Extreme bar - Dark Chocolate with Cacao Nibs

While waiting for friends to arrive for lunch at the Buena Vista Cafe in San Francisco, I was directed to wait in the bar. This place is famous for its Irish Coffee; however, I decided to order a small shot of 12-year old Tullamore Dew Irish Whiskey instead -- to try with today's "Extreme" dark chocolate bar with cacao nibs from NibMor Inc. (Great Neck, NY).
NibMor specializes in organic chocolate bars made with organic cane sugar, and without dairy, gluten or GMOs. Today's 80% cacao bar was indeed quite dark, and the nibs were fairly finely ground adding more taste than texture.
Initially this bar seemed to pair well with the Irish whiskey. However, four small nibbles and three tiny sips later, a few bitter notes surfaced. Whiskey often does pair well with chocolate, but a successful pairing requires the right whiskey and the right chocolate, which is why research like this is necessary.
