Welcome to Day #13 of Cocoa Nibs Theme Week, and Day #4 of Ghana and Ivory Coast Theme Week.
Today's Matcha 72% Cacao dark bar from Vosges IP, LLC (Chicago, IL) had a dark chocolate aroma with tea tannin (balanced bitterness) and green tea notes.
The base chocolate mouthfeel and melt was thick and creamy. Relatively finely ground crunchy dark nibs embedded in the chocolate added some crunch and textural contrast.
A dark relatively bold, slightly bitter dark flavor (think forastero variety of cacao with green elements) was deepened with the Ghana-grown cacao nibs. Woven throughout the chocolate were more subtle green (chloropyll and mint) notes as well.
This Matcha bar was flavorful, without being too sweet (thank you!).
Ingredients: Bittersweet chocolate (unsweetened chocolate*, sugar*, cocoa butter*, soy lecithin, natural vanilla flavor, cacao nibs, matcha green tea, spiralina powder. (*connotes Fair Trade certified.)
