Today's Chocotejas* - Pecan 70% Dark chocolate confections from Marana Craft Chocolate were manufactured by Cacao Valley S.A.C. (Lima, Peru).

Aroma notes these traditional Peruvian, filled chocolate confections included: well-toasted bread, caramelized nut, and faint dark chocolate.

A smooth dark chocolate shell covered the large, (oval loaf-shaped) chocolate covered confection. Flavor notes included: nutty, earthy, chocolate-y with balanced burnt caramel/dulce de leche flavored milk fondant filling with pecan pieces.

Ingredients: Manjar/milk caramel (whole milk, sugar, agar, disodium phosphate, sodium bicarbonate), 70% dark chocolate (cacao mass, sugar, and cacao butter), and pecans.

Allergen-related information: Contains milk, nuts.

Peruvian Chocotejas often contain a thick fondant (manjar blanco) similar to dulce de leche, nuts (pecans) and/or dried fruits.

Welcome to Day #5 of Chocolate and Coconut Theme Week.

Today's Passion Fruit and Coconut Chocolate was part of an 18-piece chocolate confection box from Marana Craft Chocolate (Lima, Peru).

Aroma notes for today's traditional Peruvian-style chocolate confection (chocotejas) included: subtle chocolate (rich, dark chocolate with very faint earth and fig); bright, aromatic tropical fruit (passion fruit); and faint, authentic coconut.

This small bar sized confection was covered with a smooth, dark chocolate shell and the generous center  full of authentic coconut shreds and fruit (passion fruit caramel) offered flavor and chewy texture from start to finish.

Flavor notes were amplified versions of the aroma notes and included rich, bold 70% dark chocolate (that seemed more like 75-80% cacao); bright, tart-sweet, fresh passion fruit (infused into a light milk caramel) and authentic coconut--the subtlest of the three flavors in this chocolate.

I also "heard"* a festive Latin American street music ensemble while I was enjoying this chocolate. (A few celebratory brass instruments, a woman dancing in a bright passion fruit colored dress, percussion (dark chocolate) and a flute/wind or light stringed instrument (coconut palms perhaps)).

I loved the range of layered, authentic flavors in this chocolate.

Ingredients: Passion fruit milk caramel [milk caramel (whole milk, sugar, agar, disodium phosphate, sodium bicarbonate), passion fruit pulp (passion fruit, ascorbic acid - E300)], 70% dark chocolate (cacao mass, sugar and cocoa butter) and coconut.

*Sometimes one of our senses will activate another sense in our body. For most people this may be due to activated memories--that include a certain combination of sight, smell and/or touch. In more vivid examples a person might experience something called synesthesia.

A person with synesthesia (an estimated 1% of the population) experiences one sense with, or through, another sense. They may see certain images when they see certain sounds. They may hear music and see shapes or colors. Not surprisingly, there are artists who perceive senses together like this, and this extra ability might even be an asset. 

About 10% of small batch, single origin craft chocolates I eat are "transporting" in some way for me. They conjure up combined sense memories: the feeling of being in a specific type of forest or jungle or climate); the smell and taste of fresh cacao fruit pulp or other fruit or plant; images (the sights of trees, fruits, people, wildlife) and sounds (usually stillness and or wildlife in a forest); and rarely (like today) music and movement/dancing. Combined sensations sometimes feel implied or imagined. 

I might have a mild case of chocolate synesthesia. Or some less processed chocolates may just have magical transporting properties. Maybe after a few thousand more chocolates I'll find out.

Today's Cusco, Peru Single Origin 50% Cacao Milk Chocolate (bar) was made in Peru by Cacao Valley E.I.R.L./Marana Craft Chocolate (Lima, Peru).

This four-ingredient* bar had delicious peanut/nut butter and fruit notes, melded into rich, flavorful dark milk chocolate.

The maker's description read as follows: "Our Cusco collection is made from the finest "Chuncho" variety of cacao beans., grown in the fertile valleys of Quillabamba. With this chocolate, we offer an intense, nutty flavor that will transport you to the magical land of the Incas."

Welcome to Day #15 of Chocolate and Peru Theme Week.

Today's organic Marana Craft Chocolate San Martin Peru 70% Dark Chocolate bar was manufactured by Cacao Valley E.I.R.L.

This bar had a slightly green and fruity aroma, complex fruit flavor with a tiny hint of black pepper in one bite, a slight uptick in (balanced) fruit sour notes about 2/3 way through, followed by a smooth, fruitiness and a very slight astringent finish. Fun ride.

Welcome to Day #14 of Chocolate and Peru Theme Week.

Today's Marana Craft Chocolate San Martin Peru 80% Dark Chocolate bar was made "in country" by Cacao Valley E.I.R.L. (Lima, Peru).

San Martin, located in north central Peru is one of 10 major cacao-growing regions in the country. This chocolate was made using the "Amazonica" variety of cacao beans from Tarapoto.

The bar had a pleasant aroma with green and fruit notes. The first bite yielded a bloom of flavor with more fruit acidity—and a slightly astringent (drying, almost granular) mouthfeel. The flavor was complex, fruity with faint green, sour milk and coconut notes.

Today's organic, Marana Craft Chocolate 70% Piura Peru bar was produced by Cacao Valley E.R.L. in Lima, Peru.

The company's Piura "collection is made from the finest variety of "blanco" cacao beans, grown in the fertile valleys of Alta Piura." These beans yielded a great fruity tasting 80% Piura Peru bar yesterday, and a similar, slightly sweeter 70% Piura Peru sibling today with balanced red fruit (cherry) and citrus (tangelo-to-tangerine) notes.

Tasting notes on the package read: "This chocolate boasts a huge personality, offering an...experience dominated by fruity citrus notes."

Welcome to Day #12 of Chocolate and Peru Theme Week(s).

Today's attractively packaged, 80% Piura Peru bar from Marana Craft Chocolate was made in Peru (produced by Cacao Valley E.I.R.L.).

Bars labeled as 80% cacao or over are generally more bold and deep dark in flavor. However, today's 80% Piura Peru bar was relatively cheerful for an 80%-er. This chocolate was fruit-sweet (red fruit, cherry), with a very faint (balanced) red fruit-acetic acid (vinegar) note.

*Piura is a city, region and province in northwestern Peru, approximately 5 degrees south of the Equator. Piura is also one of of the top 10 cacao growing regions in this South American country. 

Marana Craft Chocolate offers bars made with Cusco from at least three of these ten regions: Cusco, Piura and San Martin.
