermouth, cherries and bitters were well-balanced and well-integrated, and these ingredients conveyed the whole cocktail concept very nicely. I loved the layered flavors in this bar that harmonized so well together.

What's behind the name "Gay Bar" other than the play on words? The packaging features a large, glittering, red (big apple) disco ball--part of a club scene with happy, diverse patrons (cartoon characters of bear, deer, beaver cartoon). "...a portion of the proceeds from each Gay Bar sold will benefit Hudson Valley organizations working to better the lives of Upstate New York's vibrant LGBTQ+ community."

Welcome to Day #15 of Chocolate and Spirits Theme Week.

Today's Vermouth O'Clock 60% Dark Chocolate (bar) was from Fjak Chocolate AS (Eidfjord, Hardangerfjord, Norway).

Crafted in Norway, Fjak's small batch chocolates (many with Nordic/European and seasonal flavor inclusions) are always a pleasure to try.

Complex, subtle aroma and flavor notes included: smooth dark chocolate, slight savory (olive, herb); very faint, warm spirits (dry sherry, vermouth); faint tart-sweet fruit (citrus (faint orange), cherry); and barely detectable herb, spice and botanical (sweet straw stalks, fennel sticks, light cinnamon, clove, star anise). (Note: there was no star anise or clove.)

I really liked the well-executed interplay of smooth, sophisticated cocktail flavors. This was a very enjoyable bar to taste, and to share with others. The 60% cacao dark chocolate was relatively sweet and that sweetness was upped a bit with the sweet orange (peel) and warm spice notes, but it seemed comparable to what you might find in a Vermouth cocktail. And the very faint (real) olive balanced things out nicely.

When you eat a lot of chocolate, every trip seems to become a chocolate field trip. And while the same could be said of any hobby or passion, it's been my good fortune to meet others who have turned their passion for chocolate into a business across the globe.

During a recent trip to Portland, Oregon, I was able to stop at at several (although not all) chocolate hot spots in this city of roses. The Portland area has a fairly high chocolate IQ, with lots of chocolate makers and chocolatiers.

Coming from further south, one of the first things about Portland I noticed was how green everything was. The trees, grass and plants were shades of radiant jade and emerald. And when the sun showed through to dazzle on occasion, it was easy to believe how everyone might want to live in the Pacific Northwest, in Portland or Seattle, or other cities.

Creo Chocolate, a family-founded and run bean-to-bar chocolate business, was my first stop. The founders (Tim and Janet Straub) experimented with roasting beans and making chocolate from scratch for several years, before selling their own family farm (where they'd grown raspberries for 16 years), and getting into the business of making craft chocolate.

The company name "creo" means "I believe" in Spanish, and "I create" in Latin. Co-founder, Janet Straub, says she felt she made a "heart connection" when they met with other family farmers in Ecuador and other cacao-growing countries. They felt they could make a difference when they used the farmers' cacao to make into great chocolate, and to bring to others in the cities to enjoy.

Creo Chocolate (located in the Lloyd District, east of the Willamette River) is a factory and cafe, a place where tours are given and chocolate is sold.

The May Saturday when I stopped by, the shop was full of browsers and buyers, but Kevin Straub (described on the Creo website as the family's "chocolate maker and maintenance geek") made time to speak with me about their bars and confections (that were made by someone else).

I sampled a Yuzu Gimlet from the glass display case. The fresh gin and yuzu (citrus-like) fruit flavors, infused into a chocolate truffle format, tasted vibrant and clear and were well balanced.

Today I also tried two other Creo filled chocolates: a mystery sample (white chocolate with a spicy kick) that Kevin provided; and a maple cream-filled dark square. The maple caramel filling was light, almost silky and creamy.

I'm saving the Creo (bean-to-bar) chocolate(s) and cacao nibs for upcoming theme weeks.

Today was Day #5 of Chocolate and Halloween Cocktail Theme Week.

Cocoa nibs are concentrated bits of chocolate flavor. Their essence can be contained in a dark chocolate bar, or infused into spirits. (Not Halloween ghosts, but distilled spirits.) Being that Halloween—one of the great chocolate holidays—is upon us, I'm going with both a dark chocolate bar with cocoa nibs and a Halloween cocktail called a Cocoa Rumpkin (see below).

First up...the jcoco Noble Dark bar (72% dark chocolate with cocoa nibs). This bar was one of a set of small bars I received as a gift.

The jcoco brand is part of Seattle Chocolate Company (Seattle, WA). The design and packaging for the jcoco line is high fashion fun, and the chocolate isn't bad either*. The company has pledged to give one serving of food to a person in need for each chocolate purchased.

The bar had a chocolate fudge brownie aroma and taste and the nibs added some texture. The "non-gmo, vegan, gluten-free" Noble Dark bar was also kosher.

A Cocoa Rumpkin is a three-layer cocktail that I made up.

The bottom layer was Aperol (an orange-flavored apertif) and honey. The middle layer was a pumpkin-infused cream with spices (cinnamon, freshly grated nutmeg, cloves, allspice, ginger).

And, saving the best for last, the top layer was cocoa nib infused dark rum**. The cocoa nibs imparted an extra dark chocolate, almost coffee-like flavor to the dark rum.

Carefully "float" one layer atop another and there you have it: a Cocoa Rumpkin, today's chocolate rum and spicy orange Halloween cocktail. Or, you can stir all these layers together, and freeze, to enjoy as an adult milkshake.

*The jcoco Cayenne Veracruz Orange white chocolate bar is an example of how tasty white chocolate can be.
**First, I infused cocoa nibs into Myers's dark rum for a week. Then I drained off the rum to use as a top layer for this cocktail. Leftover cocoa nibs, can be used for cookies, brownies or with ice cream in adult milkshakes.

Today was Day #4 of Chocolate and Halloween Cocktails Theme Week.

The "Black Cat Martini" chocolate from Hotel Chocolat (UK) was infused with blackcurrant and "liquorice" and had a fairly strong vodka kick. The flavors were authentic and layered, revealing themselves one at a time, which made this filled Halloween cocktail chocolate more intriguing and fun.

Today's Black Cat Martini was the last (of four) different seasonal cocktail chocolates from a Hotel Chocolat "Choose Your Poison" 16-piece assortment box.

Enter Day #3 of Chocolate and Halloween Cocktails Theme Week, if you dare.

Today's Halloween cocktail-inspired "Corpse Reviver" chocolates from Hotel Chocolat (UK) were part of a "Choose Your Poison" 16-piece assortment box.

These ivory-colored chocolates contained hints of "gin, triple sec, vermouth and blood orange." Inside each Corpse Reviver was a flavorful gin and citrus-infused, white chocolate ganache center.

These creamy fillings were covered in white chocolate and topped with daubs of orange and brown seasonal color—with just enough dark brown to count as a "real"* chocolate.

If you like boozy chocolates, you'd love this whole assortment box, with 4 different chocolate cocktails. I'm going to be sorry after tomorrow when they're gone.

*Cocoa beans are approximately half fat (cocoa butter) and half dark cocoa mass (aka solids or liquor). I normally do not count 100% white chocolates as a chocolate of the day, unless there is some cocoa liquor/solids present—the part that makes chocolate brown.

Today was Day #2 of Chocolate and Halloween Cocktails Theme Week.

For many years absinthe, an often green concoction of herbs and alcohol, was illegal, primarily due to concerns about one ingredient. Wormwood (or the thejune in wormwood) could cause hallucinations* and other ill effects. Absinthe was also known as the green fairy.

Today's Green Fairy chocolate from Hotel Chocolat (UK) was part of a Halloween cocktail assortment I'm enjoying this week. This dome-shaped filled chocolate, topped with a swirl of yellow and green, contained "a shot of absinthe softened in milk," referring to a creamy milk chocolate, absinthe infused center.

Anise, a key ingredients in absinthe, gave the chocolate a faint hint of licorice. I've never met a green fairy, but I bet she'd like these chocolates.

*The surreal illustration at the right (under four Green Fairy chocolates) is titled "In and Out – Number 5," by digital artist, Earl Einhorn. This artist's work seemed the perfect companion for these chocolates with absinthe.

Welcome to Day #1 of Chocolate and Halloween Cocktail Theme Week.

I admit it, we're devolving into less and less serious territory by the week here in October. But, it's Halloween.

I ordered a box of "Choose Your Poison" Halloween cocktails with a shot of liquor, from Hotel Chocolat (UK). This spooky assortment of chocolate cocktails included the Black Cat Martini, Corpse Reviver, Green Fairy and the Zombie.

What do I love about this company? Their creative and original chocolates, classy packaging—and the thought that I might one day visit their hotel and plantation on the island of St. Lucia.

Today I had all 4 Zombie* chocolates. And they did indeed taste like tiny boozy zombies—if zombies had creamy centers and were covered in chocolate. Fortunately, I wasn't planning to drive anywhere this morning.

*Hotel Chocolat describes their Zombie chocolates as having "a glug of white rum with orange and passion fruit.

Hope you all had a great Valentines Day. I decided to keep it simple -- a modified Chocolate Gatail (cocktail with dark rum, cherry brandy and creme de cacao) and 1/2 of a Heart's Delight bar from Bixby and Co. (Belfast, ME).

The Heart's Delight bar was jammed with large pieces of dried strawberries, and bits of almond, giving the dark chocolate (72%) bar, with a very mild hint of Ceylon Cinnamon, a slightly chewy texture.

Today was Day #10 of Chocolate and Cherries Theme Weeks, and the sight of cherry and other fruit tree blossoms against blue sky was a lovely reminder that Spring was already waiting in the wings.
