Welcome to Day #9 of Chocolate Surprise Theme Week.

Today's TCHO Chocolate organic pot de creme dessert was from St. Benoit Creamery (Sonoma, CA).

This little glass jar was full of smooth and creamy chocolate goodness. Its rich
chocolate aroma and flavor was the product of plenty of chocolate, cocoa powder and cocoa butter. The cocoa powder also contributed an authentic, medium cacao acidity that nicely accented the more bland but altogether yummy milk and cream.

Ingredients: Organic whole milk, organic cream, organic egg yolk, organic 66% chocolate (organic cacao beans, organic cane sugar, organic cocoa butter, soy lecithin, organic vanilla beans), organic cacao beans, organic cocoa powder, organic cane sugar, pectin, sea salt, organic vanilla extract.

Welcome to Day #5 of Chocolate and Flowers Theme Week, and Day #2 of Chocolate and Berries Theme Week.

Today's Ginger and Panela 77% dark bar from Antidote Chocolate (Brooklyn?, NY) was flavorful, bittersweet, yet smooth with no sharp notes and not overly sweet (thank you). Hints of lightly candied ginger popped up now and then.

Panela (similar to brown sugar) sweetened the bar and gave it some extra flavor.

This Antidote Chocolate bar was created with the company founder's unique blend of 50% raw and 50% roasted cacao. (The Arriba cacao beans used were from Ecuador (Camino Verde).)

After tasting a piece of the bar, I broke the remainder into pieces to include in a (cooked) dessert.

The rest became part of a chocolate pot de creme flavored with ginger and small amounts of additional floral spices: vanilla (flowering orchid), cardamom (spice with fragrant, floral notes), saffron (crocus stamens) and kewra (another flower) water.

This dessert was then topped with blueberries and mango pieces

Bienvenue (welcome) to Day #3 of Chilled Chocolate Theme Week.

Today's Dark Chocolate Pot de Creme from Petit Pot (San Francisco, CA) was made with organic milk, cream and sugar.

The small glass jar was full of creamy, silky chocolate texture and flavor. A good pot de creme is rich but also seems to have an almost angelic, uniformly spun lightness to it too. This creme had those qualities.

Petit Pot's Dark Chocolate Pot de Creme was part of a line of French-inspired, small chilled desserts (and packaged cookies).

The company is described as a "blend of age-old French pastry practice with modern California culinary flourishes." More specifically it's the creation of Max (a pastry chef) and Pierre (a food engineer) who both grew up in Southern France and now make their home in the San Francisco Bay Area.
