Today was Day #4 of Smoke and Savory Theme Week.

The Smoky Tellicherry Bar from Vosges Haut-Chocolat (Chicago, IL) had both smoke and savory elements, and a black peppery kick from coarsely ground Tellicherry* peppercorns and bits of uncured peppercorn bacon.

Vosges founder Katrina Markhoff and team have elevated the art of bacon and chocolate over the past decade. The company offers one of the largest "libraries" of bacon bars and products around. The slightly earthy, dark chocolate (72%) bar base eclipsed some of the more subtle savory and bacon flavor nuances in this bar, but overall it was quite good.

At $5.99 this bar was reasonably priced, given the relatively high quality of the flavor additions.

For those who would like to try this particular Vosges bar, you may be in luck if you live in a city with a "The Fresh Market" (a chain of markets with more than 150 locations in the U.S.). This bar was a limited edition made especially for The Fresh Market.

*Charcoal colored and flavorful, dried Tellicherry peppercorns are considered some of the best in the world. According to the packaging, the peppercorns in this bar came from the Malabar Coast of India.
