Welcome to Day #3 of Chocolate and Floral Theme Week.  

Today's Lavender & Maple 70% dark chocolate (bar) was made by The Organic House (Burlington, ON, Canada). The company produces a variety of bean-to-bar chocolates--including many with flavor inclusions and/or maple sugar from Ontario, Canada.

The Bon Bulak cacao (from Kablon Farms) used to make this bar was from the Philippines.

Aroma notes for this bar included: dark chocolate; maple; and clean, faintly fragrant lavender.

Texture: broke with a well-tempered snap first thing in the morning (65 degrees F.), and was smooth and creamy when warmed to 70 degrees (F.). All flavor inclusions were completely incorporated into the 70% dark chocolate. There was no maple sugar or floral grit, or any off-putting or astringent components.

Flavor notes included: an elegant blend of dark chocolate with a wonderful, balanced flux of lavender floral, maple and refreshing sweet fruit (purple/red grape).

I really liked the complementary flux of high-quality flavors including the culinary lavender and the subtle petit verdot grape note. I appreciated the short list of quality and organic ingredients; and I enjoyed the maker's tagline: "Let your taste buds travel."

Maker's tasting notes: "Porcini, sage, lilac, petit verdot" (Petit verdot is a purple wine grape.)

Welcome to Day #2 of Chocolate and Floral Theme Week.  

Today's Lavender Rose Date-Sweetened Chocolate 72% Cacao (bar) was made and distributed by Spring & Mulberry (Raleigh, NC). 

The company produces a variety of date-sweetened chocolates. (All but one of the bars I've tasted so far have also had flavor inclusions in addition to the dates--that some also consider a flavor inclusion.

Aroma notes for this bar included: dark chocolate, sweet green botanical (+ pollen/honey), dried fruit (date), and very faint lavender that increased significantly when I broke off another piece of this bar (with many more lavender buds).

Texture: relatively smooth chocolate texture with a very slight granularity (fruit astringency).

Flavor notes included: rich but smooth dark chocolate, rich date sweetness, and light/fleeting floral (mostly lavender, but that is to be expected as lavender is very aromatic). 

I appreciated the floral (lavender and light bee pollen) flavors; the rich sweet (but not overly sweet) taste of the dates; the visual appeal of the red rose petals; and the short list of quality and organic ingredients.

Welcome to Day #9 of Chocolate and Honey Theme Week; and Day #1 of Chocolate and Uganda Week.

Today's 70% Uganda with Bee Pollen and Salt (bar) was from Spinnaker Chocolate (Seattle, WA). It was made using cacao grown by smallholder farmers from the Semuliki Forest area in Bundibugyo, Western Uganda. (This cacao is processed and exported to the U.S. by Latitude Trade Co.)

Aroma notes: subtle, nuanced dark chocolate, faint sweet floral; and sweet and salty (cookie, saltine).

Texture: smooth dark chocolate with bee pollen granules and tiny sparkling flakes of sea salt.

Flavor notes included: chocolate-y, fudge-y, well executed 70% dark chocolate with a near perfect blend of sweet and salty flavor inclusions.

Bee pollen consists of tiny, roundish, maize-colored bee pollen grains (vs. honey's, sugary-sweet, amber syrup-like quality).* Some bee pollen grains will likely have a kind of powdery gold glow to them. These were attractively sprinkled on one side of today's bar, along with sea salt flecks. 

Both flavor inclusions were from Jacobsen Salt Co. (Portland, OR)--a company that specializes in sea salt and honey.

I enjoyed the natural sweetness of this complex bar, and being able to taste the bee-styled nuances (pollen sweet, floral, very faintly earthy).

Ingredients: Cacao, Organic Cane Sugar, Bee Pollen Granules, Sea Salt Flakes

* Honey and bee pollen are both made by honeybees. Both can have complex, floral flavors. Bee pollen is fermented by bees into "bee bread" and nutrients also differ slightly from honey (including vitamins, protein(s), carotenoids, phenolic and other compounds); and sometimes also have a very faint earthy pollen taste.

Welcome to Day #8 of Chocolate, Trees and Bees Theme Week.

Today's Chocolate Naive Ambrosia 67% Dark Chocolate with Bee Pollen and Honey (bar) was produced by Mulate UAB (Vilnius, Lithuania).

This bar had a very interesting aroma with come hither, forest, mossy botanical, honey, beeswax, and light cocoa/milk chocolate notes. (There was no milk in this bar.) 

The melt and mouthfeel were creamy and luxurious.

The flavors were fairly uniform, and sweeter than the aroma; however, authentic and balanced honey notes floated to the forefront at least twice during the tasting experience. 

The finish was deceptively subtle. It conjured ghosts of peanut butter and honey sandwiches and honey and peach jam on buttered toast from childhoods past. Slightly fruity, slightly nutty along with creamed honey.

Chief chocolatier, Domantas Uzpalis, carefully selected this honey and bee pollen from a biodynamic apiary near the forest where bees connect their nectar. (Enclosed in the bar's package was a photo of local hives and beekeepers.) The results: a thick honey with a dark amber color and mossy earth, forest...and "floral acidity" flavors. (I would also add: a very faint green floral beeswax note).

Uzpalis noted that blending the bee pollen and honey with chocolate required a fairly technically sophisticated approach. I believe that. The different textures, flavors, and sweetness level(s) must have called for several test batches. Honey varies a great deal, and bee pollens can be even more variable. Thank you to the chocolate maker for sharing this culinary, bee-enabled, sense of place with us.

Ingredients: specialty cacao*, sugar*, cacao butter*, bee pollen (7%)*, wild forest honey (5%)*, and sunflower lecithin. (*wild or all natural farming)

Welcome to Day #8 of Chocolate and Brazil Theme Week, and Day #1 of Chocolate, Bees and Trees Theme Week.

Today's Bee Pollen and Fennel 70% Brazil Dark Chocolate - Seasonal Release bar was made by Dick Taylor Craft Chocolate (Eureka, CA).

Fennel was a great choice for this seasonal bar. It has a naturally sweet, licorice-like aromatic scent and aroma. It's June and bees and other pollinators are feasting on spring flowers. These helpful insects rely on different plants later in the year, including fennel.*

The first whiff of this bar was all bold, deep dark (Forastero-like) cocoa, with a slight roasted coffee note. Returning to this bar 3-5 minutes later, the aroma was a more balanced blend of dark (more Trinitario-like) cocoa balanced with light herbal (fennel, caraway) and floral (pollen) notes. (Yes, another example of why one should eat a good chocolate slowly...and re-taste at intervals if you have patience. Flavors do un-fold.)

The back of this ebony-colored bar was a tapestry of gold and green. The base chocolate had a creamy melt and texture; and the smooth chocolate with light tart fruit notes was accented by slightly crunchy fennel* seeds and a healthy smattering of bee pollen. 

The tasting experience melded garden spice and aromatic and flavorful sweet fennel notes with buttery honey and floral pollen notes--all without being too sweet (thank you!).

The flavors lingered pleasantly in the finish. What a fun and enjoyable bar.

*Currently, towering stalks of fennel (trees almost) are covered with delicate green (edible) fronds; they will become a valuable food later in the year. Although sometimes considered an invasive plant here in California, every part of the fennel plant is edible, and beneficial insects and birds love fennel. 

When the fennel forest in my side yard puts out grains of sweet, delicious yellow pollen in summer, bees and other pollinators (along with a few human tasters) will be enjoying this yellow "candy.". By September, green fennel seeds can be harvested and eaten and used in cookies, cakes, digestives...and chocolate. Birds will nibble on the rest.

What could be more appropriate than a little more bliss and love for Valentines Day week. I selected this duo -- the Goji Bliss and the Bee Love -- from ChocolaTree (Sedona, AZ) -- for Day #2 of Valentines Day Chocolates Week.

The Goji Bliss square was a pretty golden ivory (with cacao butter) and pink (goji berries) layer on a dark chocolate base.

The Bee Love square dark chocolate was dusted with tiny grains of yellow pollen and tasted like a spoonful of honey with cocoa butter -- a very pleasing sensation and taste.

Both of these chocolates had a fast, even melt and mouthfeel (think pure cocoa butter or coconut oil) and lacked the "rush" that often accompanies conventional chocolates, as ChocoloTree has sought to avoid processed sugar.

Why raw chocolate? Raw* (unroasted chocolate) typically yields a smoother flavor profile with a gentler finish, often without the more complex, high, low or bitter notes of roasted cacao. Some will like this and others may miss the roasted flavors. Also, theoretically, more of the nutritional elements in cacao are preserved when temperatures are kept lower.

The ChocolaTree Organic Oasis was a combination cafe and marketplace (shop) that offered a range of organic, gluten-free and dairy free entrees, soups, salads, drinks and desserts and -- oh yes, organic, raw* chocolates in a case by the front entrance. The shop also carried local and wild-crafted ingredients and items.

A friend and I ate dinner out back in a patio seating area. Arizona winters are generally mild enough that you can enjoy sunny, warm days and eat outside on milder evenings, while you are reading about far off cities covered in snow.

*Raw chocolate is made with unroasted cacao beans. Instead beans are ground and processed until smooth at temperatures not exceeding a certain temperature -- in this case, 115 degrees Farenheit (46.1 degrees Celsius).

Today was Day # 6 of Chocolate + Hearts and Flowers Theme Week -- with an emphasis on the flower side. These two chocolate covered caramels from Vosges (Chicago, IL) were part of a larger, exotic caramel assortment box.

The "Sunshine" caramel contained Tupelo honey, bee pollen and milk chocolate. The bee pollen topping flavors came through first, and then the honey notes kicked in. It was a very nice tasting experience.

The "Rosey" featured rose water, pink peppercorn and dark chocolate topped with a red rose petal. I liked the fairly strong, yet authentic rose flavor, which shaded into pink peppercorn flavors and texture. My only quibble, it was just a little too sweet for me. But, that is always a risk (or a benefit, depending on your perspective) of trying to make the perfectly balanced, flavored caramel.
